What is this?

Corn has been a core element of the Mexican diet for thousands of years. Archaeologists have found maize cobs dating back to 4300 BC. Traditionally, the ingredient represented sustenance, fertility, and ancestral wisdom. In this food workshop, you'll discover why corn is a much more diverse plant than you might imagine. You will also learn, hands-on, using traditional tools and the Nixtamal process, how to transform this magical ingredient into a tortilla. After making your own quesadilla and salsa, you'll take a brief walk through the neighborhood and enjoy a couple of taquería pit stops. To conclude, you will become more closely acquainted with mezcal, a spirit made from agave (a plant the Mexica called Metl, or the tree of wonders), the other essential plant of the region. You'll be treated to an exclusive mezcal tasting session at a restaurant with an extensive selection, guided by a mezcal expert.

Alongside Ariana Ruiz, Angeles Perez helps lead Eat Mexico, an organization dedicated to promoting authentic Mexican cuisine through immersive food experiences. Before joining Eat Mexico, Angeles ran a successful gluten-free cake business, creating innovative recipes and delivering homemade desserts to families across Mexico City. Now, she manages reservations and ensures seamless experiences for guests while sharing her deep love for Mexican food. When she’s not curating culinary adventures, Angeles enjoys cooking for her son. She and her incredibly talented team are the perfect guides to lead you on a culinary exploration of Mexico City.
