This immersive, sensorial experience spans two half-days, honoring the ancestral craft of sourdough bread-making. Inspired by the ancient Greek myths of goddess Demeter and her daughter Persephone, it combines bread-making, storytelling and mindful rituals that honor the sacred grain of wheat.

On the first half-day, you’ll learn about the ancestral art of sourdough breadmaking, delving into the significance of wheat in ancient Greece and its connection to Demeter. Through a mindful practice, you’ll prepare the dough, engaging with the wheat, your senses and the land of Athens. The bread is left to ferment overnight.

On the second half-day, you’ll bake the bread and share it in a ritual of togetherness. Paired with curated seasonal local foods, this mindful eating ritual fosters community and gratitude. This transformative workshop combines hands-on learning with cultural, mythological and spiritual elements, offering practical baking skills and a deep connection to ancient tradition.

Demeter taught mortals the art of bread-making. In this ancestral sourdough bread-making workshop, we’ll revisit ancient bread-making traditions and the types of bread the Ancient Greeks created. We’ll connect with our bodies, the ancient land of Athens, and the wheat itself.

Through hands-on learning, you’ll physically engage with ancestral methods of bread-making, deepening your connection to the craft and the stories behind it. The workshop also nurtures mindfulness in eating habits and respect for ingredients, transforming the approach to food in everyday life.

The Acropolis of Athens is more than the ruins we see today—it’s a palimpsest of history shaped by Byzantines, Franks, Ottomans, and modern Greeks. Yet much of this past has been erased.

While exploring the Parthenon, the Erechtheion and all the other standing monuments, you’ll also uncover what no longer stands: the Frankish Tower, the Ottoman village, the mosque and other lost fortifications. These structures weren’t just casualties of time; they were deliberately removed to align with a national narrative shaped after the modern state’s foundation.

From November through April, this experience plunges you into Catalonia’s artichoke season. A 30-minute private transfer (20 km) from Barcelona brings you to a farmhouse nestled in the fertile Llobregat Delta — a region where artichokes dominate 25 % of cultivated land. On arrival, you’ll walk among squat, glossy-leafed plants and harvest plump artichoke buds — grown in mineral-rich delta soil and kissed by sea breezes — with their peak sweetness emerging in winter’s cool days. You’ll hear how delta silt and Mediterranean humidity coax their dense, nutty flavor.

This is a 4.5-hour walking tour that showcases Milan's enduring artistic heritage. The tour begins with a visit to the stunningly preserved and often overlooked Ca' Granda, originally a major hospital and now home to Milan’s University. Commissioned by Duke Francesco Sforza in 1456 and designed by architect Filarete, its avant-garde design became a model for European hospitals. Hosted in his intimate restaurant, Chef Toshihiko Yamamoto will explain the history and importance of dashi in Japanese cooking while together, you prepare a fresh batch of dashi to use for an exquisite meal. You will shave the dried bonito into flakes and boil it with kombu kelp into a broth rich with umami flavor.

Next, Chef Yamamoto will prepare a special meal with a little help from you, creating Western-Japanese fusion dishes to show how easily dashi can be used as an ingredient to your own style of cuisine. As he prepares the meal, feel free to ask questions or take photos and video of the process. After the meal, the chef will prepare a bowl of matcha in the style of Omotesenke tea cermony, the perfect way to wrap up this unique experience.

With nearly a decade's experience working for a dashi company and years as a chef specializing in Italian cuisine, Chef Yamamoto brings a new perspective to the use of Japanese dashi in cuisine from other parts of the world. Rather than focusing solely on traditional Japanese dishes, he will show you how dashi can be used to creatively season other dishes, from wagyu beef to fried cheese.

This interactive experience allows you to participate in the dashi making process while getting a close-up view of a Japanese chef preparing a special private meal in his own restaurant.
