This workshop offers a first-hand experience of all the steps involved in the creation of the emblematic tapas of Spain. You’ll see the journey of creating a selection of tapas from market to the table. You will prepare the tapas under the guidance of the chef, who will explain the geographical origin of each dish, and share interesting facts and creative possibilities for their preparation. The hands-on experience is a crucial element. Following the preparation, there's the joy of tasting the creations, paired with traditional Spanish wines. The workshop consists of the following traditional dishes: Bread with tomatoes, Gazpacho (tomatoes cold soup) – Seasonal, Escalivada (Flame-grilles vegetables), Potatoes Spanish omelette, Piquillo peppers stuffed with tuna mousse, Montadito of chistorra and quail egg, Montadito of sausage with allioli and pear, Squid with onions, Dessert: Catalan cream. Reflecting on her childhood, she recalls the close-knit neighborhood where people relied on one another. Carnival—an annual February tradition—was central. Lucía remembers it too; her grandmother was a seamstress who hand-stitched elaborate costumes each year. 

The essence of Andalusia, María José says, is best experienced not through spectacles, but through shared moments. Conversations in taverns. Crafts passed down through generations. When asked about his love for Lisbon, Tiago’s enthusiasm is immediate: “I love my city! I really love the historic center of Lisbon!” Though he didn’t always feel that way. Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.
As tourism evolves, Tiago points toward Lisbon’s under-known strengths. “Gastronomy, street art, tiles, contemporary architecture… there’s so much more to discover!”

This itinerary reflects what Manila calls the “true essence of Catalonia” — a place of cultural pride, natural beauty, and distinct local identity. Manila first arrived in Barcelona more than two decades ago, while finishing her studies in Rome. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

Argentina

The largest (not highest) waterfalls in the world are located in Puerto Iguazu, Argentina. It's a breathtaking spectacle to hear, see and feel the masses of water cascading down the landscape, and along the way, you'll see beautiful rainbows, coatis, and birds.
To get there, you'll fly to Puerto Iguazú and stay at one of the local hostels. We took this colorful train to the falls, and then you hike a bit on very accessible trails. Take your camera, because you'll want to show these views to your friends and family back home. Later in the evening you can watch the sunset and have a nice view of the three-country border – a river that separates Argentina, Paraguay and Brazil.
After visiting the Argentine side of the falls, you can take a trip to Brazil to experience the other side of the falls as well. On the Brazilian side, you can also visit a local botanical garden where you can observe mockingbirds, butterflies, monkeys, and other tropical animals.

Valencia, Spain, is home to the City of Arts and Sciences (Ciudad de las Artes y las Ciencias), an architectural and cultural masterpiece designed by Santiago Calatrava and Félix Candela. In Santorini, we discover and fall in love with Vinsanto, the local dessert wine. So we drive up to Hatzidakis - a charming and intimate local winery - to check out the local grapes. The vines grow low to the ground and close to the road and we almost drive into them while looking for parking. 

The grapes are grown in an unusual way, not in arbors but low to the ground, in baskets made of vine stalks themselves. They are organic and are watered mostly by dew as the island has low water supply.

The tasting room is cave-like and we take home several bottkes of the small batch Vinsanto they produce.

Buenos Aires, Argentina, is home to Teatro Colón, one of the most prestigious opera houses in the world and an architectural masterpiece.
