On the first half-day, you’ll learn about the ancestral art of sourdough breadmaking, delving into the significance of wheat in ancient Greece and its connection to Demeter. You begin the day in San Miguel de Allende, traveling east into the countryside toward Atotonilco. Here, you visit Santuario de Jesús Nazareno de Atotonilco, a UNESCO World Heritage site known for 18th-century murals that cover nearly every interior surface. Cesar explains the sanctuary’s murals — cited by UNESCO as a masterpiece of Mexican Baroque — and how they were created to guide meditation and spiritual practice. Nearby, you visit a contemporary art space where modern works are presented in dialogue with Atotonilco’s religious intensity. Lunch follows in a peaceful setting.

In the afternoon, you travel to Dolores Hidalgo and visit the parish church where Miguel Hidalgo issued the Grito de Dolores on September 16, 1810 — recognized as the start of Mexico’s independence movement. When asked about his love for Lisbon, Tiago’s enthusiasm is immediate: “I love my city! I really love the historic center of Lisbon!” Though he didn’t always feel that way. Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.
As tourism evolves, Tiago points toward Lisbon’s under-known strengths. “Gastronomy, street art, tiles, contemporary architecture… there’s so much more to discover!”

This itinerary reflects what Manila calls the “true essence of Catalonia” — a place of cultural pride, natural beauty, and distinct local identity. Manila first arrived in Barcelona more than two decades ago, while finishing her studies in Rome. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

You begin in Dubrovnik, not just walking its walls but seeing it with new eyes—through a local archaeologist’s lens, then from a boat at sunset, where the city turns gold against the sea. In Split, Diocletian’s Palace is less a monument than a lived-in maze, full of locals and light. The journey pauses briefly in Trogir—an island town where everything slows naturally—and optionally detours into Istria for hill towns, truffle hunting, and wine trails.

Namibia

It’s a new day in Sossusvlei. And I am rising towards the sky, timed perfectly with the rising sun, in a wicker basket attached to a hot air balloon. It’s my first balloon ride!

The sand dunes of the Namib desert are taking their time turning orange in the glow of dawn. Our pilot tells us that in Namibia, the only time one can fly a balloon is the sunrise hour. She can’t steer the balloon but she can control the altitude, and depending on the wind channels at each altitude, choose her preferred “course”. 

It’s more peaceful than I imagined. The sound of quiet is unnerving, but no one in the gondola wants to break the peace. In fact, the only sound to be heard is the feverish clicking of cameras. I could get used to seeing the world from this perspective.

Porto is a city with a unique mystique! its old buildings, colorful houses, the particularity of its wines and the joy of its people, make it a must-see.
The most exciting thing about not planning my stay was getting lost to find myself in small places rich in gastronomy, flavors that I never experienced before, local markets with the best ambient and desserts that made every minute in this city worthwhile.

Pinacoteca di Brera is one of Milan's most prestigious art galleries, housing a significant collection of Italian and foreign art from the 13th to the 20th century. Located in the Palazzo di Brera, which dates back to the late Baroque period and was built on the remains of a 14th-century monastery, the Pinacoteca shares its space with the Academy of Fine Arts. Why is this a cool place to visit?
Historical Significance: The gallery was born out of a political action, distinct from other major Italian museums that originated from private collections of monarchs or noble families. The Brera Gallery was officially established in 1809, although its first collection existed from 1776 alongside the Accademia di Belle Arti, instituted by Maria Theresa of Austria. 

Notable Masterpieces: The Pinacoteca di Brera's collection includes several world-renowned masterpieces. Some of the top paintings housed in the gallery are "The Marriage of the Virgin" by Raphael, "The Feast in the House of Simon" by Paolo Veronese, "Supper at Emmaus" by Caravaggio, "Last Supper" by Peter Paul Rubens, and "The Kiss" by Francesco Hayez. Each of these works represents a significant period in art history and exemplifies the artistic mastery of their creators​​​​.You also have the opportunity to appreciate the meticulous restoration and preservation of artworks not presently showcased, through the glass walls of the gallery.

My sister and I flew into Las Vegas to then see the Grand Canyon. We woke early to get picked up at our hotel and the tour took us to the Hoover Dam, a stop on Route 66 (where the Cars movie took place), and finally the Grand Canyon. We did an easy hike but it took about 4 hours. We stopped multiple times for pictures. It was amazing. The pictures don’t do it justice. 

My sister and I wish we had spent more time there and maybe hiking a different trail.

Joshua Tree National Park | United States

Forty-five minutes from Palm Springs – or a slightly longer, two hours from Los Angeles - in California’s southernmost Joshua Tree National Park, I’m waiting at the Visitor Center to buy my park pass, and it’s clear that the most commonly asked question of the rangers in this Park is - “Why is it called a Joshua Tree?"

Turns out the giant, branching yucca’s shape reminded early Mormon settlers of a story in which the Prophet Joshua reaches his hands up to the sky. “A good Joshua Tree will be really thick, with arms sticking out like they’re wearing furry sleeves.” – From The Bulletin, in a 1987 article, 7 years before the trees got themselves their own National Park. 

No two Joshua Trees are alike – for that would be too boring. Instead, they defiantly withstand the desert conditions and stretch out in weird and wonderful ways.

Weird and Wonderful

A road trip through Spain is literally the best option for those looking for a local, less touristic experience. You can basically rent a car anywhere you want – we started in Barcelona, heading down the coast, and taking stops in Ebro Delta and Denia and other sleepy beach towns down the road. One of our highlights was the Spanish town of Cartagena – a historical hub with beautiful angled roads, traditional culture to explore (expect to be invited to some Cerveza by the locals), and history lessons about Phoenician traders, Roman soldiers, and Christian Reconquistas. If you have some days left, visiting Andalusia is a must. It's by far the most beautiful region in Spain and is known for its majestic horse breed, pristine beaches, hot weather, and super friendly culture. 
All in all, it took us two weeks to get down the coast – but you can make it in a week as well – though you might have less time to explore, sunbathe, and learn about the history of Spain
