Chile

This six-hour asado experience in Valparaíso is the most authentic Chilean barbecue experience you'll find in the Fifth Region. Not only is your host an expert guide born and raised in the seaport, but he is also an avid grill master. The experience starts with the purchase of ingredients from Juan Víctor’s local feria (market). You’ll pick up fresh herbs and vegetables while chatting to vendors and immersing yourself in the scents, textures, and sounds of the market. As no Chilean meal is complete without wine, you will also purchase some regional Carménère and Sauvignon Cabernet.

Once at Juan Víctor’s family home, you will prepare the asado using his self-built brick parrilla. This includes chopping aji (chili) and tomatoes for pebre (Chilean salsa), tending to the charcoal, or priming marraqueta (bread rolls) for the starter of choripan (chorizo sausages). The experience is delivered at an unhurried pace with emphasis on sharing stories and truly understanding the culture of asado.

Dining in Chile goes beyond what appears on the menu. Food is a cultural exchange — anything placed on the table is for sharing, no meal is hurried, and stories are the main course. As the pinnacle of Chilean food culture, the asado chileno is rooted in the idea of convivencia (togetherness) and Juan Víctor's intimate barbecue is a rare invitation to experience this for yourself in Valparaíso. The workshop begins with a relaxing tea time, during which you'll be able to get to know your host and learn about her background in kintsugi. From there, you'll learn the history and aesthetics of kintsugi while handling finished pieces created by your host. As you admire the gold-lined cracks, Satoko will walk you through each step of the process and introduce the traditional tools and materials you’ll use — including some that you’ll prepare by hand.

Then, it’s time to practice. You’ll repair a broken ceramic piece using lacquer and real gold powder — that draws the eye to the details. Throughout the session, your hosts offer individual guidance to ensure your piece becomes a personal and beautiful expression of this philosophy.

Set in a private room in a Kyoto restaurant, this experience is completely private for you to enjoy the traditional kintsugi process. Follow Emanuele, a professional photographer, through Milan’s most iconic landmarks and learn how to capture their essence with your lens. From there, you’ll walk to the Galleria Vittorio Emanuele II, one of the world’s oldest shopping arcades. This hands-on workshop offers rare access to one of Portugal’s most endangered crafts: Bisalhães black pottery, recognized by UNESCO as Intangible Cultural Heritage. In a small mountain village north of Vila Real, just a few remaining artisans keep this tradition alive.

You’ll step into a rustic, working atelier to see how local earth, fire, and ancestral technique come together to form these matte-black pieces. After a live demonstration of traditional hand-molding, you’ll take a seat at the wheel to shape your own, guided step-by-step by the master potter.

If weather allows, you’ll also witness the outdoor firing process—where pine needles and broom branches are used to stoke the open-air kiln. This method turns raw clay into its distinct black finish, a transformation unchanged for generations. Your completed piece is then fired, carefully packaged, and shipped to your home — a tactile memory of Douro, shaped by your own hands.

In Bisalhães, black clay pottery has been shaped by hand for centuries—but today, only a few master potters still practice this endangered art. This experience offers rare, personal access to one of them, in a setting far from the commercial workshops of larger towns.

Inside the workshop, you’ll learn how the clay is prepared, shaped and dried using traditional tools—some passed down through families—and how the outdoor kilns, fueled by pine and broom, are smothered post-fire with moss, earth and sand to lock in the signature matte-black finish. Manila first arrived in Barcelona more than two decades ago, while finishing her studies in Rome. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. Meet the Lion. Landlord of the Okavango floodplains. The fearless prides of lions here are known to hunt buffaloes and elephants. They have large prides, with several young cubs. In the delta, as it is elsewhere, it’s all about power and opportunism.

The delta is clearly a fluke of nature, and the way to appreciate it best is from the air, especially in June and July when you can see the progress of the rain water flooding into the area and turning it into a lush paradise teeming with wildlife.

Lion vs. Buffalo

Athens National Garden

Each evening, we wait for sunset to happen ... in fact the whole town stops whatever they are doing and gathers near the edges of the cliffs In Oia. 

It’s a ritual that we quickly make our own. We time our dinner, walks and activities so that we can get a prime seat to watch the performance. On the odd day that we miss it ... being on the wrong side of the caldera ... we feel we’ve missed a significant event in our day.

Each evening, the sun obliges and puts in a grand performance. 

The setting sun can look rather different in a cloudless sky. Santorini rarely has a cloud. Maybe one every two days ... making the sunset even more glorious. Flaws build character.

Cloudless Sunset

The largest (not highest) waterfalls in the world are located in Puerto Iguazu, Argentina. It's a breathtaking spectacle to hear, see and feel the masses of water cascading down the landscape, and along the way, you'll see beautiful rainbows, coatis, and birds.
To get there, you'll fly to Puerto Iguazú and stay at one of the local hostels. We took this colorful train to the falls, and then you hike a bit on very accessible trails. Take your camera, because you'll want to show these views to your friends and family back home. Later in the evening you can watch the sunset and have a nice view of the three-country border – a river that separates Argentina, Paraguay and Brazil.
After visiting the Argentine side of the falls, you can take a trip to Brazil to experience the other side of the falls as well. On the Brazilian side, you can also visit a local botanical garden where you can observe mockingbirds, butterflies, monkeys, and other tropical animals.

A Gondola Ride in Venice

San Giusto Castle, a historic fortress in Trieste, stands majestically on the hill of the same name. Built on the ruins of a Venetian castle, its origins date back to the 15th century. The castle offers a vivid retelling of Trieste's history, from Roman times to the present day. Roughly 300 years older than Miramare Castle, it offers a panoramic view of the city, the Adriatic Sea, and the surrounding mountains​​. Why visit?
