The first stop is a tour and tasting at a traditional winery carefully selected by Julieta. This winery is a small-scale affair and remains in the hands of the original family. You will enjoy a personalized tour joint-hosted by Julieta and a wine expert from the estate, learning about the production methods and hearing about how the oenologists blend their latest releases. 

The second stop is an independent olive oil producer, where you’ll tour the facilities and learn how cold-pressed oils are made. This includes a tasting with freshly-baked bread and local seasonings before sitting down to enjoy a light lunch fashioned from seasonal and local ingredients.

This workshop offers a first-hand experience of all the steps involved in the creation of the emblematic tapas of Spain. You’ll see the journey of creating a selection of tapas from market to the table. You will prepare the tapas under the guidance of the chef, who will explain the geographical origin of each dish, and share interesting facts and creative possibilities for their preparation. The hands-on experience is a crucial element. Following the preparation, there's the joy of tasting the creations, paired with traditional Spanish wines. You will stroll through neighborhoods featuring temples, shrines, parks, and rustic buildings in search of inspiration, but at a gentle pace that allows you to see authentic life in Kyoto that you might miss by trying to maximize the number of highlights you can visit in one day. In fact, Rachel lets you set the pace for the day, whether you prefer to visit more locations to do some quick sketches or just a few doing in-depth sketching.

As you explore, Rachel will explain the rich history and culture about the places you will visit, paying close attention to the details and nuances a casual visitor might overlook. During your walk, you'll have time to enjoy a snack featuring a local Kyoto specialty, and of course, a tea to go along with it.

Drawing from her experience as a long-time resident artist of Kyoto, Rachel has selected an area with a variety of sketchable locations that are completely customizable based on seasons, weather, and your skills and interests. Whether it be the majestic Gion Weeping Cherry Tree in the Spring, stone-lined streets of Nene-no-Michi in Autumn, or a snow-dusted Yasaka Pagoda in the Winter, Rachel’s helpful instructions will have you creating a unique watercolor keepsake of your memories of Kyoto. Her watercolor paintings of Kyoto have been featured in the Kyoto Journal and her sumi-e paintings displayed in the Nippon Suibokuga Art Association's annual shows.

An experienced educator, she has offered on-site sketching and painting classes in Kyoto for over 7 years, working with a full range of ages and experience levels. Her instruction style is personalized and supportive, aimed at giving participants both the practical skills and confidence to continue creating art of their own.

Gianmario Pedroni is a photographer and a Sardinian choir member. After honing his skills in England, he specialized in advertising, fashion, and design, working with prominent photographers and brands. In 2009, he returned to Sardinia to establish his studio, where he captures the region’s breathtaking landscapes and vibrant culture while actively participating in local traditions as a member of a traditional choir.

Portugal

In a 3.5-hour tour in Alfama and Mouraria — two of Lisbon’s oldest areas, among the few spared by the 1755 quake — you walk through the urban layers of the city’s origins before Portugal existed as a kingdom. You start at the Roman Theatre, viewing the ruins at street level. Then you move through cobbled streets, hills, alleys, courtyards — shaped by medieval and pre-medieval planning — to experience the city’s history.

You see how Phoenician traces fade into Roman foundations, then Visigoths, Muslim urbanism, Jewish quarters, and Christian rule. Mouraria was named for the Moors and holds the memory of coexistence and marginalization. You climb to viewpoints, slip around key structures, and pause for coffee and pastry. The walk ends near Santo Domingos Square, where the medieval tangle of Alfama and Mouraria meets the rational grid of Baixa’s post-quake planning. Catastrophe and belief have continuously shaped Lisbon, the old lines still stubbornly guiding the city today.

Most Lisbon tours focus on monuments. Tiago threads the city’s civilizational layers in sequence — pagan, Jewish, Muslim, Christian — across nearly 3,000 years, showing how each built into the other and how later powers tried to tidy the record. In Mouraria and Alfama, you see what survives, what was reused, and what was erased: the medieval removal of Muslims and Jews, the 12th-century birth of the Portuguese kingdom, traces of the Moorish castle that once governed the hilltop, and the site of the former Inquisition. Then comes the hard cut of the 1755 earthquake.

You step from the organic, irregular medieval maze into Baixa’s post-quake planned grid and feel how disaster redrew a city. Walking from one into the other allows you to feel the shift rather than simply learn about it. Tiago’s visual materials and storytelling give you the ability to imagine, and his expert narratives help you spot details that are easy to miss as Lisbon continues to shift under tourism and redevelopment.

This is an exhilarating and demanding ascent to the Toubkal Refuge, starting from the village of Imlil. This demanding trek spans a total climb of 2500 meters (8,202 feet) to 3207 meters (10,522 feet) at the refuge, suitable for those with good fitness levels but does not require technical climbing skills. 

The trek passes the spiritual landmark of Sidi Chamarouch, a Muslim pilgrimage spot located in a very scenic place, before the steep climb to the refuge, set just below the summit of Mount Toubkal. Here, trekkers can enjoy a well-earned picnic lunch while taking in panoramic views of the surrounding High Atlas Mountains. 

This trek offers a challenging yet rewarding experience, providing both a sense of accomplishment and spectacular scenic beauty. This full-day trek typically taking about 8 hours. However, the pace depends on your comfort, and Ahmed's team will ensure the group moves at a speed that suits you.

There is no clear structure for their activity, and the women seem to be on their own schedule - some leave after a couple of dances, others hang around. Besides their traditional costume, what is common among them is their energy and zest for life.
