Bertie, an English Sommelier, and Aby, an Argentine chef, are a Buenos Aires-based couple dedicated to sharing food, wine, and excellent company. Aby has been cooking traditional Argentine food since she was a child — helping at family gatherings — and Bertie has worked as a professional sommelier since 2008. 

The couple met by chance in Rio de Janeiro in 2014. What began as conversations about flavors and cultures soon grew into a partnership rooted in curiosity and hospitality. Since 2016, they’ve been running wine discovery and cooking classes together, creating meaningful experiences that celebrate regional traditions, local producers, and the joy of exploring Argentina one glass at a time. A full-day passage from blue-agave rows to the tasting table in the Tequila Denomination of Origin. You depart Guadalajara by luxury SUV in the morning for the Lowlands — Tequila, Amatitán, El Arenal — where warm days and volcanic soils shape the plant. Breakfast sets the pace (gorditas, barbacoa tacos, café de olla). 

In the fields, your host tells you about the rows (age, brix, ripeness) and demonstrates the "jima" with the "coa". In pre-Columbian times, weavers in Oaxaca worked on backstrap looms with plant-based fibers like cotton, agave, and more. Spanish invaders introduced the standing loom and silkworms, kickstarting a new tradition throughout the country.

Noticing in the early 2000s that the historical technique of creating silk was nearly extinct, a talented family dedicated themselves to reviving this incredible craft.

On this experience, you’ll visit the family’s workshop and mulberry orchard to learn about the cyclical process of silk production—from raising the worms to spinning, weaving, and creating natural dyes. 1 -  As the focal point of the Accademia, Michelangelo’s David is a representation of strength, beauty, and human achievement. Created from a single block of marble, this masterpiece symbolizes the Renaissance ideals of humanism and is renowned for its anatomical precision and the portrayal of David before his battle with Goliath.

2 - The Hall of Prisoners features unfinished works by Michelangelo, known as "Prisoners" or "Slaves". These sculptures were intended for the tomb of Pope Julius II but were never completed. They offer a unique insight into Michelangelo's process, where the figures seem to be struggling to free themselves from the marble, embodying the concept of the "unfinished" in art​​​​.

3 - The Gipsoteca is a collection of plaster casts by the 19th-century sculptor Lorenzo Bartolini. This room showcases the creative process of sculpting, with numerous busts and models used by Bartolini and his students. Iconic Accademia Gallery

The narrow, bustling alleys illuminated by rays of light filtering through makeshift coverings are a common sight in the Medina of Fes, where the blend of shadow and light creates a mysterious and historical ambiance, perfect for exploring on foot. It's an excellent depiction of daily life within the heart of Fes, showcasing the energy and the dense social fabric of this ancient city.

The contrast between the high-heeled boots that seem to be the footwear of choice for young women in wintertime and how Fes is rooted in time is a stark contrast of the past, present, and future that all exist. Marrakech’s medina had felt medieval, but it cannot compare with the proud, faded, crumbling, stately stance of Fes. The architecture is more intricate, the medersas older, the beliefs stauncher, and the passages more secretive.

I step aside just in time as I hear the chant – “Balak, balak” (watch out, watch out) – and a mule laden with fruits saunters past. Mules aren’t officially allowed, says my guide Karima, pointing to a sign at one of the doors of the medina. She’s taken it upon herself to quiz me about Arabic words. What is ‘door’ in Arabic? The most memorable sound? Place Seffarine, a square known for its rhythmic orchestra: metal clanging on metal, non-stop throughout the day. Under the protection of a centuries-old tree, talented craftsmen hammer and sculpt copper pots and pans in cacophonous harmony. We sipped mint tea and people-watched, entranced, for a whole hour.
