Chile

This 6.5-hour, truly exclusive experience intertwines poetry, cuisine, and dialogue in a highly personalized setting in Santiago, Chile. Starting with a sensory journey through the La Vega and Mercado Central food markets, you will procure the freshest ingredients for the grand finale. But before then—a rendezvous at the former address of Chile's most famous denizen of the past. Now a museum, La Chascona was where Nobel Prize-winning poet Pablo Neruda worked magic both as a writer and gourmand.

The main course of the experience is served at the home of your host in Barrio Bellavista, where the morning's haul is transformed into Caldillo de Congrio (conger chowder), accompanied by premium Chilean wines. This aromatic fish soup was the dish Neruda prepared to welcome guests at his private residences in Santiago, Valparaíso, and Isla Negra. In fact, you'll be conjuring Caldillo de Congrio Nerudiano, true to the poet’s take on this time-honored recipe.

Much like Neruda, Julio is a gourmand who delights in feeding family and friends. His experience is curated to take you through every stage of the process—from chatting with a fishmonger who has run her stall for 50 years in Santiago’s oldest fish market to sautéing the oil and layering flavor into the chowder. During the cooking process, Julio will recite Neruda’s Ode to Conger Chowder—a lyrical poem rich in rhythm and emotion that also doubles as a step-by-step guide to preparing the poet’s signature dish.

Beyond the authenticity of speaking with longtime vendors, touring La Chascona with a Neruda expert, and preparing a meal infused with verse, this experience is marked by warmth. As Julio works his magic, you’ll hear how he first discovered a love for cooking while helping his mother in the family kitchen. This is a day-long journey into the trade life of Istanbul—told through its markets, caravan inns, and shared meals. This walking tour crosses from the old merchant quarters of the Grand Bazaar and Spice Bazaar to the everyday rhythms of Kadıköy, weaving through Ottoman courtyards, the "hans", and backstreet cafés along the way. You’ll visit a working caravanserai, meet a craftsperson keeping old trades alive, see rare views of the city from various points, and sit down to the same dishes traders still eat today—sour soups, lentil köfte, helva, mussels, meze. You’ll walk through wholesale alleys behind the Spice Bazaar and visit the Süleymaniye complex—once a spiritual and logistical nerve center of the empire. Then you’ll cross the Bosphorus by ferry, stepping into the present-day hum of market life on the Asian side. This is the story of Istanbul—told through trade routes, shared meals, and the spaces in between.

Grand Bazaar Behind-the-Scenes

Enter the Spice Bazaar, still thick with scent and sound since 1660. Climb toward one of Istanbul’s architectural high points—Süleymaniye Mosque, designed by imperial architect Mimar Sinan in the 16th century. This was once a civic hub. Visit the former caravanserai, the soup kitchen (imaret) that fed the poor, and the medical clinic (darüşşifa) that served travelers and locals alike. As you move through the complex, you’ll see how Ottoman ideals of charity, urban planning, and commerce were woven together. Take your Japanese culinary experience to the next level in this workshop that allows you to participate in the preparation of a three-course, home-cooked meal. Far from the elaborate kaiseki meals that can be prepared only by chefs who have spent years honing their skills, Mami, a local chef and pâtissier, guides you in creating a simple yet heartfelt meal that you can learn to prepare in your own home using local, seasonal ingredients. The dishes include a vegetable dish, a fish dish, and a sushi; the actual ingredients will change with the seasons.

Set in a stylish century-old liquor shop, you’ll also enjoy several types of Japanese sake that will be paired with each course. As the entire experience is conducted only in Japanese, your host Eric, using his own background as a Kyoto-based chef, will explain the details throughout your time here. Along the way, you’ll gain insight into the traditional Japanese approach to food, built on harmony, seasonality and visual presentation. 

This experience offers rare insight into everyday Kyoto cuisine. Chef Mami walks you through each step of a seasonal three-course meal, explaining how the average Kyoto resident selects ingredients, balances flavors, and adapts to what’s available. You’ll gain an understanding of how Kyoto’s food culture reflects subtle shifts in season and regional sensibility.

In this hands-on experience, you will learn to prepare three Japanese dishes. 

After choosing your welcome drink. Chef Mami will give a short talk on Japanese home cooking. 

The first dish will be a vegetable appetizer, usually a boiled or tossed dish. The second dish will involve fish, while the last will be a sushi dish (tenmari or maki). These are all classic home cooked dishes in Japan.

Originally from Toronto, Canada, Eric has been living in Kyoto for over 22 years. He first came to Kyoto to complete his Master’s degree in Japanese Art History and has worked as a teacher and translator. Since 2022, he has been running a monthly pop-up restaurant, serving Cantonese-inspired dishes. Well connected with the art and culinary communities in Kyoto, he is eager to share this wonderful city with visitors. 

This 3.5-hour architectural tour of Valparaíso, Chile, is led by local architect and master of urban planning Jaime Núñez. Jaime (also known as Ja Cariocandino) will introduce you to the city’s layered identity through a tour structured around ten public spaces that—in his expert opinion—are architecturally remarkable. The tour includes transport by private vehicle, punctuated by short walks designed to deepen your understanding of the urban landscape and local community.

Valparaíso's distinctive topography—with steep hills surrounding a narrow coastal plain—has shaped how people live, move, and build here. Rather than focusing on tourist hubs, Jaime’s route centers on spaces that have emerged organically through civic use and historical need. Highlights include plazas, markets, housing developments, and hidden side streets that form the city's lived core. He’ll explain how these spaces emerged with the expansion of the flat part of the city: El Plan, or the “Horn” of Valparaíso.

Valparaíso, Chile’s historic port and cultural capital, is known for its vibrant art and poetry. But beneath the colorful surface lies a deeper story—of how architects, engineers, and residents negotiated an unforgiving geography to build a city in constant dialogue with its terrain, an experiment in adaptive urbanism. Jaime reveals how public spaces hold the memory of expansion, migration, and resilience. 

This is a rare-access opportunity to observe Valparaíso through an architect’s eyes and discover how streets, stairs, viewpoints, and inhabitants are interconnected. From pathways etched into hillsides to markets in the flatlands, you’ll see how necessity shaped design. 

Skirting the edge of Cerro Alegre and Cerro Concepción, these off-path locations would never appear on a typical Valparaíso itinerary. Emporio Village, located in the southern part of Santorini, is a picturesque and historic settlement that offers a blend of traditional Cycladic charm and medieval intrigue. Known for its labyrinthine alleys, striking architecture, and peaceful atmosphere, it is one of the island’s oldest and largest villages. Emporio’s authentic character and rich history make it a must-visit for those seeking a quieter, more cultural side of Santorini.  
1. The Castelli (Castle), a medieval fortress at the heart of the village, features narrow passageways, arched alleys, and colorful doors, transporting visitors back in time.

Eclairs, ratatouille, fromage – mhmm, so yummy – paired with a glass of wine and pleasant company, a French cooking class is a trip for all the senses (and fun, too). We opted for a private cooking class in Paris with Léo, a chef who has cooked in several top restaurants throughout his life. 

The first dish we learned how to cook was a French cheese plate and handmade bread accompanied by filled vine leaves. After that, we learned about French cuisine, the main ingredients, preparation methods, history, and drank some more wine. We learned what ingredients make the French kitchen unique (wine, vinegar, and cheese) and made a delicious ratatouille, one of France's most popular vegetable dishes. 

We read you can also do these courses online, but you have to get the ingredients and tools beforehand. A good option for digital visitors!

Carved by the Dades River, the Dades Valley is one of Morocco’s most breathtaking landscapes, stretching between the High Atlas and Jebel Saghro mountains. Known as the “Valley of a Thousand Kasbahs,” this region is dotted with ancient fortresses, traditional Berber villages, and dramatic rock formations. The winding road through the Dades Gorges is famous for its hairpin turns and spectacular canyon views, making it a must-visit for nature lovers, photographers, and adventure seekers.

1. Towering red and orange cliffs rise above the Dades River, creating a dramatic contrast with the lush green valley below. The ever-changing colors of the rock formations make sunrise and sunset particularly stunning.

2. A series of hairpin bends along the Dades Gorge road provides one of Morocco’s most thrilling drives. The viewpoint at the top offers breathtaking panoramic views of the valley and surrounding mountains.

3. Unique rock formations called Monkey Fingers stand out with their smooth, rounded shapes, formed by millions of years of wind and water erosion. The site is a favorite for hikers and photographers.

4. Traditional kasbahs and Berber villages line the valley, where visitors can experience authentic Moroccan culture, meet locals, and enjoy a glass of mint tea with stunning views.

Tips for Visiting:
The best time to visit is March to May or September to November, when the weather is mild and the landscapes are at their most vibrant. A 4x4 vehicle is recommended for navigating the winding roads. Staying in a guesthouse or kasbah hotel allows for a more immersive experience, and bringing a camera is essential to capture the valley’s stunning rock formations and scenic vistas.

Dades Valley & Gorges

Svalbard & Jan Mayen

We arrive by RIB boat from Longyearbyen, dressed in survival suits, across a choppy Arctic Sea, with puffins and seals for company.

Isfjord Radio on Cape Linné, is an abandoned strategic communications station, with a decidedly interesting past, now converted into a stylish expedition lodge. 

Nothing could have prepared me for the extreme sense of isolation and wilderness. 

Imagine sitting all alone at latitude 79 degrees north and watching polar bears prowling outside the kitchen window. Two days ago, that is exactly what the staff at Isfjord Radio did.  After all, Svalbard’s travel slogan reads: “3000 polar bears, 2500 humans”. 

Hiking into the middle of nowhere, or along the coast looking for 1500-kilo walruses, is done with licensed guides, a couple of mandatory rifles for protection and huskies for company. It is a beautiful, stark landscape, filled with mystery and a sense of the unknown.

Tharros, located on the Sinis Peninsula in western Sardinia, is an ancient archaeological site that offers a fascinating glimpse into the island’s rich history. Founded by the Phoenicians in the 8th century BCE and later inhabited by Carthaginians and Romans, Tharros is a stunning open-air museum surrounded by the turquoise waters of the Mediterranean. With its well-preserved ruins, scenic coastal setting, and proximity to pristine beaches, Tharros is a must-visit destination for history enthusiasts and nature lovers alike. 
1. The archaeological ruins include remnants of Roman baths, streets, temples, and houses, offering insight into life in this once-thriving ancient city. 
2. The two standing columns, overlooking the sea, are among the most iconic features of the site, creating a striking contrast against the blue waters. 
3. The site is surrounded by the natural beauty of the Sinis Peninsula, with its rolling hills, Mediterranean flora, and pristine coastline. 
4. Nearby, the San Giovanni di Sinis Church, one of Sardinia’s oldest Christian churches, adds an extra layer of historical and cultural interest to the visit. 
5. Tharros offers breathtaking views of the Gulf of Oristano, making it a perfect spot for photography and quiet reflection.

1942: Errol Flynn popularised rafting down the river Rio Grande in Jamaica on bamboo rafts, made of long logs bound together. Fast forward: I'm on a raft for a 3-hour ride and sensory overload: ferns, birds, rapids, butterflies, serenading raft captain. But here’s my favorite part —

After an hour on the river, we dock at Belinda’s Riverside Restaurant, a rustic gem nestled by the Rio Grande. How does this place even exist in the middle of nowhere? Turns out Belinda and team hike a couple of hours across the hills, ingredients in tow, to set up shop each time, serving up Jamaican-style curry goat and fish (take your pick: fried, steamed, or escoveitched). Prepared with love and served alongside rice or bammy. One of my best meals in Jamaica. Call ahead to make sure Belinda’s is open on the day you visit.

This vast freshwater lagoon, surrounded by rice fields and wildlife-rich marshlands, is the birthplace of paella and a haven for birdwatchers, nature lovers, and photographers. A visit to Albufera offers a chance to experience Valencia’s traditional fishing villages, serene boat rides, and breathtaking sunsets, making it a perfect escape from the urban bustle.
