Take your Japanese culinary experience to the next level in this workshop that allows you to participate in the preparation of a three-course, home-cooked meal. Far from the elaborate kaiseki meals that can be prepared only by chefs who have spent years honing their skills, Mami, a local chef and pâtissier, guides you in creating a simple yet heartfelt meal that you can learn to prepare in your own home using local, seasonal ingredients. The dishes include a vegetable dish, a fish dish, and a sushi; the actual ingredients will change with the seasons.

Set in a stylish century-old liquor shop, you’ll also enjoy several types of Japanese sake that will be paired with each course. As the entire experience is conducted only in Japanese, your host Eric, using his own background as a Kyoto-based chef, will explain the details throughout your time here. Along the way, you’ll gain insight into the traditional Japanese approach to food, built on harmony, seasonality and visual presentation. 

This experience offers rare insight into everyday Kyoto cuisine. Chef Mami walks you through each step of a seasonal three-course meal, explaining how the average Kyoto resident selects ingredients, balances flavors, and adapts to what’s available. A Meal that Touches the Heart

In this hands-on experience, you will learn to prepare three Japanese dishes. 

After choosing your welcome drink. Chef Mami will give a short talk on Japanese home cooking. 

The first dish will be a vegetable appetizer, usually a boiled or tossed dish. The second dish will involve fish, while the last will be a sushi dish (tenmari or maki). These are all classic home cooked dishes in Japan.

Born in the late 19th century as housing for railway workers and artisans employed in nearby factories, tram depots, and waste facilities, the neighborhood soon became a backdrop for Italian neorealist cinema.

You'll meet Irene in Via del Pigneto 22, Rome

Irene Ranaldi is an urban sociologist and independent researcher based in Rome. She was the first in Italy to publish a study on gentrification comparing her own neighborhood, Testaccio, with Astoria in New York. Her work draws from historical archives and years of field research, focusing on the social transformations of urban districts and the shifting boundaries between city centers and peripheries.

Master calligrapher Eri Koyama takes you on a journey toward peace and contentment with a simple brush and ink. This private experience begins in a peaceful Kyoto temple where she explains the cultural significance of shodo, Japanese calligraphy, and how it has been used as both a form of art and meditation over the centuries. Rooted in Zen philosophy, shodo invites stillness, focus, and a deep connection between mind and body.

Next, Eri explains the tools used in Japanese calligraphy, and you'll learn to make your own ink from an inkstone. After introducing the different writing styles, she’ll guide you in practicing the foundational strokes used in each.

After a short tea break, you'll choose a favorite Japanese character or word — something meaningful to you — which you'll practice, refining your technique under Eri’s expert instruction. At the end of the workshop, you’ll produce a finished work on handmade paper, a keepsake to display and reflect on long after your return home.

Join photographer Lee Chapman to explore Tokyo beyond the glitz, where normal Tokyoites live normal lives. Free of tourist-focused attractions, these cities within the city hold their own charm and personalities often linked to their historical origins from over a century ago.

Lee will take you through three or four distinctly different neighborhoods of Western Tokyo, depending on your pace and stamina. In each neighborhood, he'll take you to some hidden highlights and instruct you on how to capture some fleeting moments in these ever-changing environments.

She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

As you enter the Palazzo Ducale in Venice, and wander through its halls and chambers, know that you're walking in the footsteps of Doges and councilors who shaped the destiny of the Serenissima Republic. The palace stands proudly as a symbol of Venice's glorious past: Gothic grandeur meets Renaissance elegance. Key highlights:

1: The palace has opulent façades adorned with intricate carvings, statues, and frescoes. Originally a 9th-century structure, the palace underwent numerous renovations, especially under Doge Francesco Foscari in the 15th century, reflecting Gothic and Renaissance influences.

2: Inside, the Hall of the Great Council, built between 1340 and 1355, impresses with its size and harmonious proportions. Church of St. Euphemia

Patagonia – the land where the earth ends – must be one of the most unique places to visit in this world. I definitely felt this way, when I visited the glaciers, mountains, and rivers around. It’s a stunning place, and even though it’s quite hard to get there, the whole trip is completely worthwhile.

Patagonian hares, hawks, red foxes, geese, black-necked swans, flamingos, woodpeckers, skunks, pumas, condors, and the near extinct huemul deer – this place is for nature lovers. We’ve spent 1 month in Patagonia, exploring the fauna and flora, zipping warm chocolate next to the chimney of our bed and breakfast, and breathing the fresh air.

Save packing lightly for another trip – visiting the snowy landscape in Southern Argentina, you want to come as prepared as possible. Scarves, gloves, a winter jacket, boots, and lots of exchange clothes are a must.

Visit a rare phenomenon

Winding through the High Atlas Mountains, Tizi n’Tichka Pass is one of Morocco’s most spectacular mountain roads, reaching an altitude of 2,260 meters (7,415 feet). Connecting Marrakech to Ouarzazate, this legendary route offers breathtaking panoramic views, dramatic switchbacks, and ever-changing landscapes, from lush valleys to rugged peaks. Whether you’re driving yourself or on a guided tour, the pass is an unforgettable part of any journey through southern Morocco.

Catalonia, Spain, is home to the breathtaking Vall de Núria, a stunning valley nestled in the Pyrenees Mountains at an altitude of 2,000 meters (6,560 feet). Accessible only by a scenic rack railway or hiking trails, this serene destination offers spectacular views, pristine lakes, and a peaceful retreat for nature lovers and adventure seekers. Known for its shrine to the Virgin of Núria, this valley is a pilgrimage site as well as a hub for outdoor activities, including hiking, skiing, and horseback riding.

Portugal’s Rota Vicentina is a spectacular network of coastal and inland hiking trails along the rugged southwestern coastline of the Alentejo and Algarve regions. Stretching for over 750 km (466 miles), these well-marked trails pass through stunning cliffs, wild beaches, rolling sand dunes, and charming fishing villages, making it one of Europe’s most breathtaking long-distance walking routes. The Rota Vicentina is divided into two main paths: the Fishermen’s Trail, which hugs the dramatic coastline, and the Historical Way, which winds through cork forests, rural farmland, and traditional villages.
