This is an uncommon dawn capsule in Xochimilco — paddle-driven and nature-focused — you’re back in the city before the canals get busy. Private pickup from your accommodation in Mexico City gets you to the World Heritage wetlands in time for sunrise. 

You board a cayuco — a native, paddle-driven canoe — for a two-hour canoeing adventure through ancestral canals and the man-made farm islands known as chinampas, in use for over a thousand years. Along the way you’ll take in seasonal flora and fauna — marigolds and water lilies on the surface, wading and water birds such as herons, and native aquatic life like charal and frogs. 

As you paddle, your host — an expert in environmental sustainability and Xochimilco’s culture — sets the scene with history and biodiversity. You’ll pause in a lagoon to experience a beautiful sunrise while enjoying a tea or coffee and amaranth cookies (sesame, flaxseed, sunflower seeds), then continue the route before transferring back to the city. 

First built millennia ago, these canals open a direct window onto Mexico City’s pre-colonial landscape. Most visitors meet Xochimilco on brightly painted trajineras with loudspeakers and drinks; you travel in a low cayuco, close to the water, with birdsong instead. At dawn there are few boats, stiller water, more reflections, and a clean soundscape.

They are an interdisciplinary team driven by social impact and creating projects that help to improve the quality of life for the communities, wildlife and nature of the wetlands. Their ecotourism projects are part of their wider efforts to use community engagement to tackle environmental issues.

Chile

Co-hosted by a local couple with a combined 20 years of experience in astro-tourism, this astronomy experience takes place beneath some of the clearest night skies in the world in a boutique observatory installed at a private residence on the outskirts of San Pedro de Atacama. Comfort is of utmost priority: you will first be seated in a cozy lounge where Juan Pablo will devote 30 minutes to the fundamentals of astronomy. After warming up over hot beverages and local liqueur, you will be ushered outside to the telescope area and invited to survey the night sky for celestial objects with Valeria.

This observatory contains two state-of-the-art Dobsonian Telescopes (16' and 12'), which enable you to see planets, star clusters, nebulae, and galaxies. Valeria will demonstrate how to use the telescopes and point out a variety of celestial objects over the course of the session—note that items spotted is dependent on the conditions/season. Hammock chairs are provided for maximum comfort!

This is an intuitive and highly personalized stargazing experience hosted by a bilingual local couple. Valeria and Juan Pablo wouldn't dream of relying on a script. Besides being experts in regional astronomy and ecosystems, your hosts know to read the room; they will tune in with your level of knowledge and adapt the activity accordingly. For budding skywatchers who have never seen a telescope, this is your opportunity to pose those lingering questions you may feel shy to ask in a large, shared tour. Seasoned stargazers can improve their understanding and sharpen their technical ability in a private observatory setting.

There is no photoshoot in this experience. Rather than spending time posing for photos, Valeria and Juan Pablo dedicate the entire session to sharing knowledge, wisdom, and passion for the night sky. Their commentary leans towards modern cosmology and scientific discovery. Winter sessions include more discussion of the Andean worldview and Indigenous practices.

This experience is co-hosted by Valeria Heindl and Juan Pablo Rivas. Valeria is a passionate naturalist and conservationist who has resided in San Pedro de Atacama for over a decade. While operating her tour business, she has fostered deep roots in the community. Her expertise lies in the region's natural history, from its intricate geology and flora to wildlife (in particular, its avifauna), to its astronomy. She worked as a senior astronomy guide at the largest privately-owned observatory in San Pedro for five years before developing this astronomy venture with her husband, who has worked as an astronomy guide for over 15 years.  Juan Pablo now runs his own adventure tourism company in town.

Massimiliano is a professional photographer, artist, and tour guide. After graduating at University Paris 8 in Photography, he began working as a photojournalist and lived in Tuscany and Paris before moving to Sardinia in 2011 with Eva, and co-founding Ora Blu Lab, to offer experiences connecting people with Sardinia's beauty by blending art, nature, and authentic Sardinian life, characterized by community bonds and genuine hospitality.

This six-hour asado experience in Valparaíso is the most authentic Chilean barbecue experience you'll find in the Fifth Region. Not only is your host an expert guide born and raised in the seaport, but he is also an avid grill master. The experience starts with the purchase of ingredients from Juan Víctor’s local feria (market). You’ll pick up fresh herbs and vegetables while chatting to vendors and immersing yourself in the scents, textures, and sounds of the market. As no Chilean meal is complete without wine, you will also purchase some regional Carménère and Sauvignon Cabernet.

Once at Juan Víctor’s family home, you will prepare the asado using his self-built brick parrilla. This includes chopping aji (chili) and tomatoes for pebre (Chilean salsa), tending to the charcoal, or priming marraqueta (bread rolls) for the starter of choripan (chorizo sausages). The experience is delivered at an unhurried pace with emphasis on sharing stories and truly understanding the culture of asado.

Dining in Chile goes beyond what appears on the menu. Food is a cultural exchange — anything placed on the table is for sharing, no meal is hurried, and stories are the main course. As the pinnacle of Chilean food culture, the asado chileno is rooted in the idea of convivencia (togetherness) and Juan Víctor's intimate barbecue is a rare invitation to experience this for yourself in Valparaíso. Forget table service and being waited on — you will peruse local markets before making yourself at home in a private porteño residence, usually in the company of Juan Víctor's family and friends.

As the asador (grill master), Juan Víctor oversees the running of things and sees that every item is cooked to perfection. While fire, meat, and wine are the foundations of the experience, it's the friendships that will leave a lasting impression. Only by tending to the parilla (grill) yourself, and helping to keep everyone’s glass of wine topped up can you truly appreciate the joy of the asado.

We will begin the culinary adventure at a local café, and then explore the local market rich in history and authenticity and known for its over 200 stalls of local produce and delicacies; it’s a chance to engage with local vendors and artisans. Balat and Fener, two charming neighborhoods on the Golden Horn in Istanbul, offer a captivating blend of vibrant history, colorful streets, and multicultural heritage. These areas, once home to thriving Jewish and Greek communities, now invite visitors to wander their labyrinthine streets, where every corner tells a story of the city’s layered past. The juxtaposition of historic wooden houses with contemporary art galleries and cozy cafes creates a unique atmosphere that combines nostalgia with modern vibrancy.

1. Colorful Wooden Houses: Stroll down Kiremit Street to admire rows of brightly painted, Ottoman-era wooden houses. Their whimsical colors and intricate details make them a photographer’s dream.
2. Ahrida Synagogue: One of the oldest synagogues in Istanbul, this historic site dates back to the 15th century. It reflects Balat’s rich Jewish heritage and features a boat-shaped bema symbolizing Noah’s Ark.
3. Phanar Greek Orthodox College: Known locally as the “Red School” for its striking brick façade, this imposing structure stands as a testament to Fener’s Greek Orthodox history.

Balat and Fener

Pyrgos is a trendy hilltop medieval village. It’s full of little winding, narrow streets constructed haphazardly on the hills alongside multi-colored houses and doors. We lose our way several times and keep looping back to the same point .. using that as an excuse to check out yet another local art gallery constructed unobtrusively into the hillside. 

During the 15th and 16th century, the locals defended themselves from pirates by erecting kastelias .. fortified buildings. Pyrgos has the best example of these medieval buildings on the island. It also has the oldest churches.

We stop at a home with a large blue door .. and the views are stunning but give an impression that Santorini is flat and covered by vineyards instead of being a caldera. 

The one fascinating feature of homes here is a long, deep chimney for ventilation. And the strong winds make howling noises through the chimneys.

In Pyrgos, we visited vineyards ... but that’s a different story.

2. Its ceramics collection is one of the most comprehensive in Europe, showcasing the evolution of Andalusian ceramic art—from traditional techniques to the cultural influences that shaped the craft. 
3. Exhibits explore intangible heritage, including traditional costumes, musical instruments, and agricultural practices, offering a vivid picture of Andalusian life and its deep connection to the land. 
4. The museum itself is an architectural masterpiece, with the Mudejar Pavilion’s intricate design, exposed brickwork, and decorative ceramics embodying the essence of the Neo-Mudejar style.

On a snowy winter evening, we stand on a ridge and see the brightly-lit church through the mist ... an evocative but calming place. 

Very different from 1000 years ago as Vikings stood here and declared the laws of the land ... the oldest continuous two weeks in the summer parliament. People heard from their leaders, settled disputes and traded.
