One of the most important parts of one’s culture is surely its gastronomy. How better to know Dubrovnik then to follow the story of its development in the city tour while tasting the story as well. In the ancient republic the society was divided into three classes: commoners, citizens and noblemen. We will start the tour in the spirit of the 10th century, a commoner at the beginning. Located 2,800 m above sea level, Laguna del Inca is an emblematic point on the Inca Trail, a sacred site dedicated to Pachamama. A part of Portillo Valley, a very scenic mountain resort, its name comes from a local legend involving Inca royalty and a lost love.

This morning brunch immerses you in the culture of yerba mate, Argentina’s beloved herbal drink. Jointly hosted by Aby, a Buenos Aires chef, and Bertie, a sommelier, you will learn about mate’s history and how the drink has become ritualistic in contemporary culture. Taking place in a private tasting room in the heart of Palermo, you will prepare mate step by step and come to understand the differences between regional herbs. Mate, pronounced “MAH-tay,” is accompanied by a selection of sweet and savoury foods prepared by Aby to bring out the nuances of the herbs.

Not only is Aby a professional chef, she is also a passionate storyteller who thrives on sharing Argentine culture through food. This experience is brought to life through her narration, drawing on her experiences growing up in an Argentine household and anecdotes from life in Buenos Aires. We recommend eating only a light breakfast at your hotel on the morning of this experience.

During your stay in Buenos Aires, you’ll rarely spot a local without their trusty satchel of mate apparatus: a gourd, bombilla, and thermos of hot water. However, as this beloved herbal infusion is absent from cafés and restaurants, Aby and Bertie’s experience is a rare opportunity to sample this unique — and somewhat surprising — beverage in the company of local porteños. Furthermore, it is unusual to find a brunch option in Buenos Aires, with many locals saving their appetite for lunch.

Aby’s homemade pastries are curated to soften and highlight the flavours of the mate. Items vary but typically include chipá (cheesy yuca bread), pepas (cookies), medialunas de jamón y queso (grilled croissant with ham and cheese), queso y dulce (cheese and quince jelly), and seasonal fruit. Although mate is usually shared between friends, you will have your own mate gourd and bombilla to drink from. The brunch concludes with a mimosa or sparkling wine using Argentine ingredients.

Bertie, an English Sommelier, and Aby, an Argentine chef, are a Buenos Aires-based couple dedicated to sharing food, wine, and excellent company. Aby has been cooking traditional Argentine food since she was a child — helping at family gatherings — and Bertie has worked as a professional sommelier since 2008. 

The couple met by chance in Rio de Janeiro in 2014. What began as conversations about flavors and cultures soon grew into a partnership rooted in curiosity and hospitality. The host, Şeyma Çınar, is a master artist specializing in miniature art, Tezhip (Islamic illumination), and floral designs since 1998. With formal certification from Turkey’s Ministry of Culture and Tourism, she has dedicated over 25 years to studying and teaching the intricate techniques of Ottoman miniature painting. Having participated in multiple exhibitions and published work on Islamic art, she brings both technical expertise and cultural depth to the workshop, ensuring participants leave with a rich understanding of this ancient craft. She will be accompanied by a translator, allowing everyone to fully engage with her insights and expertise.

This experience takes you through the North side of Cappadocia covering the region’s most iconic sites. You’ll start at the Göreme National Park taking in the views of the surreal volcanic landscape where mammoths once roamed. Then enjoy a short walk among the fairy chimneys and the pigeon houses admiring the manmade wall paintings. After a traditional lunch, you’ll stop in Avanos, a town with a rich pottery-making tradition dating back to the Hittites, a civilization that settled in Turkey around 2000 BC. You’ll witness the artisans at work and sample regional wines before continuing towards the Imagination Valley (Devrent), where naturally sculpted rocks take on intriguing shapes that resemble animals and other figures. The day concludes at Paşabağ (Monks Valley), where hermits once carved their homes into giant fairy chimneys. You’ll board a restored topa, the flat-bottomed boat once used by lagoon fishermen, for a rare nighttime navigation through Chioggia’s canals. Gliding through the picturesque Canal Vena under the stone bridges and soft lamplight, you’ll see the historic center from the same low-water perspective only accessible by this type of boat that locals have long experienced as they move between homes, docks, and markets.

As the boat moves into the open lagoon, the lights of Sottomarina shimmer on the horizon. The sky darkens, the water mirrors the moon, and familiar places take on a different shape at night. Long-eared owls and little owls call from rooftops and trees, while night herons skim silently over the water, hunting in the dark. Damiano, your guide and a lifelong resident, shapes the journey with personal stories — pointing out corners you’d miss in daylight.

This after-dark outing is a rare chance to witness the southern Venetian Lagoon as locals do, from the water at night. Chioggia’s rhythms are still tied to the lagoon’s working culture: fishing boats returning late (Chioggia is Italy’s second-largest fishing port), lamps swinging on piers, owls calling overhead. Even with Venice only an hour away by water taxi, this place feels distant from mass tourism.

The topa itself carries history; its low draft lets you slip into corners and canals most boats bypass. Because the boat sits low, reflections feel near, and the shoreline reads differently. My night ends at a peña (music/social club) where local musicians perform songs and the audience sings and dances along.

There’s the chacarera, a lively partner dance with much stomping. During zamba, couples circle each other, waving white handkerchiefs. Finally in the cherished malambo, a male gaucho performs his best steps to show off his strength and boldness to upstage other competitors. Then the dancers go around the room looking for partners from among the audience, and it’s fascinating to see the eagerness of the crowd to join in.

There’s a lot of Fernet-and-Coke - or the local Torrontés - on the tables to go along, and soon everyone is singing to the chorus. Their spirit is infectious.
