In this food workshop, you'll discover why corn is a much more diverse plant than you might imagine. You will also learn, hands-on, using traditional tools and the Nixtamal process, how to transform this magical ingredient into a tortilla.

After making your own quesadilla and salsa, you'll take a brief walk through the neighborhood and enjoy a couple of taquería pit stops. The host, Şeyma Çınar, is a master artist specializing in miniature art, Tezhip (Islamic illumination), and floral designs since 1998. With formal certification from Turkey’s Ministry of Culture and Tourism, she has dedicated over 25 years to studying and teaching the intricate techniques of Ottoman miniature painting. Having participated in multiple exhibitions and published work on Islamic art, she brings both technical expertise and cultural depth to the workshop, ensuring participants leave with a rich understanding of this ancient craft. She will be accompanied by a translator, allowing everyone to fully engage with her insights and expertise.

Greece

This walk traces lesser-known paths along the caldera, beyond the main trail most visitors follow. It begins above Oia, where the island opens up to expansive views, then branches off into routes that wind past deserted caves, lava-shaped spires, and small chapels carved into the cliffside. It’s for those who want to see what the typical postcards leave out.

From the ridges of Imerovigli and Firostefani to a secluded stretch near Megalochori, the route connects volcanic outcrops, historic windmills, and viewpoints where the caldera seems to fold into the sky. Each pause brings something different: a lookout known only to locals, a windmill bathing in sunlight, a chapel whose bell waits for no one.

Midway, you’ll stop at a family-run Faros Market to meet its owner — another Maria and her loved ones — known for their warm welcome and home-cooked treats. The walk ends near Akrotiri Lighthouse, where the island seems to exhale into the sea, sharing a picnic at sunset.

This photography experience takes place in the small coastal city of Concón, cocooned in the cliffs north of Valparaíso. You will explore three fragile ecosystems: the Concón Wetlands (Humedales de Concón), La Roca Oceánica (Ocean Rock), and the Dunes of Concón (Dunas de Concón). At each, you'll photograph flora and fauna under the mentorship of David, a local creative who grew up amid this windswept beauty spot. 

The experience takes place in the late afternoon and concludes with golden hour and sunset at the Dunes of Concón. Starting at the reed-lined wetlands, you'll encounter such birdlife as pelicans and perritos (white-backed stilts). Afterwards, you'll pause for coffee and empanada at Surf Beach (Playa La Boca). Frequented by local surfers—David included—this is an opportunity to flex your "moving target" skills! A small hike through the surreal dune system brings you to a vantage point from which you can take in panoramic views of the Pacific Ocean and Viña del Mar.

Concón is a hidden gem in Chile's Valparaíso Region. Inhabited by artists, families, young professionals, surfers, and gourmands, the city has a bohemian ambiance minus the bustle of its mother city. In a dawn wildlife excursion, you'll canoe the magical canals in Xochimilco with a biodiversity expert. You set out before sunrise with private transport from your hotel. At the launch, board a low canoe and slip into the canals. Your wildlife guide outfits you with binoculars and field ID sheets. Dawn lifts over chinampas — man-made farming islands — while you listen and watch: Great Egret stalking in shallows, American Coot cutting V-shapes, an Osprey circling, the flash of a Blue Mockingbird in willow shade.

This experience begins in Sacromonte, the hillside district where the cave-dwellings of Granada’s Roma community shaped a culture found nowhere else in Spain. With Gabriela, you walk through this historic neighborhood and visit the Cave Museum, stepping inside reconstructed cave-homes that show how people lived, cooked, forged iron, wove baskets.

From the terraces, you see an iconic golden view of the Alhambra. Gabriela shares stories about the origins of the Roma community here, their role in Granada’s culture, and how Sacromonte became the cradle of the zambra, a flamenco style born in these caves.

The evening continues in the city center with an intimate flamenco show performed in a small tablao, where the focus is on artistry. Sacromonte was the birthplace of the zambra — flamenco was shaped inside the caves you’ll walk through. Few visitors understand the neighborhood’s cultural weight: how Roma families kept traditions, how weddings gave rise to the barefoot dance of the zambra, or how the cave acoustics influenced the music.

In the Museum, you see spaces that recreate daily life: loom rooms, forges, kitchens, animal shelters. This gives you context most flamenco tours never include. From the hill’s terraces, you see the Alhambra from a beloved viewpoint.

The flamenco show is chosen carefully by Gabriela: intimate (no more than 20 people), authentic, performed by professional artists who treat each night as a personal expression, not a zambra cave show popularized by tourism. When possible, you may meet performers after the show — a chance to ask questions, feel the compás, or understand how music is passed down from generation to generation. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Visiting the salt pans in Olhão during summer offers a unique and scenic experience, revealing a centuries-old tradition that continues to shape the Algarve’s landscape and economy. Located within the Ria Formosa Natural Park, these shimmering salt flats provide a fascinating look into the artisanal process of salt production and offer an ideal setting for observing wildlife. 

1. The salt pans are particularly striking in summer when the intense sun aids the natural evaporation process, leaving behind gleaming white salt crystals. Summer Visit: Olhão Salt Pans

On a cool morning drive in Ngorongoro Crater, we meet a pride of eleven hungry lions —  lean and menacing. We stay with them for five hours through several hunting attempts .

One of the lionesses spots a herd of zebras. She masterfully rounds them up and sends them in the direction of her waiting pride. At the last minute though, the zebras, finding new energy or a brilliant leader, take a united front and flee. The zebras will live another day. 

Well, hello there! - say the lions to a group of wild buffaloes .. and quickly dissolve into the grass. The buffaloes can smell the lions. They start backing up and eventually escape. 

Next, the younger lions eye an ostrich In the distance. But it fluffs up its feathers with a disdainful air, and runs away.

Mobile food is awfully hard to get your paws on. The lions decide to lie in the grass and wait it out. Someone will come by. It’s just a matter of time.
