This workshop offers a first-hand experience of all the steps involved in the creation of the emblematic tapas of Spain. You’ll see the journey of creating a selection of tapas from market to the table. You will prepare the tapas under the guidance of the chef, who will explain the geographical origin of each dish, and share interesting facts and creative possibilities for their preparation. The hands-on experience is a crucial element. Following the preparation, there's the joy of tasting the creations, paired with traditional Spanish wines. This experience welcomes you into the studio of Shannon McEvoy in Providencia, Santiago’s leafiest central district, for a two-hour private meet-and-greet with the artist.

Over light refreshments, you’ll hear how Shannon relocated from the United States to Chile and established herself as a muralist working between two cultures. She will share insights into her creative process and the techniques behind large-scale public artworks. Through an interactive presentation, you’ll explore some of her murals across Chile and beyond, gaining an understanding of how street art reflects cultural narratives and urban identities.

Inside her studio, you’ll view a curated selection of her works, from completed pieces to works in progress, offering a rare behind-the-scenes look at an artist’s evolving practice. The session also provides an opportunity to discuss the role of public art in shaping communities and the inspirations that fuel her vibrant, large-scale creations.

This rare-access, behind-the-scenes experience takes place in the private studio of an artist whose work bridges the cultural landscapes of Chile and the United States. Shannon will share little-known stories about how she integrated into the local art scene and provide an overview of Chilean artistic traditions, from muralism to contemporary public art.

As an artistic director, Shannon collaborates with fellow muralists and actively champions the community aspect of street art. She will discuss her latest large-scale installation, created in partnership with the Santiago Metro and the United States Embassy. Originally from Minnesota, multimedia artist Shannon McEvoy studied in Viña del Mar in 2010. The country and its people left a lasting impression on her, and she quickly returned after graduation. Inspired by the street art of Valparaíso, she incorporated Chilean muralism into her undergraduate Honors Thesis and later became a muralist herself.

Shannon has lived in Chile for over 10 years, where she teaches English and creates murals—though her talents extend far beyond. She also paints, sketches, makes ceramics and jewelry, designs her own clothes, and experiments with photography. As an artistic director, she has overseen several monumental public art installations in Santiago and beyond.

Passionate about both art and language, Shannon sees them as powerful tools for self-expression and meaningful connection. Bilingual in English and Spanish, she also speaks basic Portuguese.

“In my youth,” he recalls, “many people came here, to the Algarve, and my family—like many others—had small farms. I spent a lot of time working on these farms growing carob, figs, almonds, and olives.” These daily rituals shaped his relationship to the land. “Everybody knows the Algarve for its oranges,” he adds, 
remembering his family’s orchard. “I have good memories of my mother and my sister making lots of cakes—almond cakes, and sometimes orange cakes too.”
What João wants travelers to experience is that same connection: the gestures and flavors that tie people to place. “We still recognize these things—the tradition of fishing, the dry fruits, the rituals of picking and preparing. This is what I want travelers to connect with.”

Kenya

Each year, over 2 million wildebeest, zebras and antelope migrate from the Serengeti in Tanzania to the Maasai Mara in Kenya in search of water and fresh grazing . Experiencing this during July-October is an absolute spectacle.

The Mara Triangle is particularly great for watching river crossings in August and September - perilous for the animals as the river is packed with wily Nile crocodiles.

We stay with this herd of zebras for 3 days - waiting for them to decide to cross. It’s a matter of life and death for them - so they are understandably cautious  The zebra get to the banks more than 20 times, giving up at the very last minute, often spooked by a territorial hippo or a sneaky crocodile.

Finally, a brave zebra leaps forward into the water. And a second one follows fast. Suddenly it’s mayhem with hundreds of zebras and wildebeest splashing into the river.

Pillowcase or jack-o’-lantern bucket?

It’s Halloween time in Beacon Hill in Boston. After much consideration, I decide that I am too old to collect candy from my generous neighbors.

So I pick up my camera instead and wander through Boston’s most historic neighborhood to celebrate its annual Halloween tradition.

Since the 1970s, this is one day when the charming tree-lined streets of Beacon Hill get packed ..
 
.. with costumed pets and people, infants dressed as pumpkins to the elderly dressed in traditional witching gear.

Watch out for the brooms. 

I run into a friend dressed up as Jamie Lannister from the Game of Thrones, complete with chopped arm hanging around his neck.

There’s a dog dressed up as a skunk.

A house on Pinckney Street is showing black-and-white Dracula movies.

Beacon Hill has the perfect Halloween atmosphere with the wrought iron, cobblestones, narrow alleys and seriously all-out decoration.

So, trick or treat?

Portugal’s Elvas Fortifications, a UNESCO World Heritage Site, form one of the largest and best-preserved defensive complexes in Europe. Located near the Spanish border in the Alentejo region, Elvas played a crucial role in Portugal’s military history, particularly during the Restoration War (1640–1668). The star-shaped fortresses, massive city walls, and underground tunnels showcase the brilliance of 17th-century military engineering, making Elvas a fascinating destination for history enthusiasts and photographers alike.

1. Forte de Nossa Senhora da Graça, an imposing hilltop fortress, offers breathtaking panoramic views and a fascinating history as a former prison and military outpost.

4. The Amoreira Aqueduct, a stunning 16th-century structure with 843 arches, was built to provide water to the fortified city and remains one of the region’s most impressive sights.

5. Historic center of Elvas, with its charming whitewashed houses, cobblestone streets, and landmarks like the Elvas Cathedral and Military Museum, offers a glimpse into the town’s rich past.

Visitor Tip: Visit at sunset for the best lighting over the fortresses and surrounding countryside. Wear comfortable shoes, as exploring the fortifications involves walking over uneven terrain.

Elvas Fortifications

Essaouira, Morocco, is renowned for its bohemian spirit and vibrant art scene, making it a magnet for creatives, free spirits, and art lovers. Since the 1960s, when icons like Jimi Hendrix and Cat Stevens frequented the city, Essaouira has blossomed into a hub for hippie culture and contemporary Moroccan art. Today, its winding medina streets are dotted with eclectic galleries, artisan workshops, and laid-back cafés, all infused with a relaxed, seaside vibe.


1. Galerie d’Art Frederic Damgaard, the city’s oldest gallery, showcases contemporary Moroccan art, including paintings, sculptures, and mixed-media works by local artists.

Art Galleries of Essaouira

The Dubrovnik Cathedral, formally known as the Cathedral of the Assumption of the Virgin Mary, is a monumental baroque masterpiece in the heart of Dubrovnik, Croatia. Rebuilt in 1713 after the devastating earthquake of 1667, it showcases architectural grandeur and houses a rich treasury of relics and art, including works by the renowned Italian painter Titian. Its resilience through earthquakes and sieges underscores the enduring spirit of Dubrovnik. Top reasons to visit:
 
1: Begin your exploration with the cathedral's striking façade, marked by Corinthian columns and a large Baroque window. The grand entrance leads to a richly decorated interior featuring a high nave, massive columns, and three apses, crowned with a grand Baroque dome​​​​.
 
2: The main altar boasts a magnificent polyptych by Titian, depicting the Assumption of the Virgin, a highlight of the cathedral's collection. Side altars display works by Italian and Dalmatian masters, showcasing centuries of religious art​​​​.
 
3: A visit to the cathedral's treasury reveals a collection of 182 reliquaries, including the gold-plated arm, leg, and skull of Saint Blaise, Dubrovnik's patron saint. Baroque: Dubrovnik Cathedral

Tarragona, located along Catalonia’s coast, is a city steeped in history and known for its Roman heritage. From well-preserved ruins to medieval alleyways, it offers a fascinating journey through time combined with beautiful seaside views.
1. The Roman Amphitheater, overlooking the Mediterranean, is a must-see landmark.
2. Stroll through the Old Town, where medieval walls and cobblestone streets transport you to another era.
3. The Tarragona Cathedral showcases a mix of Romanesque and Gothic styles.
4. The Archaeological Museum offers a deep dive into the city’s Roman past.
5. The Balcó del Mediterrani viewpoint provides sweeping views of the coastline.

Tarragona

Nestled in the hills of central Crete, Spili Village enchants visitors with its traditional charm, Venetian-style fountains, and lush greenery. It’s the perfect place for a relaxing day trip to experience the island’s authentic culture and hospitality.
1. The village’s famous Venetian fountain features 25 lion heads with crystal-clear spring water.

Spili Village

The Moroccan fig liquor is beginning to sneak up on me. Or perhaps it’s the jet lag. The soulful music of the live folk vocalist is not helping either. 

We’re waiting for dinner, in the courtyard of a restored Riad. It’s a good thing I haven’t eaten much during the flight because very soon, it’s clear that they expect me to have the appetite of a small army. 

The food is absolutely delicious, and here’s what I learn:
“Salad” is a selection of 5-10 amazing dips served with khobz - flatbread. 
Pigeon pastille is a must-have any time you see it on a menu!
Tagine of lamb with fluffy couscous - when cooked to perfection as it is here - is irresistible. 

This is followed by an elaborate dessert course, mint tea prepared with precision and ceremony, gnawa singers and a belly dancer who insists on audience participation. 

This story celebrates a series of unforgettable meals in Marrakesh - some in fine restaurants and others on the street.

Of Pigeon Pastille

The General Archive of the Indies in Seville, Spain, is one of the world’s most important historical archives, preserving centuries of records from Spain’s colonial empire. Established in 1785 by King Charles III, this UNESCO World Heritage Site houses over 43,000 files, 80 million pages, and 8,000 maps that document Spain’s exploration, trade, and governance in the Americas and the Philippines.
