This is a 3-hour cooking experience at the Amal Women’s Cooperative Center, founded by the remarkable Nora Fitzgerald Belahcen. Rooted in empowerment and inclusion, the experience offers a hands-on introduction to Moroccan cuisine while celebrating the social impact of food.

You’ll begin with a short introduction to Amal’s mission—supporting women from vulnerable backgrounds by training them in the culinary arts. From there, you’ll dive into Moroccan cooking: exploring local spices, learning the stories of each dish, and preparing a traditional feast with fresh, seasonal ingredients. Some recipes are cooked over charcoal, using bellows to control the flame—an immersive detail that reflects Morocco’s culinary heritage.

As your dishes simmer, you'll enjoy a traditional tea paired with homemade cookies. The experience ends with a shared meal; you’ll gather to taste what you've created and connect with members of the Amal team, learning more about their lives, resilience and work.

Unlike many cooking classes in Marrakesh, this experience is private, intimate and timed for an early dinner, featuring a selection of thoughtfully curated dishes to prepare and enjoy. It’s also intentionally designed to support a social mission: a portion of your fee goes directly to Amal Center, a nonprofit that provides training and job opportunities for women from vulnerable backgrounds.

Amal is more than a cooking school—it’s a space of transformation, offering hope and vocational skills to women rebuilding their lives. Under the guidance of the team Nora has created and trained, you’ll learn to make Moroccan classics like tajine, couscous or pastilla—while gaining insight into the flavors, techniques, and cultural meaning behind each dish. We start by learning the different spices that go into Moroccan cuisine.
Then we get to work! After we do the basic prep of our dishes, we put them on charcoal to cook and use the bellows to make sure the fire is hot.
Once our fires are going nicely, we sit and enjoy a tea ceremony, where the hosts will talk about Amal Center, it's special mission to empower women, as well as any and all questions guests may have about Morocco in general.

Set off on a captivating four-hour journey through Istanbul’s historic heart in the Sultanahmet district, uncovering the city’s Byzantine roots. 

The experience begins at the majestic Hagia Sophia, a structure with over 1,000 years of history, transitioning from a cathedral to a mosque and, more recently, a museum. 

Just steps away descend into the atmospheric Basilica Cistern, an underground marvel that once provided water to the Byzantine Empire.

You’ll start from the Poldi Pezzoli Museum's Gold Room, which houses over two hundred precious jewels in four sections: ancient enamels, sacred jewelry, collectors' items, and personal ornaments, with a notable collection of Etruscan pieces from funerary legacies. Then you’ll walk to a revered jewelry shop, known for captivating four generations with its precious creations. Likely meaning “place of coyotes,” Coyoacán was originally a village founded by the Tepanec people in pre-Columbian times. In 1521, it became the first capital of ‘New Spain’ and remained a settlement distinct from Mexico City until the 1850s. Now located in the south of Mexico City (CDMX), Coyoacán is perhaps best known today for being the home of the Frida Kahlo Museum and the impressive colonial-era architecture. 

Bruno, your guide for this tour, is an artist who grew up in Coyoacán. Through his unique perspective, you’ll gain historical, personal, and artistic context for this beautiful neighborhood. You’ll see some of the area’s most prominent sites, get to know its complex history, and visit a workshop showroom of one of its most exciting local artisans/artists. Essaouira is a city of contrasts, where Moroccan and Berber cultures intertwine, and life unfolds in vibrant streets, bustling markets, and along the ocean’s edge. This photographic experience, led by the photographer Francesco Verolino, takes you beyond the usual sights into the daily rhythm of the city.

With your camera in hand, you’ll explore hidden corners and authentic scenes—fishermen at work, children playing in the suburbs, and the energy of a market that feels like stepping back in time. Francesco will guide you in capturing the essence of the people and places, sharing his approach to life photography and helping you refine your technique.

Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.
As tourism evolves, Tiago points toward Lisbon’s under-known strengths. “Gastronomy, street art, tiles, contemporary architecture… there’s so much more to discover!”

Mycenae Archaeological Site

Faroe Islands

I’m seduced by the untouched beauty and drama of the Faroe Islands. Driving into Tórshavn, I witness a rare Faroese sight.

The ocean is bright red. The beach is packed with onlookers. It’s a grindadráp, a pilot whale hunt. Heavily regulated, it’s being carried out with process perfected over millennia. A local couple points out their son to me, he is on one of the boats — “unless we send a boat, we won’t get our share of the whale meat.”

When a school of pilot whales is sighted, boats gather around and slowly drive them towards the chosen bay or beach, for it’s illegal to kill the whales in the open sea. This time, there are about two hundred of them. Every bit of them will be consumed or used — and none can be sold.

I’m shocked, outraged, fascinated, caught up in the excitement and terribly conflicted. As a traveler, I respect — and seek to understand — culture and tradition. And the Faroese are holding on to this one — as it symbolizes for them their relationship with the sea.

Karathona Beach

The Mayan culture is one of the most important indigenous cultures in Southern Mexico. Artifacts from bygone times stretch far across the jungles of Quintana Roos and Chiapas. 

If you want to learn more about how indigenous peoples lived before colonization, don't miss the ruins of Palenque. Arguably the largest Mayan ruins on the continent, they're tucked away, deeply hidden in the Mexican jungle. The highlights of the actual ruins are the numerous temples, a palace and aqueducts, and of course, a guided tour where you can learn all about Mexico's history. If you venture out into the jungle, you'll encounter rare wildlife like monkeys, colorful birds, and giant snakes.

Take sunscreen, plenty of water, and some snacks, as the tour takes at least half a day.
