Morocco

This is a 3-hour cooking experience at the Amal Women’s Cooperative Center, founded by the remarkable Nora Fitzgerald Belahcen. Rooted in empowerment and inclusion, the experience offers a hands-on introduction to Moroccan cuisine while celebrating the social impact of food.

You’ll begin with a short introduction to Amal’s mission—supporting women from vulnerable backgrounds by training them in the culinary arts. From there, you’ll dive into Moroccan cooking: exploring local spices, learning the stories of each dish, and preparing a traditional feast with fresh, seasonal ingredients. Some recipes are cooked over charcoal, using bellows to control the flame—an immersive detail that reflects Morocco’s culinary heritage.

As your dishes simmer, you'll enjoy a traditional tea paired with homemade cookies. The experience ends with a shared meal; you’ll gather to taste what you've created and connect with members of the Amal team, learning more about their lives, resilience and work.

Unlike many cooking classes in Marrakesh, this experience is private, intimate and timed for an early dinner, featuring a selection of thoughtfully curated dishes to prepare and enjoy. It’s also intentionally designed to support a social mission: a portion of your fee goes directly to Amal Center, a nonprofit that provides training and job opportunities for women from vulnerable backgrounds.

Amal is more than a cooking school—it’s a space of transformation, offering hope and vocational skills to women rebuilding their lives. Under the guidance of the team Nora has created and trained, you’ll learn to make Moroccan classics like tajine, couscous or pastilla—while gaining insight into the flavors, techniques, and cultural meaning behind each dish. The cooking class is held at Amal Cooking Classes and Catering, Targa. Take a taxi to "Association Amal" in Targa. The space is located behind "COS O.N.E."

This experience was created by Nora Fitzgerald Belahcen, founder of the Amal Center—a nonprofit dedicated to empowering women through culinary training and job placement. The session is led by the on-site manager and supported by members of Amal’s original team of chefs—women who helped shape the center and now lead with warmth, confidence, and skill.

You’ll be guided by a small, welcoming team trained in the spirit of Amal’s mission: to use food not only as craft and culture, but as a path to opportunity and connection. Their deep knowledge of Moroccan cuisine and generous hospitality ensure an experience that’s as meaningful as it is memorable.

Chile

This full-day photography excursion takes you to two contrasting natural wonders in the Atacama Desert of Chile: the Valley of the Moon (Valle de la Luna) and Rainbow Valley (Valle del Arcoiris). It is hosted by Mirko, a professional photographer specializing in landscapes and wildlife and a licensed guide. Upon leaving San Pedro de Atacama, Mirko will pull over at one of his favorite viewpoints to appreciate the sunrise over the Andes mountain range. While sipping coffee and sharing a breakfast of marraqueta bread rolls, you'll warm up your photography skills for the day by shooting the soft morning light. 

You will then explore the ravines and dunes of Moon Valley, coming to understand how it earned its name. After lunch at a local restaurant in San Pedro de Atacama, you'll head to the Cordillera Domeyko to study the 3,000-year-old petroglyphs of Yerba Buenas before ending the day in the multi-colored Rainbow Valley.

Mirko has selected these two locations for their contrasts. The morning is spent exploring the salt mines, rugged amphitheaters, and sweeping dunes of Moon Valley where Mirko will explain the geological anomalies. By visiting early in the day, you're spared the inevitable afternoon crowds and have a more relaxed photographic experience. 

The afternoon takes place at two of the Atacama Desert's hidden treasures: Yerbas Buenas and Rainbow Valley. Yerbas Buenas (Hierbas Buenas) is an open-air exhibit of pre-Columbian rock carvings which provide insight into ancient Indigenous cultures. Mirko will explain the symbolism behind the petroglyphs and how these served as more than pretty pictures! In Rainbow Valley, the mountains are painted hues of red, green, white, yellow, and blue as a result of the oxidation of different mineral deposits over millions of years. You will arrive in time to catch the soft light of the waning sun. Lunch in town serves as a way to chat informally with Mirko.

A one-hour portrait and lifestyle photoshoot in Jalatlaco, a neighborhood known for its pastel façades, wrought-iron balconies, and walls shaped by decades of reinvention. You begin just after dawn, when the cobbled streets are quiet and shopkeepers are opening their doors. The early light is soft and directional — ideal for portraits that feel natural yet cinematic.

Paco leads you to the best locations within side streets and mural-lined corners, where color, texture, and shadow create depth: sun-faded walls, ironwork catching the light, bougainvillea spilling over stone. The route continues toward Jalatlaco’s mural lane, where street art, cracked stone, and layered surfaces frame images that are composed but allow for creativity and engagement.

The session closes at a rooftop or quiet viewpoint, where full morning light washes across the pastel skyline and your portraits hold both atmosphere and presence.

This photoshoot is shaped first by light, atmosphere, and place. Oaxaca’s luminosity is prized by photographers because its bright, directional quality reveals texture and color without harsh contrast, allowing low-ISO capture and subtle gradations that flatter both subject and setting.

Argentina

Saddle up for a 1.5-hour horseback trek in the Andes Mountains, carefully timed to coincide with sunset. As the last of the light fades, you will return to the gaucho estate to continue the evening, socializing with the family over a traditional Argentine asado (barbecue) featuring roasted vegetables, salads, fresh bread, and local Mendocinian wine. After dinner, gather around the bonfire with a glass of wine and enjoy a brief folk guitar session—a traditional gaucho touch that brings the night to life under a sky heavy with stars.

This experience includes pickup and return to your hotel in the city of Mendoza. Upon arrival at the mountain ranch, you’ll get acquainted with your horse and receive a brief safety lesson—novices through to experienced riders are accommodated. Your bilingual gaucho guide will lead the way into the mountains at a leisurely pace, stopping to savor the wild landscapes and capture photos along the way.

Not only does this experience provide the thrill of riding a horse through the world's longest mountain range, but it also immerses you in gaucho culture from start to finish. This evening experience explores Sintra as daylight fades, moving between two palaces that reflect distinct chapters of the town’s royal and Romantic history — including one opened exclusively for you after public hours.

You meet in the historic center in front of the Palácio Nacional de Sintra, one of Portugal’s oldest royal residences, identified by its twin conical chimneys. Visiting in the late afternoon, you move through rooms shaped by successive dynasties, tracing how the palace evolved from medieval court to Renaissance residence.

Afterward, you walk through Sintra’s cobbled streets to dinner at a traditional local restaurant. As night approaches, the experience culminates with after-hours access to Palácio Biester, a late-19th-century Romantic residence reopened as a palace museum in the 21st century. In its painted interiors and curated gardens, you encounter a more private and theatrical vision of Sintra.

We arrive by RIB boat from Longyearbyen, dressed in survival suits, across a choppy Arctic Sea, with puffins and seals for company.

Isfjord Radio on Cape Linné, is an abandoned strategic communications station, with a decidedly interesting past, now converted into a stylish expedition lodge. 

Nothing could have prepared me for the extreme sense of isolation and wilderness. 

Imagine sitting all alone at latitude 79 degrees north and watching polar bears prowling outside the kitchen window. Two days ago, that is exactly what the staff at Isfjord Radio did.  After all, Svalbard’s travel slogan reads: “3000 polar bears, 2500 humans”. 

Hiking into the middle of nowhere, or along the coast looking for 1500-kilo walruses, is done with licensed guides, a couple of mandatory rifles for protection and huskies for company. It is a beautiful, stark landscape, filled with mystery and a sense of the unknown.

Chapultepec Castle

Granada's Jewish and Gypsy neighborhoods, the Realejo and Sacromonte districts, are two of the most culturally significant and historically rich areas of the city. Both neighborhoods offer a unique look into the diverse heritage that shaped Granada, with the Realejo reflecting the city’s Sephardic Jewish history, and Sacromonte being the heart of Granada’s Gypsy (Roma) culture and the birthplace of the passionate Zambra flamenco style.

Highlights of Realejo (Jewish Quarter):

1. Historical Streets: The Realejo neighborhood, once known as Garnata al-Yahud, was the vibrant Jewish quarter of Granada before the 1492 expulsion of Jews from Spain. Its narrow, winding streets and whitewashed houses retain much of their medieval charm, making it a fascinating area to explore.

1. Cuevas (Caves) of Sacromonte: The cave houses of Sacromonte, dug into the hillside, are the hallmark of this Gypsy neighborhood. Many of these caves are still inhabited and have been converted into flamenco tablaos, where visitors can experience the raw passion of Zambra.

2. Sacromonte Abbey: Perched on the hillside, this abbey offers a glimpse into both religious and cultural history. The abbey complex includes underground caves where early Christians were said to have worshipped, as well as breathtaking views over Granada and the Alhambra.

3. Flamenco Shows: Sacromonte is famous for its live flamenco performances. Visit one of the traditional tablaos, such as Cueva de la Rocío or Zambra María la Canastera, to experience this deeply emotional art form in its most authentic setting.

Jewish & Gypsy neighborhoods

Winding through the High Atlas Mountains, Tizi n’Tichka Pass is one of Morocco’s most spectacular mountain roads, reaching an altitude of 2,260 meters (7,415 feet). Connecting Marrakech to Ouarzazate, this legendary route offers breathtaking panoramic views, dramatic switchbacks, and ever-changing landscapes, from lush valleys to rugged peaks. Whether you’re driving yourself or on a guided tour, the pass is an unforgettable part of any journey through southern Morocco.

1. A series of dramatic hairpin bends winds through the mountains, creating an exciting drive with stunning views of deep valleys, terraced farms, and scattered Berber villages.

2. A high-altitude viewpoint at the summit provides a breathtaking panorama of the surrounding peaks, making it an ideal stop for photos and a chance to enjoy the crisp mountain air.

The best time to visit is spring (March–May) or autumn (September–November) for clear skies and mild temperatures. Driving conditions can be challenging, so hiring a 4x4 or an experienced driver is recommended. Bringing motion sickness tablets can help if you’re sensitive to winding roads. Stopping at viewpoints and small villages along the way makes for a more enjoyable and scenic trip.

Tizi n’Tichka Pass

Buenos Aires is one of the southernmost capitals in the world and also an exciting city. Although there are many ways to explore Argentine city life, biking is the most fun.

Biking is free in Buenos Aires, at least for a few hours. Using an app I downloaded to my phone, I spent the next few days biking around the Botanical Gardens, the best museums, art galleries, El Caminito, the riverfront, and the city's largest flea market (on weekends only!). While you’re at it, you can also visit one of the most beautiful cemeteries in the world in Recoleta.

The bike paths are well developed, and if you follow the signs, you'll find the main points quickly. Be careful, helmets are not available. If you want to be on the safe side, rent one in one of the bike rentals.

4. The barrel-vaulted ceiling and stunning dome in the church create a breathtaking visual effect, particularly when sunlight filters through the windows.

5. The historical tomb of El Gran Capitán, marked by an elaborate sculpture, highlights the monastery’s importance as a place of tribute to Spain’s military history.

Visitor Tip: Visit in the morning when the soft natural light enhances the beauty of the cloisters and the intricate details of the altarpiece.
