The old Spanish saying “Put me in the sun and give me wine and ham!” reveals just how deeply Iberian ham is woven into the country’s diet and culture. These rich, paper-thin slices of cured pork are a tapas essential — but there’s far more to them than meets the eye.

In this experience, you’ll discover that ham carving isn’t just a technique — it’s an art form, practiced with care and reverence. At a family-run business, master carvers will demonstrate how each cut affects the flavor, texture, and aroma. As they work with precision and passion, they’ll explain the different parts of the ham and the history and tradition behind it.

Your expert host will explain why true Iberian ham can only be produced in Spain, highlight its distinctive characteristics, and explore the different quality levels, from natural grain-fed ham to the prized 100% Iberian acorn-fed ham — and why each deserves its place on the plate.

This experience takes place in a family business in Madrid’s historic Austrias neighborhood. It’s run by the third generation of the Arroyo family, whose grandfather founded the business 65 years ago. They still source their jamón ibérico from the same farms — small producers who raise black Iberian pigs on oak-covered dehesa. The slow, natural process gives the ham its marbled texture and depth of flavor. 

Iberian ham has been part of Spanish culinary tradition for over 2,000 years. In this experience, you’ll learn how the carving itself becomes a craft — it takes years to learn how to follow the grain, anticipate the cut, and honor every part of the ham.

Immerse yourself in the enchanting Carnival of Tempio Pausania, or Carrasciali Timpiesu, on Sunday, February 15. The highlight of this vibrant celebration is a grand parade featuring the whimsical, symbolic marriage of Re Giorgio (the king of Carnevale) and Mannena (a beautiful local woman). 

After meeting your local guide, Gianmario Pedroni, you’ll enjoy a typical lunch learning about the Carnival traditions, before joining the parade at 3 PM. Re Giorgio eagerly awaits Mannena, accompanied by the lively Tempio City Band and a dazzling array of allegorical floats.

Once the summer retreats of nobility and centers of religious devotion, these areas evolved into industrial powerhouses in the late 19th and early 20th centuries, welcoming factories, workers' villages, and military facilities. After decades of decline, they’ve reemerged as some of the city’s most dynamic cultural hubs. This afternoon walking tour begins in Xabregas facing the National Tile Museum and continues past hidden palaces, street art murals, and repurposed warehouses. In Beato, you’ll visit churches, creative incubators, and an entire block full of craft breweries. Then wander through Marvila’s art galleries and alternative markets, ending at the riverfront where Renzo Piano’s sleek architectural project signals a new chapter. While the group won’t enter the museum, it serves as a fitting place to begin the tour. Housed in the 16th-century Convent of Madre de Deus, the Museu Nacional do Azulejo offers a striking example of how religious architecture has been adapted into a public cultural space.

Marie Fernández is a Mexican photographer who grew up in Mexico City. From 2017 to 2019, she studied photography in Paris and graduated as a photojournalist and documentary photographer. She is currently a member of the Women Photographers History collective.

Manuel is also a Mexican photographer from the city. He has worked with international media such as The New York Times and is currently contributing to The New Yorker. In 2024, he held his first solo exhibition, hosted by the U.S. Congress at the Capitol Building and funded by Amnesty International and the Open Society Foundations.

In this experience, they combine their photography skills with their passion for welcoming people to their home city and helping visitors experience the best it has to offer. Emerging at the end of the 18th century, it was a movement that embraced not only architecture but all the arts, from poetry to song, literature and crafts. This walking tour in Barcelona’s Eixample district lets you in on the secrets of Modernisme, and the cultural renaissance that set out to make Barcelona the most ‘modern’ city in Europe. Tanzania

On a cool morning drive in Ngorongoro Crater, we meet a pride of eleven hungry lions —  lean and menacing. We stay with them for five hours through several hunting attempts .

One of the lionesses spots a herd of zebras. She masterfully rounds them up and sends them in the direction of her waiting pride. At the last minute though, the zebras, finding new energy or a brilliant leader, take a united front and flee. The zebras will live another day. 

Well, hello there! - say the lions to a group of wild buffaloes .. and quickly dissolve into the grass. The buffaloes can smell the lions. They start backing up and eventually escape. 

Next, the younger lions eye an ostrich In the distance. But it fluffs up its feathers with a disdainful air, and runs away.

Mobile food is awfully hard to get your paws on. The lions decide to lie in the grass and wait it out. Someone will come by. It’s just a matter of time.

Disko Bay is the Iceberg Factory for 10% of Greenland's icebergs. Sadly, production has increased in recent years, with Spring melts as early as April.

Nothing prepares you for the disorientation - and wonderment - of the brilliance of a midnight Sun. Especially when surrounded by massive icebergs that reflect and mirror the sky and the sea.

I don't remember seeing this yesterday, I tell the boat captain, is this a new work of art? He laughs, and tells me that everyday is  a bit different.

A visit to Fogo Island is all about the power of culture, art and community as catalysts for social and economic change. It’s a story of the indomitable spirit of people who refuse to give up their land.

First Impressions?  Minimalist winter scenery, it’s 🧊 season, one of Fogo Island’s seven  seasons. There are wooden Saltbox Houses, that must have leaped out of a child’s painting book. Reminders of fishing are everywhere. 

My favorite part of the trip is spending time with the islanders who do community orientations and cabin outings for visitors. These are people who are proud of their Irish or English heritage (seven or eight generations in Fogo Island notwithstanding) — who sing songs and tell stories of their ancestors, invite strangers into their homes to share salted cod and tea, take you on ski-doo for ice-fishing, teach you to forage for berries and show you how to preserve vegetables in mason jars to last through winter.
