In juxtaposition to the prim and proper atmosphere of traditional Kyoto are the Tachinomi, casual bars invented for the Japanese blue and white-collar crowds to let their hair down. Although historically popular in working-class areas of Osaka, tachinomi have more recently appeared around Kyoto, some with a twist of the local culture ingrained in their Osaka roots.

Your experience begins with your expert guide giving you a primer on the history and evolution of tachinomi standing bars in the Kansai area, as well as some tips on how to fit in with the locals. From there, he will take you to some of his favorite tachinomi, from rooftop cocktail bars to racous hole-in-the-wall establishments, introducing you to patrons, staff, and owners alike.

You walk through Bordeaux’s Golden Triangle, an area known for historic restaurants, refined food shops, and a long dining tradition, including the city’s oldest restaurant. Anne, a chef with deep knowledge of food culture in Bordeaux and the South West of France, guides the experience and sets the context for each stop.

Along the way, you meet local shop owners who produce or source these ingredients and chefs who work with them daily. Anne has visited the farms behind many of these products and explains how they are produced, how their status has evolved over time, and how they are used in contemporary cooking. Tastings are woven into the walk, focusing on oysters, foie gras, caviar, and specialties unique to the South West of France — and how best to enjoy them.

A calçotada is a seasonal Catalan ritual (November–April) centered on the communal roasting and eating of calçots - sweeter, elongated onion-like shoot cultivated in trenches.  

You’ll depart Barcelona in private car, into the Catalan countryside. Your destination: a working garden where calçots (pronounced kal-sotz) are grown, harvested and prepared over open fire. 

Along the way, you’ll stop at the Royal Monastery of Santes Creus, a medieval Cistercian abbey built in 12th century, with Gothic cloisters, royal tombs and austere architectural purity.  

At the garden, you’ll meet the farming family and learn about the cultivation of calçots. Then comes the feast: calçots grilled until the outer layers blacken, wrapped in newspaper to steam and eaten by hand — peeling away charred exteriors and dipping each stalk into romesco (or a similar sauce). Expect to get your fingers messy, and partake in what is, by design, a convivial, generous meal. This is as farm-to-table fresh as it gets.

The ritual of gathering friends for a gluttonous afternoon to eat them defines Catalan winter life in rural areas. Hosted in his intimate restaurant, Chef Toshihiko Yamamoto will explain the history and importance of dashi in Japanese cooking while together, you prepare a fresh batch of dashi to use for an exquisite meal. You will shave the dried bonito into flakes and boil it with kombu kelp into a broth rich with umami flavor.

Next, Chef Yamamoto will prepare a special meal with a little help from you, creating Western-Japanese fusion dishes to show how easily dashi can be used as an ingredient to your own style of cuisine. As he prepares the meal, feel free to ask questions or take photos and video of the process. With nearly a decade's experience working for a dashi company and years as a chef specializing in Italian cuisine, Chef Yamamoto brings a new perspective to the use of Japanese dashi in cuisine from other parts of the world. Rather than focusing solely on traditional Japanese dishes, he will show you how dashi can be used to creatively season other dishes, from wagyu beef to fried cheese.

This interactive experience allows you to participate in the dashi making process while getting a close-up view of a Japanese chef preparing a special private meal in his own restaurant. Capture the essence of Essaouira on a photo walk led by Zack, a photographer who knows the city intimately. His quiet, observational approach helps you slow down, see clearly, and connect with the people and places around you. As you move through the medina’s alleys, you'll photograph daily life—craftspeople at work, shopkeepers in motion, light shifting across stone.

Essaouira is visually rich. For centuries, its economy centered on murex, a sea snail that produced a deep purple-blue dye. Today, that color still coats the boats, shutters, and doors that define the city’s palette. It's a natural setting for black and white photography—where contrast, texture, and light take the lead.

The walk includes a visit to Zack’s small, charming atelier, where his black and white prints hang beside books and journals that shaped his work. While the session focuses on black and white photography, Zack is happy to guide you if you prefer to shoot in color—using digital or film.

This experience is about learning to see differently. Zack guides you to focus on light, shape, and timing, rather than technicalities or gear. His black and white approach suits Essaouira, where the textures of stone, sea and shadow carry the story.

The route covers some of the city's most photogenic areas—archways, fishing docks, carved doors, and open courtyards. Walking with the Zu/’hoasi Bushmen of the Makgadikgadi Plains in the Central Kalahari, quintessential hunter-gatherers, I learned several things that I hope never to have to use - how to pronounce first names that are laden with clicks, collect plants for medicinal recipes, dig for scorpions, and make a fire with twigs and leaves.

Makgadikgadi means 'dry, dry', but the bush men and women know how to live in harmony with the land. Family and cultural ties are strong.

Thanks to Jack’s Camp for organizing this visit, they have longstanding connections with the local people.

Fruity, dry, red, white, sweet, sparkling — wine is delicious, and the best way to discover what this powerful potion has to offer is to take a bike tour through the vineyards (yes, on a bike). Mendoza is the best place to choose one of the hundreds of tour operators. 

Mendoza is the most popular wine-growing province in Argentina. And Bodega Tempus Alba has a perfect climate for growing high-quality grapes, and the majestic Andes Mountains provide the backdrop for some of the most beautiful pictures of vineyards to be found anywhere in the world.

Whether you're biking or not, a proper tasting tour will give you enough wine to come home tipsy. That's why I recommend eating well before your tour and taking a break when the magic of wine goes to your head.

I also spent some time hiking in the area, exploring the small villages in the area, and eating the best Argentine empanadas around. A trip for the senses, for sure.
