Mexico

Corn has been a core element of the Mexican diet for thousands of years. Archaeologists have found maize cobs dating back to 4300 BC. Traditionally, the ingredient represented sustenance, fertility, and ancestral wisdom.

In this food workshop, you'll discover why corn is a much more diverse plant than you might imagine. You will also learn, hands-on, using traditional tools and the Nixtamal process, how to transform this magical ingredient into a tortilla.

After making your own quesadilla and salsa, you'll take a brief walk through the neighborhood and enjoy a couple of taquería pit stops. To conclude, you will become more closely acquainted with mezcal, a spirit made from agave (a plant the Mexica called Metl, or the tree of wonders), the other essential plant of the region. She studied Ancient Greek and Art History in Berlin, then returned to Rome to complete a Master’s degree focused on Renaissance art and restoration. For the past eight years, she has been guiding travelers through the city she knows intimately, blending history, art, and storytelling to reveal the layers of Rome most people miss.

This experience welcomes you into the studio of Shannon McEvoy in Providencia, Santiago’s leafiest central district, for a two-hour private meet-and-greet with the artist.

Over light refreshments, you’ll hear how Shannon relocated from the United States to Chile and established herself as a muralist working between two cultures. She will share insights into her creative process and the techniques behind large-scale public artworks. Through an interactive presentation, you’ll explore some of her murals across Chile and beyond, gaining an understanding of how street art reflects cultural narratives and urban identities.

Inside her studio, you’ll view a curated selection of her works, from completed pieces to works in progress, offering a rare behind-the-scenes look at an artist’s evolving practice. This rare-access, behind-the-scenes experience takes place in the private studio of an artist whose work bridges the cultural landscapes of Chile and the United States. Originally from Minnesota, multimedia artist Shannon McEvoy studied in Viña del Mar in 2010. The country and its people left a lasting impression on her, and she quickly returned after graduation. Inspired by the street art of Valparaíso, she incorporated Chilean muralism into her undergraduate Honors Thesis and later became a muralist herself.

Shannon has lived in Chile for over 10 years, where she teaches English and creates murals—though her talents extend far beyond. She also paints, sketches, makes ceramics and jewelry, designs her own clothes, and experiments with photography. As an artistic director, she has overseen several monumental public art installations in Santiago and beyond.

Passionate about both art and language, Shannon sees them as powerful tools for self-expression and meaningful connection. Bilingual in English and Spanish, she also speaks basic Portuguese.

The visit will begin by explaining the organic production method and the agricultural practices used in the farm. As visitors stroll by, they are invited to collect plants to smell and taste, whilst Rute talks about its medicinal properties and culinary uses. After touring the garden, we will visit the natural drying greenhouse, the plant processing room and finally the packaging and storage area. Then, the visitor will learn how to make a herbarium using the Cyanotype technique (or similar activity in winter). Afterwards, there will be a tasting in the middle of the field in a shady spot, of all the products produced on the farm. When asked about his love for Lisbon, Tiago’s enthusiasm is immediate: “I love my city! I really love the historic center of Lisbon!” Though he didn’t always feel that way. Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.
As tourism evolves, Tiago points toward Lisbon’s under-known strengths. “Gastronomy, street art, tiles, contemporary architecture… there’s so much more to discover!”

Teatro del Generalife

Argentina

The largest (not highest) waterfalls in the world are located in Puerto Iguazu, Argentina. It's a breathtaking spectacle to hear, see and feel the masses of water cascading down the landscape, and along the way, you'll see beautiful rainbows, coatis, and birds.
To get there, you'll fly to Puerto Iguazú and stay at one of the local hostels. We took this colorful train to the falls, and then you hike a bit on very accessible trails. Take your camera, because you'll want to show these views to your friends and family back home. Later in the evening you can watch the sunset and have a nice view of the three-country border – a river that separates Argentina, Paraguay and Brazil.
After visiting the Argentine side of the falls, you can take a trip to Brazil to experience the other side of the falls as well. On the Brazilian side, you can also visit a local botanical garden where you can observe mockingbirds, butterflies, monkeys, and other tropical animals.

Morocco

This is the view of The Red City, Marrakech’s medina from the panoramic terrace of Maison de la Photographie.

The museum of photographs is fascinating in how it came about – two famous photographers, Patrick Menac’h and Hamid Mergani, brought together their common passion for vintage Moroccan photography, and pooled their photos for the public to admire. Here I realize how black-and-white photos can dramatize the light-and-shadow effects in the medina.

From the terrace, you can have a glass of mint tea, and wonder about the thousands of satellite dishes that dominate the view. 

It’s peaceful here. On a clear day, you can see the snow-clad High Atlas Mountains. But you can’t see the chaos of Djemaa el-Fna, or hear shouts of ‘Balek!’ whenever donkey-carts come through laden with heavy goods. You can’t see the ‘hand of Fatima’ good-luck symbols painted on the carts after they have ambled past you. Or count the number of chickens being transported on the back of a groaning Vespa.

Shibuya Crossing, or Shibuya Scramble Crossing, is a popular scramble crossing in Shibuya, Tokyo, Japan.[1] It is located in front of the Shibuya Station Hachikō exit and stops vehicles in all directions to allow pedestrians to inundate the entire intersection.
