Driven by a deep curiosity for self-sufficiency, Clara studies the origins of materials and the processes of cultivating and transforming fibers and dyes. She is fascinated by their social, economic, and environmental impact, believing that understanding them leads to more intentional, responsible creativity.

Clara shares hosting duties with her right-hand, Mariana, whose natural curiosity drives her exploration of material-focused creative practices. Together, they turn every workshop into an open space for experimentation, discovery, and rethinking how we create, and have collective knowledge about the city's related upcycling and craft scene which will no doubt inspire you to explore further.

This experience takes place on Shrove Thursday each February (4 Feb 2027), in Bazas in the Gironde countryside, during the Fête des Bœufs Gras. Held since the 13th century, the festival marks the moment when local Bazadaise cattle, a breed prized for its rich, marbled beef, are brought into the historic center to be celebrated. The oxen adorned with ribbons and flower crowns reach the cathedral square, while music and dancing spread across the town.

With Anne, who lives in Bazas, you move through the town as the day unfolds. You observe the cattle, listen to live music played throughout the streets, and take time to talk with the people who raise and work with this breed. The pace is informal and shared, reflecting a local day where people meet, eat, talk, and stay together.

As a chef, Anne explains why Bazadaise beef is prized for its marbling and rarity — often compared locally to Wagyu — and how it continues to shape cooking, identity, and everyday life in Bazas.

This day trip offers access to a living community tradition that has been repeated for centuries. The Fête des Bœufs Gras is a day when an entire village comes together to honor the Bazadaise cattle and reaffirm ties between people, land, food — a relationship rooted in continuity and shared responsibility.

Francesco Verolino is a street photographer based in Naples and Essaouira who has turned his passion into a career focused on street and social documentary photography. Originally trained in economics and working as a business consultant, he was influenced by his grandfather, a painter, to develop a deep sensitivity to light and composition. Francesco’s work explores the relationship between individuals and urban spaces to convey the raw essence of his subjects. His "Slow Photography" philosophy emphasizes patience, immersion, and understanding places before capturing them.

In some cases the experience may be led by Francesco’s colleague, Zakaria Mtilk, known as Zack, a photographer born and raised in Essaouira. Zack sees his work as a form of storytelling and meditation. Far from exoticism, his images document real life in Essaouira: its rhythms, its secrets, and its soul.  He captures the disappearing details of the city, preserving them in frames.

This itinerary reflects what Manila calls the “true essence of Catalonia” — a place of cultural pride, natural beauty, and distinct local identity. Manila first arrived in Barcelona more than two decades ago, while finishing her studies in Rome. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

Cádiz as a place of convergence: María José was born and raised in Cádiz, and her eyes sparkle with pride and nostalgia as she describes this ancient city where history, culture, and the sea converge. It’s a place where stories of Phoenician sailors, Roman conquerors, and Moorish poets are continually retold. Reflecting on her childhood, she recalls the close-knit neighborhood where people relied on one another. Carnival—an annual February tradition—was central. Lucía remembers it too; her grandmother was a seamstress who hand-stitched elaborate costumes each year. 

The essence of Andalusia, María José says, is best experienced not through spectacles, but through shared moments. Conversations in taverns. Crafts passed down through generations. Hospitality that’s unforced and real. Strangers are often welcomed like friends—invited into homes, kitchens, or village fiestas. Here, you’re never just an observer.

DAY 1 – PALERMO AND MONREALE | The journey begins above Palermo with a visit to Monreale Cathedral, where gold mosaics and Norman arches reflect centuries of cultural exchange. Time is spent moving through the cathedral and its surroundings at an unhurried pace, taking in the scale, light, and quiet of the space. You return to Palermo for the evening, settling in for your first night on the island.
DAY 2 – ERICE AND THE WESTERN COAST | A guided morning leads into Erice, a medieval town perched high above the sea. Walking its stone streets with a local guide reveals panoramic viewpoints, craft traditions, and daily life shaped by wind and isolation. After lunch near the coast, the afternoon opens into the Zingaro Nature Reserve, where cliffs and coves invite a slower immersion in Sicily’s raw western landscape. The night is spent along the western coast.
DAY 3 – MARSALA AND THE SALT FLATS | This day is anchored by a guided experience exploring Marsala’s winemaking heritage and the surrounding salt pans. Marsala and Agrigento suit travelers who prefer to stay close to cultural sites. Ragusa Ibla is ideal for baroque architecture and quiet evenings. For most visitors, the Algarve conjures images of beaches and seafood. But João’s Algarve is more textured—what he calls the “poetic Algarve.” He cites writers like Sofia de Melo Breyner Andresen and José Saramago, who captured the soul of the region in images of sunsets, fruit, wind, and silence. For João, the true essence of the Algarve lies in its sensory landscape and the stories attached to it.
“In my youth,” he recalls, “many people came here, to the Algarve, and my family—like many others—had small farms. I spent a lot of time working on these farms growing carob, figs, almonds, and olives.” These daily rituals shaped his relationship to the land. “Everybody knows the Algarve for its oranges,” he adds, 
remembering his family’s orchard. “I have good memories of my mother and my sister making lots of cakes—almond cakes, and sometimes orange cakes too.”
What João wants travelers to experience is that same connection: the gestures and flavors that tie people to place. “We still recognize these things—the tradition of fishing, the dry fruits, the rituals of picking and preparing. This is what I want travelers to connect with.”
Still, he knows it's not always simple. “The Algarve is quite diverse. It’s not just one story. A good connection to the people here is important. Travelers are interested in how we live, how we spend the day, what we do.” This itinerary is João’s answer to that challenge: an immersive route where nature, food, craft, and memory guide the pace.
