This Spanish celebration for the Holy Week dates to the 16th century, and blends social gathering with deep religious devotion. Solemn Catholic processions wind through narrow streets, organized by around 70 of Seville's church brotherhoods, featuring floats adorned with intricate statues of Christ, the Virgin Mary, and scenes from the Passion of Christ known as misterios. In Seville, it was tradition to enjoy these festivities from privileged private balconies owned by local families, offering a splendid vantage point. A local Seville "ambassador" will provide insights into the traditions, history, and significance of Semana Santa. Immerse yourself in this captivating spectacle for about 90 minutes to observe one or two processions.

The Semana Santa processions have grand pasos, or floats, intricately depicting scenes from the Passion of Jesus Christ. Devoted costaleros, dressed in protective garments, practice year-round for the incredible task of carrying these floats through narrow streets. Some of these floats are over 300 years old, serving as a testament to the unwavering dedication of the locals. As you watch from the private balcony, you'll witness the costaleros in action, bearing the immense weight of the floats on their shoulders. This 4-hour cooking class shares Valparaíso's culinary legacy through four dishes celebrating the fusion of Chilean heritage and European influences from when the seaport was at its heyday. The cooking experience and wine pairing take place in the home of Al Ramirez, a sommelier and street artist from Valparaíso. In keeping with the spirit of "sobremesa", the cherished Chilean tradition of lingering around the table, the experience is unhurried and focuses as much on human stories as kitchen secrets. 

You'll start with every Porteño's favorite sharer—Calugas de Pescado, a platter of fried fish drizzled with lemon. Machas a la Parmesana (baked razor clams) follow suit while a pasta dish fusing Chilean and Italian techniques simmers on the stove. Dobladitas (French-inspired bread) served with pebre (Chilean salsa) or manjar (dulce de leche) completes the experience. Marie Fernández is a Mexican photographer who grew up in Mexico City. From 2017 to 2019, she studied photography in Paris and graduated as a photojournalist and documentary photographer. She is currently a member of the Women Photographers History collective.

Manuel is also a Mexican photographer from the city. He has worked with international media such as The New York Times and is currently contributing to The New Yorker. In 2024, he held his first solo exhibition, hosted by the U.S. Congress at the Capitol Building and funded by Amnesty International and the Open Society Foundations.

This six-hour asado experience in Valparaíso is the most authentic Chilean barbecue experience you'll find in the Fifth Region. Not only is your host an expert guide born and raised in the seaport, but he is also an avid grill master. The experience starts with the purchase of ingredients from Juan Víctor’s local feria (market). You’ll pick up fresh herbs and vegetables while chatting to vendors and immersing yourself in the scents, textures, and sounds of the market. As no Chilean meal is complete without wine, you will also purchase some regional Carménère and Sauvignon Cabernet.

Once at Juan Víctor’s family home, you will prepare the asado using his self-built brick parrilla. This includes chopping aji (chili) and tomatoes for pebre (Chilean salsa), tending to the charcoal, or priming marraqueta (bread rolls) for the starter of choripan (chorizo sausages). The experience is delivered at an unhurried pace with emphasis on sharing stories and truly understanding the culture of asado.

Dining in Chile goes beyond what appears on the menu. Food is a cultural exchange — anything placed on the table is for sharing, no meal is hurried, and stories are the main course. As the pinnacle of Chilean food culture, the asado chileno is rooted in the idea of convivencia (togetherness) and Juan Víctor's intimate barbecue is a rare invitation to experience this for yourself in Valparaíso. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Old Town Dubrovnik

Tanzania

We spend nearly four amazing hours in the Sand River Circuit in the midst of a spectacular head of grunting wildebeest. Led by “collective intelligence”, these animals complete a 1000 mile loop over the course of a year, and most survive for several seasons of this tough journey! 

When we arrive in the Grumeti Reserves, further south, we find the last few hundred thousand or so wildebeest. Here they are extremely purposeful and move in a single-file. Perhaps they have realized that they are late and will miss out on all the new green grass in the northern plains. They kick up a storm of dust as they move forward with determination - though it is not unusual to see the whole herd running swiftly back if something ahead spooks them. 

It is here that we see the consequences of the ‘battle’ - injured animals or those too weary to complete the journey. This is sad to watch as they will soon become easy prey to the predators. 

Such is the ⭕️ of life.

One Million Wildebeest

Jamaica

1942: Errol Flynn popularised rafting down the river Rio Grande in Jamaica on bamboo rafts, made of long logs bound together. Fast forward: I'm on a raft for a 3-hour ride and sensory overload: ferns, birds, rapids, butterflies, serenading raft captain. But here’s my favorite part —

After an hour on the river, we dock at Belinda’s Riverside Restaurant, a rustic gem nestled by the Rio Grande. How does this place even exist in the middle of nowhere? Turns out Belinda and team hike a couple of hours across the hills, ingredients in tow, to set up shop each time, serving up Jamaican-style curry goat and fish (take your pick: fried, steamed, or escoveitched). Prepared with love and served alongside rice or bammy. One of my best meals in Jamaica. Call ahead to make sure Belinda’s is open on the day you visit.

Curry Goat by the River

Chile’s Laguna Cejar, located in the heart of the Atacama Desert, is a stunning saltwater lagoon where visitors can experience the unique sensation of floating effortlessly due to its high salt concentration, similar to the Dead Sea. Situated about 20 km (12 miles) from San Pedro de Atacama, this turquoise lagoon, surrounded by a stark white salt crust and the majestic Andes Mountains, offers an unforgettable natural experience and breathtaking photography opportunities.

1. Float effortlessly in the lagoon’s mineral-rich waters, known for their extreme buoyancy due to a salt concentration of over 40%.

2. Stunning color contrasts between the deep blue water, the white salt deposits, and the golden desert create a perfect setting for photography.

3. Views of the Licancabur Volcano and the Andes, especially during sunset, make this an unforgettable desert landscape.

4. Nearby Ojos del Salar, two perfectly round freshwater sinkholes, offer a refreshing dip for those wanting a break from the salty water.

5. Abundant birdlife, including flamingos, can often be spotted around the lagoon, adding a touch of wildlife to the visit.

Visitor Tip: Bring swimwear, a towel, and sandals, as the salt can be rough on bare feet. Avoid getting water in your eyes, as the high salt content can be irritating. Due to conservation efforts, swimming is sometimes restricted, so check local regulations before visiting.

Laguna Cejar

The historic city of Silves, located in Portugal’s Algarve region, offers a blend of rich heritage, stunning architecture, and delicious local sweets. Once the thriving capital of the Moorish Algarve, Silves is steeped in history, with landmarks that tell stories from centuries past. 

1. Silves Castle, a red sandstone fortress that towers over the city, is one of Portugal’s best-preserved Moorish castles. Dating back to the 8th century, its thick walls and towers offer incredible views of the surrounding countryside. Inside, you can explore ancient cisterns, arched pathways, and beautifully landscaped courtyards that make the history come alive.

2. The Silves Cathedral, located near the castle, is a remarkable Gothic structure built on the site of a former mosque. Step inside to admire its vaulted ceilings, ornate carvings, and tombs of local nobility. The cathedral’s unique blend of architectural styles reflects the city’s complex history of Moorish and Christian influences.

3. Silves is renowned for its traditional Algarvean sweets, especially treats made from almonds, figs, and carob. Pastry shops throughout the city offer a taste of classics like “Dom Rodrigo,” a delicate almond-and-egg-yolk dessert, and “Morgado,” an almond cake often filled with sweet egg cream.

4. The city’s Arade River waterfront is lined with picturesque cafes and offers a peaceful place to relax. Once a vital trading route, the river now provides a scenic backdrop as you stroll through Silves’ cobbled streets.

5. Annual events like the Silves Medieval Fair, held each summer, transform the city with reenactments, traditional markets, and street performances. It’s an immersive experience that brings Silves’ storied past to life in a vibrant, celebratory atmosphere.

To make the most of your visit, wear comfortable shoes for exploring the hilly streets, bring a camera for the views, and don’t miss the chance to sample some local sweets!

In Oaxaca are so many different indigenous groups spread across numerous villages, and each of them is known for their unique works of art, from rugs to pottery, flowers, and paintings.

Street art in Oaxaca tells stories about Mexico, their struggles for independence and economic development, and against military dictatorship and US American influence. You can learn a lot from indigenous rights to natural disasters through street art in Oaxaca by walking through the streets and analyzing each mural.

Colombia

I have traveled to Moab, Utah on more than one occasion and every time it has been an absolute blast! This small, more local town is home to some amazing things that you can’t find anywhere else. 

There is a place there that I travel to every time called Mill Creek Canyon. It is a short hike to a watering hole that supplies the river you will have to cross more than once. Once you reach the watering hole, you will find an amazing view and usually many friendly people depending on what time you go. 

Now, it can get pretty hot in Utah so don’t forget the water and the sunblock, as well as a swimming suit!

The main attraction there is the cliff jumping! You can climb up the small waterfall and there will be a small ledge where you can jump from into the freezing water below. Let me tell you, it’s an absolute blast that you will never forget! 

I highly recommend this location to all people, even if you’re just passing through
