This experience takes you to one of the smallest olive groves in the Alentejo. With only 231 olive trees, João’s farm has been in the family for three generations, but it was only in 2015 that he started producing olive oil.

João's grandfather planted most olive trees, but some have been here for thousands of years. Unlike the super-intensive olive groves common in the area, João's traditional approach relies solely on rainwater and eschews chemical use. This experience delves into the rich history of the farm and the meticulous process of olive oil production. You'll witness unique grafting techniques that allow different olive varieties to grow from a single tree. 

The experience includes learning the art and science of olive oil tasting, understanding the nuances between northern and southern Portuguese olive oils, and savoring a lunch that features regional products and wines from local producers that João knows personally.

You will need to drive or arrange your own transport to João's farm which is about 25 minutes away from the center of Évora.

Clara shares hosting duties with her right-hand, Mariana, whose natural curiosity drives her exploration of material-focused creative practices. Together, they turn every workshop into an open space for experimentation, discovery, and rethinking how we create, and have collective knowledge about the city's related upcycling and craft scene which will no doubt inspire you to explore further.

Start your day with a scenic drive from Cappadocia to Salt Lake, followed by a delightful lunch of special Turkish steak in Aksaray. As the sun begins to set, you’ll have the opportunity to photograph a variety of subjects—from majestic horses to elegant ballerinas—mirrored against the expansive sky. The day concludes with a satisfying dinner at a local way station, where you can choose from a diverse menu, before your return to Cappadocia. This experiential tour introduces you to two of Kyoto’s most refined cultural and multi-sensorial heritages — incense and green tea — experienced side by side. At an aroma atelier, you’ll select natural ingredients that reflect your favorite scents and knead them into incense balls, a craft practiced since the Heian era. You’ll also assemble a simple burner from Kyoto-produced wood to take home. Along the way, you’ll handle and compare the fragrant materials used in kōdō — the “Way of Incense,” - and learn why Japanese incense is gently heated rather than burned to preserve its layered fragrance. 

Continue to a tea salon for a guided tasting of several teas paired with seasonal sweets, learning how aroma defines Kyoto’s tea culture. You’ll compare tea profiles, and see how water temperature and steep time shift sweetness, umami and astringency. Along the way, stop at specialty shops offering incense sachets, cases, and tea bowls, and contemporary creations that reinterpret tradition. 

Most travelers encounter tea or incense separately; this experience reveals the cultural dialogue between kōdō (the Way of Incense) and chadō (the Way of Tea).
