This is a 3-hour cooking experience at the Amal Women’s Cooperative Center, founded by the remarkable Nora Fitzgerald Belahcen. Rooted in empowerment and inclusion, the experience offers a hands-on introduction to Moroccan cuisine while celebrating the social impact of food.

You’ll begin with a short introduction to Amal’s mission—supporting women from vulnerable backgrounds by training them in the culinary arts. From there, you’ll dive into Moroccan cooking: exploring local spices, learning the stories of each dish, and preparing a traditional feast with fresh, seasonal ingredients. Some recipes are cooked over charcoal, using bellows to control the flame—an immersive detail that reflects Morocco’s culinary heritage.

You’ll taste early-harvest Extra Virgin Olive Oil (EVOO)—pressed in October from the season’s first green fruits. Reyes compares olives to people: “In October, they’re green. Now they’re golden. They change with time.” That first harvest is the most vibrant and prized.

This is a homecoming you share with Maria Reyes. Her family’s land in Linares, Jaén, has produced oil for generations. Historically, olive farming in this region was male-dominated, but today, Reyes is at the helm—bringing feminine care and precision to every harvest. “Women’s fingers don’t bruise the fruit,” she says, and it shows in the purity of her oils. The farm is certified organic and part of Olivares Vivos, a leading European project restoring biodiversity to olive groves. Reyes leads with intention—ensuring every step of the process honors sustainability and life within the ecosystem.

In juxtaposition to the prim and proper atmosphere of traditional Kyoto are the Tachinomi, casual bars invented for the Japanese blue and white-collar crowds to let their hair down. Although historically popular in working-class areas of Osaka, tachinomi have more recently appeared around Kyoto, some with a twist of the local culture ingrained in their Osaka roots.

Your experience begins with your expert guide giving you a primer on the history and evolution of tachinomi standing bars in the Kansai area, as well as some tips on how to fit in with the locals. From there, he will take you to some of his favorite tachinomi, from rooftop cocktail bars to racous hole-in-the-wall establishments, introducing you to patrons, staff, and owners alike.

Maiko train within a highly structured professional system shaped by formal rules, mentorship and etiquette. Rather than watching a performance, you’ll engage in conversation facilitated by an expert guide. The objective? To move past rituals and gain a deeper understanding of the person.

In Bordeaux, be sure to walk down rue sainte Catherine, the longest pedestrian street in Europe! There will be plenty of shopping to do, and the main square with the cathedral is also a must see. The bell tower is not attached to the church and is able to be climbed for gorgeous views.

In the mist-covered Blue Mountains of Jamaica lies the enchanting Holywell Park, a hidden gem that whispers stories of nature's wonders. Amidst the lush greenery, we embarked on a long walk with a local guide, seeking tranquility. We wandered through the verdant trails, each turn unveiling a canvas of vibrant ferns, towering trees, and melodious bird songs that filled the air.

Holywell Recreational Park, situated about 3,000 feet above sea level and roughly an hour's drive from Kingston, is a haven for nature enthusiasts. The park, part of the Blue and John Crow Mountains, is a lush sanctuary that boasts several species of ferns among other flora like wild raspberries, cheeseberries, epiphytes, nasturtiums, impatients, and notable trees including the Blue Mahoe (Jamaica’s national tree), Caribbean Pine, and Milkwood. The park also supports various species of endemic birds. It offers a range of trails with varying difficulties, from easy to moderate, and can take anywhere from 20 to 90 minutes to complete, providing an immersive nature experience amidst the cooler mountain temperatures.
