A calçotada is a seasonal Catalan ritual (November–April) centered on the communal roasting and eating of calçots - sweeter, elongated onion-like shoot cultivated in trenches.  

You’ll depart Barcelona in private car, into the Catalan countryside. Your destination: a working garden where calçots (pronounced kal-sotz) are grown, harvested and prepared over open fire. 

Along the way, you’ll stop at the Royal Monastery of Santes Creus, a medieval Cistercian abbey built in 12th century, with Gothic cloisters, royal tombs and austere architectural purity.  

At the garden, you’ll meet the farming family and learn about the cultivation of calçots. Then comes the feast: calçots grilled until the outer layers blacken, wrapped in newspaper to steam and eaten by hand — peeling away charred exteriors and dipping each stalk into romesco (or a similar sauce). Expect to get your fingers messy, and partake in what is, by design, a convivial, generous meal. This is as farm-to-table fresh as it gets.

A calçotada is a food experience that is sociable, traditional, delicious, and playful. It’s about ritual, regional identity, rural air, fire, laughter, wine, and the earth that grew your food. The ritual of gathering friends for a gluttonous afternoon to eat them defines Catalan winter life in rural areas. In this private gathering, the owners will share how calçots are planted and harvested as leafless stalks. Ask them about the origin story of the calçotada, how it started in the Catalan town of Valls at the end of the 19th century, and about the farmer who experimented with planting onion shoots under soil and discovered their sweet, tender interior.

This is a 3-hour exploration of Fes Medina with Omar Chennafi, a local cultural expert and renowned photographer. This dinner and drinking experience takes place in Shinjuku, the heart of Tokyo's dining and drinking districts. You'll start your experience at a tiny, 8-seat yakitori shop that is only open for a few hours each night. Established by a husband and wife team nearly 40 years ago, the wife took over running the shop on her own when her husband's health declined several years ago. A long established clientele and 6 consecutive appearances on the annual Top 100 yakitori shops in Tokyo keeps the shop full nearly every night, but also makes it difficult for newcomers to join in.

Your host Aya is a long-time customer of the shop who will introduce you to the owner and customers alike as you enjoy a full course yakitori meal, drinks, and friendly interaction with the regulars. The shop closes at 9:00pm, at which point you and the remaining regular customers help shut down the shop before heading to the nearby Golden Gai area to enjoy a few rounds of drinks and lively conversation.

Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

Paro Taktsang - or Tiger’s Nest monastery - hangs off a cliff at a dizzying 10,240 feet over the Paro Valley. It’s a 5 hour climb, punctuated with lunch. Not too tough, as it turns out. I must be fitter than I think. But the guide reminds me - “See, I told you so”. 

The hike (including getting to the trailhead) takes about 6-7 hours, depending on how much time you spend at the monastery. 4 miles round trip on a wide dirt trail. At the halfway point is a cafeteria - and for most people, getting to this point is the toughest part of the hike. Beyond this, both the scenery and the difficulty of the climb are in your favor.

Anafiotika Neighborhood

Guatemala

The spectacular Mayan ruins of Tikal overrun by miles of  unspoiled jungle are extraordinarily rich in wildlife incl. the elusive jaguar. 🐆 

It’s one of the few UNESCO World Heritage sites that combines both cultural and natural richness and the 500+ sq km contains numerous remains of the Mayan civilization scattered across wetlands, savannah and tropical jungles teaming with birds and monkeys.

It was a thrilling experience to wander in a place that was one of the great cities of the world around 700 AD and wonder how people lived at that time. 

We went late afternoon to take advantage of the magical light falling on the structures and our guide, Daveed, was very helpful in highlighting the important sites and the life at that time. We enjoyed watching the sunset from the top of Temple IV. A perfect filming location for Yavin 4 in Star Wars.

After the sunset, we walked in the fading light to the spectacular Grand Plaza, relieved in Daveed’s assurance that the 🐆 is shy of humans.

Pyramids of Tikal

Joan Miró Foundation Barcelona

Trieste, Italy, is home to the Risiera di San Sabba, a former rice mill turned Nazi concentration camp during World War II. As the only Nazi extermination camp in Italy, it serves as a chilling yet essential reminder of one of history’s darkest periods. Today, the site operates as a museum and memorial, honoring the thousands of political prisoners, partisans, and Jewish victims who were imprisoned, tortured, and deported from this location. Walking through the stark, somber complex offers a powerful and deeply moving experience.
