Immerse yourself in the fragrant world of an aromatic and medicinal herbs farm nestled in the picturesque region of Alentejo, Portugal. This experience invites you to explore the sustainable practices of organic farming and gain insights into the use of Portuguese aromatic herbs. Rute and João will teach you all about traditional harvesting and drying techniques, plucking herbs straight from the garden to smell, taste and make art with. This morning brunch immerses you in the culture of yerba mate, Argentina’s beloved herbal drink. Taking place in a private tasting room in the heart of Palermo, you will prepare mate step by step and come to understand the differences between regional herbs. Mate, pronounced “MAH-tay,” is accompanied by a selection of sweet and savoury foods prepared by Aby to bring out the nuances of the herbs.

Not only is Aby a professional chef, she is also a passionate storyteller who thrives on sharing Argentine culture through food. Aby’s homemade pastries are curated to soften and highlight the flavours of the mate. Items vary but typically include chipá (cheesy yuca bread), pepas (cookies), medialunas de jamón y queso (grilled croissant with ham and cheese), queso y dulce (cheese and quince jelly), and seasonal fruit. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Buenos Aires is one of the southernmost capitals in the world and also an exciting city. Although there are many ways to explore Argentine city life, biking is the most fun.

Biking is free in Buenos Aires, at least for a few hours. Using an app I downloaded to my phone, I spent the next few days biking around the Botanical Gardens, the best museums, art galleries, El Caminito, the riverfront, and the city's largest flea market (on weekends only!). While you’re at it, you can also visit one of the most beautiful cemeteries in the world in Recoleta.

The bike paths are well developed, and if you follow the signs, you'll find the main points quickly. Be careful, helmets are not available. If you want to be on the safe side, rent one in one of the bike rentals.

Cycling through Buenos Aires

Colombia

The Mayan culture is one of the most important indigenous cultures in Southern Mexico. Artifacts from bygone times stretch far across the jungles of Quintana Roos and Chiapas. 

If you want to learn more about how indigenous peoples lived before colonization, don't miss the ruins of Palenque. Arguably the largest Mayan ruins on the continent, they're tucked away, deeply hidden in the Mexican jungle. The highlights of the actual ruins are the numerous temples, a palace and aqueducts, and of course, a guided tour where you can learn all about Mexico's history. If you venture out into the jungle, you'll encounter rare wildlife like monkeys, colorful birds, and giant snakes.

Take sunscreen, plenty of water, and some snacks, as the tour takes at least half a day.

I often drive the two hours to catch the sunrise in Virginia Beach. Rudee’s Inlet is a favorite spot because of the contrast of the rocks.

Meet the Lion. Landlord of the Okavango floodplains. The fearless prides of lions here are known to hunt buffaloes and elephants. They have large prides, with several young cubs. In the delta, as it is elsewhere, it’s all about power and opportunism.

The delta is clearly a fluke of nature, and the way to appreciate it best is from the air, especially in June and July when you can see the progress of the rain water flooding into the area and turning it into a lush paradise teeming with wildlife. 

It’s a very special place.

Lion vs. Buffalo

Gràcia is one of Barcelona’s most vibrant and artistic neighborhoods, known for its bohemian vibe, colorful streets, and lively plazas. It’s a place where tradition meets creativity, making it a must-visit for those seeking a more authentic local experience.

Nafplio, Greece, is home to a maze of charming Old Town alleys that wind through the heart of one of the country’s most picturesque cities. Old Town Alleys

Nafplio, Greece, is home to the Akronafplia Castle Ruins, the oldest fortress in the city, offering breathtaking views and a deep dive into Nafplio’s layered history. Akronafplia Castle Ruins

Portugal’s Vila Viçosa, located in the Alentejo region, is a charming town known for its rich royal history, elegant architecture, and marble heritage.
