This 4-hour cooking class shares Valparaíso's culinary legacy through four dishes celebrating the fusion of Chilean heritage and European influences from when the seaport was at its heyday. The cooking experience and wine pairing take place in the home of Al Ramirez, a sommelier and street artist from Valparaíso. In keeping with the spirit of "sobremesa", the cherished Chilean tradition of lingering around the table, the experience is unhurried and focuses as much on human stories as kitchen secrets. 

You'll start with every Porteño's favorite sharer—Calugas de Pescado, a platter of fried fish drizzled with lemon. Machas a la Parmesana (baked razor clams) follow suit while a pasta dish fusing Chilean and Italian techniques simmers on the stove. Dobladitas (French-inspired bread) served with pebre (Chilean salsa) or manjar (dulce de leche) completes the experience. Al Ramirez is a tourism entrepreneur, Sommelier, chef, and street artist from Valparaíso who thrives off connections with people from all walks of life. In the instance that Al is unavailable to host, his cooking experience will be led by one of his close friends from his Barbosa Food and Wine Club. Mexico

This experience traces the artistic and spiritual legacy of José Clemente Orozco — muralist, philosopher, and seeker of hidden truths.

Born in Jalisco, Orozco pursued his art and vision across the United States and Europe before returning to his homeland to create his greatest works. In Guadalajara, he turned walls into vast meditations on freedom, myth, and human struggle.

Inside UNESCO World Heritage-listed Hospicio Cabañas, he painted fifty-seven monumental frescoes between 1937 and 1939, including The Man of Fire — a spiraling vision of transformation where Mexico’s history unfolds. 
At the Government Palace, his image of Father Hidalgo — the Prometheus of Mexican Independence — raises a torch of freedom that illuminates the civic heart of the city.

Kimono-expert Dr. Sheila Cliffe opens both her home and her closet to guests in this highly detailed, hands-on workshop exploring the beauty of kimono and the textiles used to create them. 

In the first half of this experience, Sheila will show you the full range of a kimono wardrobe, from the most formal styles worn on special occasions to casual and informal pieces that were once suitable to wear daily. She selects the pieces from her vast collection in a variety of patterns and materials, including rare and expensive weaves from remote parts of Japan. Meet the Lion. Landlord of the Okavango floodplains. The fearless prides of lions here are known to hunt buffaloes and elephants. They have large prides, with several young cubs. In the delta, as it is elsewhere, it’s all about power and opportunism.

The delta is clearly a fluke of nature, and the way to appreciate it best is from the air, especially in June and July when you can see the progress of the rain water flooding into the area and turning it into a lush paradise teeming with wildlife.
