This 6.5-hour, truly exclusive experience intertwines poetry, cuisine, and dialogue in a highly personalized setting in Santiago, Chile. Starting with a sensory journey through the La Vega and Mercado Central food markets, you will procure the freshest ingredients for the grand finale. But before then—a rendezvous at the former address of Chile's most famous denizen of the past. Now a museum, La Chascona was where Nobel Prize-winning poet Pablo Neruda worked magic both as a writer and gourmand.
The main course of the experience is served at the home of your host in Barrio Bellavista, where the morning's haul is transformed into Caldillo de Congrio (conger chowder), accompanied by premium Chilean wines. This aromatic fish soup was the dish Neruda prepared to welcome guests at his private residences in Santiago, Valparaíso, and Isla Negra. In fact, you'll be conjuring Caldillo de Congrio Nerudiano, true to the poet’s take on this time-honored recipe.

Much like Neruda, Julio is a gourmand who delights in feeding family and friends. His experience is curated to take you through every stage of the process—from chatting with a fishmonger who has run her stall for 50 years in Santiago’s oldest fish market to sautéing the oil and layering flavor into the chowder. During the cooking process, Julio will recite Neruda’s Ode to Conger Chowder—a lyrical poem rich in rhythm and emotion that also doubles as a step-by-step guide to preparing the poet’s signature dish.
Beyond the authenticity of speaking with longtime vendors, touring La Chascona with a Neruda expert, and preparing a meal infused with verse, this experience is marked by warmth. As Julio works his magic, you’ll hear how he first discovered a love for cooking while helping his mother in the family kitchen. While sipping coffee brewed in the moka pot he inherited from her, you’ll learn how Julio himself once crossed paths with Chile’s most prolific writer—in this very barrio.

Julio is a professional guide operating cultural tours alongside his family. For as long as he can remember, Chile has been Julio's canvas which he has painted by exploring every corner both as a traveler and as a guide. History sings in his soul, culture dances in his steps. Sharing the magic of his country through tourism and cuisine has been his passion and his purpose.
As a chef, Julio starts with what's in season before looking to his mother's recipes and plucking inspiration from poetry to create unforgettable dishes. This experience is jointly hosted with Julio's son (and business partner) Matias who will be present during the meal.
