Christopher is originally from England and Laurent is French. Both spent many years in London before relocating to Marseille in 2013, traveling widely during that time and developing a deep curiosity about place and culture. A calçotada is a seasonal Catalan ritual (November–April) centered on the communal roasting and eating of calçots - sweeter, elongated onion-like shoot cultivated in trenches.  

You’ll depart Barcelona in private car, into the Catalan countryside. Your destination: a working garden where calçots (pronounced kal-sotz) are grown, harvested and prepared over open fire. 

Along the way, you’ll stop at the Royal Monastery of Santes Creus, a medieval Cistercian abbey built in 12th century, with Gothic cloisters, royal tombs and austere architectural purity.  

At the garden, you’ll meet the farming family and learn about the cultivation of calçots. Then comes the feast: calçots grilled until the outer layers blacken, wrapped in newspaper to steam and eaten by hand — peeling away charred exteriors and dipping each stalk into romesco (or a similar sauce). Expect to get your fingers messy, and partake in what is, by design, a convivial, generous meal. This is as farm-to-table fresh as it gets.

A calçotada is a food experience that is sociable, traditional, delicious, and playful. It’s about ritual, regional identity, rural air, fire, laughter, wine, and the earth that grew your food. The ritual of gathering friends for a gluttonous afternoon to eat them defines Catalan winter life in rural areas. In this private gathering, the owners will share how calçots are planted and harvested as leafless stalks. He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

Originally built as Emperor Hadrian’s mausoleum in 123 AD, it has transformed through the ages, serving as a fortress, papal residence, and prison. Fez, Morocco, is home to the Bou Inania Madrasa, one of the most stunning examples of Marinid-era Islamic architecture. Built in the 14th century by Sultan Abu Inan Faris, this madrasa (Islamic school) served as both a center of learning and a place of worship. Unlike many religious sites in Morocco, Bou Inania is one of the few madrasas open to non-Muslim visitors, allowing them to admire its breathtaking zellij tilework, intricate wood carvings, and grand courtyard. A masterpiece of Moroccan craftsmanship, the madrasa is a must-visit for those interested in history, architecture, and photography.

1. The grand entrance, framed by an elaborately carved cedarwood door, welcomes visitors into a world of geometric patterns, Arabic calligraphy, and fine stucco work.

Bou Inania Madrasa

Eclairs, ratatouille, fromage – mhmm, so yummy – paired with a glass of wine and pleasant company, a French cooking class is a trip for all the senses (and fun, too). We opted for a private cooking class in Paris with Léo, a chef who has cooked in several top restaurants throughout his life. 

The first dish we learned how to cook was a French cheese plate and handmade bread accompanied by filled vine leaves. After that, we learned about French cuisine, the main ingredients, preparation methods, history, and drank some more wine. We learned what ingredients make the French kitchen unique (wine, vinegar, and cheese) and made a delicious ratatouille, one of France's most popular vegetable dishes. 

We read you can also do these courses online, but you have to get the ingredients and tools beforehand. A good option for digital visitors!

Shrouded in legend, this partially submerged fortification is believed by some to have inspired Jimi Hendrix’s song “Castles Made of Sand.” As the sun sets, the silhouette of the crumbling tower against the backdrop of the Atlantic Ocean creates one of the most breathtaking views in Essaouira, making it a must-visit spot for photographers and nature lovers alike.

The Great Barrier Reef is famous not only because it is the largest coral reef in the ocean, but also because it is the most beautiful one. For those who like snorkeling or diving, an unsurpassable underwater world opens up.

My highlight in Australia was definitely the day trip to the reef. From Cairns, we took the tourist boat out to sea. Since the water is relatively cold, you get a wetsuit and then have hours to discover the unique underwater world.

I saw sharks, turtles, huge colorful corals, man-sized fish, thousands of small schools of fish, a clam, rays, snails, and lots of underwater plants.

Remember that you are a trespasser in the underwater world, so be careful not to touch or destroy anything. Use organic sunscreen and always be respectful of your surroundings.
