This is a 3-hour cooking experience at the Amal Women’s Cooperative Center, founded by the remarkable Nora Fitzgerald Belahcen. Rooted in empowerment and inclusion, the experience offers a hands-on introduction to Moroccan cuisine while celebrating the social impact of food.

You’ll begin with a short introduction to Amal’s mission—supporting women from vulnerable backgrounds by training them in the culinary arts. From there, you’ll dive into Moroccan cooking: exploring local spices, learning the stories of each dish, and preparing a traditional feast with fresh, seasonal ingredients. Some recipes are cooked over charcoal, using bellows to control the flame—an immersive detail that reflects Morocco’s culinary heritage.

As your dishes simmer, you'll enjoy a traditional tea paired with homemade cookies. The experience ends with a shared meal; you’ll gather to taste what you've created and connect with members of the Amal team, learning more about their lives, resilience and work.

Unlike many cooking classes in Marrakesh, this experience is private, intimate and timed for an early dinner, featuring a selection of thoughtfully curated dishes to prepare and enjoy. It’s also intentionally designed to support a social mission: a portion of your fee goes directly to Amal Center, a nonprofit that provides training and job opportunities for women from vulnerable backgrounds.

Amal is more than a cooking school—it’s a space of transformation, offering hope and vocational skills to women rebuilding their lives. Under the guidance of the team Nora has created and trained, you’ll learn to make Moroccan classics like tajine, couscous or pastilla—while gaining insight into the flavors, techniques, and cultural meaning behind each dish. We start by learning the different spices that go into Moroccan cuisine.
Then we get to work! After we do the basic prep of our dishes, we put them on charcoal to cook and use the bellows to make sure the fire is hot.

This experience was created by Nora Fitzgerald Belahcen, founder of the Amal Center—a nonprofit dedicated to empowering women through culinary training and job placement. The session is led by the on-site manager and supported by members of Amal’s original team of chefs—women who helped shape the center and now lead with warmth, confidence, and skill.

You’ll be guided by a small, welcoming team trained in the spirit of Amal’s mission: to use food not only as craft and culture, but as a path to opportunity and connection. Mexico

This expert-led historical tour is an enriching experience and the perfect deep dive into pre-Columbian Mexico, a culture that remains alive today.

The Nahua are one of the most prominent and impactful indigenous groups in Mesoamerica. Nahua culture is diverse, stretching across civilizations such as the Mexica (Aztecs) and Tlaxcalteca, among others.

To explore this heritage, we’ll begin at the Cuicuilco archaeological site, a thriving city between 350 and 150 CE before it was engulfed by lava from the Xitle volcano. Here, you’ll gain an understanding of Mexica archaeology and culture.

Moving downtown, you’ll dive into an introductory Náhuatl language class. This will also give you an opportunity to learn more about the Nahua people's ritual calendars, deities, and how these cultural elements supported the functioning of one of the most fascinating ancient civilizations during its peak between 1345 and 1521.

This experience offers an authentic connection to ancient Mesoamerican cultures through two immersive cycles. At Cuicuilco, one of Mexico’s earliest urban centers, travelers will walk through history, exploring its ruins while uncovering the dramatic impact of the Xitle volcano’s eruption—a pivotal event that reshaped the region’s civilization.

The Tlacuilocan School of Náhuatl is a language and culture dissemination project headed by Mexican linguist Octavio Alonso González. It is dedicated to the conservation and promotion of Nahua heritage. Its staff is excited to welcome travelers who want to be part of this wonderful experience.

This hands-on experience invites you to learn the art of traditional basket weaving from a fifth-generation artisan in his home workshop. You'll learn about the origins of his creative practice and make your own piece to take home, with his expert guidance throughout the process.

Basketry was one of the earliest crafts in Mesoamerica, predating the domestication of crops and handmade ceramics. Because this practice uses biodegradable materials, few historical remnants remain—so its history lives on through family traditions and storytelling. By learning about the skill, time, and dedication involved in creating these baskets, you'll help support local artisans through both financial investment and cultural preservation.

Your basket-making workshop will last roughly two hours. Afterward, you’ll continue the carrizo theme with a meal at a restaurant that serves Oaxacan tlayudas on handwoven carrizo plates.

These artisans are living examples of the role storytelling plays in preserving ancestral artistry. While basketry declined with the introduction of plastic, it still holds an essential place in the rural economy. Through intimate conversations with these makers, you'll gain insight into the cultural importance of carrizo baskets and what they mean to their young family.

These pieces are crafted from an invasive river reed that was once plentiful and easy to access. But with climate change extending the dry months, access is now limited during certain times of the year. You'll learn how this shift directly impacts both the basketry and the livelihoods of those who, like generations before them, depend on this tradition.

You’ll come away with a deeper understanding of the patience and skill this craft requires. A carrizo basket will no longer be just an object—it will represent family connection, resilience, and ongoing adaptation in changing times.

Ehren Seeland is a Oaxaca-based creative with a background in art and design and journalism, who travels the globe for professional and personal pursuits. A long-term resident of Oaxaca with family ties to the city, her passion for regional produce, traditional skills, and social impact makes her a fantastic host for the culturally curious and socially minded traveler.

Through all of her projects—including Hecho, a marketplace of artisan-made goods from natural materials—Ehren maintains an active focus on supporting Mexican ancestral traditions through handmade product development, including textiles, pottery, homewares, and other works. Her projects also place special emphasis on supporting women and indigenous communities.

There’s no fixed route. Instead, you’ll receive creative missions that transform wandering into play. Your guide spent 14 years teaching language and working as a translator in the U.S. Now back in his pueblo, he shares the importance of language preservation and the deep connection Oaxacans have to family, food, and land. With him, you’ll visit the church, walk through the family’s organic garden, and share a meal. They started their farm as a family project during the pandemic, and they work their land as three generations. As he is a professor during the week, this experience is only available on Sundays.

A short guided hike of roughly two hours will take you to a series of caves featuring rustic paintings and traces of human habitation dating back over 10,000 years. They depict the early domestication period of the Zapotec people, when their ancestors first settled here as hunter-gatherers. These caverns are part of a larger network of over 200 caves in Yagul, where the earliest remnants of domesticated corn—a tiny and now obsolete variety known as teocintle—were discovered. This entire area was designated a UNESCO World Heritage Site in 2010.

As these caves are protected and the town operates under Indigenous law, it’s required that we travel with a local guide provided by the pueblo’s government office.

After the hike, we’ll continue the corn theme with lunch at a local restaurant, sampling one of the most iconic corn-based dishes in Oaxaca: the tlayuda. We’ll share a variety of styles, along with a refreshing non-alcoholic agua fresca.

This hike is a chance to appreciate the splendor of the Oaxacan countryside and gain insight into the earliest Zapotec people who settled in this land. Your host, a long-time Oaxaca resident with strong connections to this community, will arrange the hike with a guide from the local government office to ensure the experience complies with Indigenous law for this protected area. Chile

This adventurous hike is a 5km (3 mile) circuit (moderate difficulty) in the canyons of Atacama Desert's Salt Mountain Range (Cordillera de la Sal). A 50-minute drive delivers you amid this wilderness area beyond highly-trafficked Moon Valley. While the scenery is comparable with those Martian landscapes, this trek sits off the radar and cultivates a deeper connection with this remote region in northern Chile. Guided by Valeria, a naturalist and conservationist, you'll be urged to absorb the stunning nature and geology—and study 1000-year-old petroglyphs.
 
Bear in mind this excursion is suitable only for those with a decent level of fitness and physical mobility. The route involves one steep descent with loose terrain, a few river crossings, and wading through the cold-water river in the slot canyon. Hiking in the world's driest non-polar desert at a 2,500 m.a.s.l. is no walk in the park! It is, however, the quest of a lifetime—and it's made all the better when you have a local naturalist handling the route, keeping you safe, and sharing intricate information about the ecosystem and its communities. Along the course of this moderate hike, Valeria will pause to educate you on the slot canyon and share insight on the region's wildlife—you may even encounter native and migratory birds.

After taking in the Andes and the dunes of the Salt Mountain Range from afar, you'll descend into the canyon and let the Rio Grande guide the way. This eventually turns into a stunning slot canyon which you'll pass by wading through the river (depth ranges from ankle to hips level)—it's the perfect antidote to those scorching summer temperatures. After meeting the salty confluence of the Rio Grande and Rio Salado, you'll gaze upon petroglyphs carved by Indigenous people around 1000 years ago.

Samuél Lopez-Barrantes is a novelist and musician with an MFA in Creative Writing (dissertation: History Is Dead, Long Live History! Postmodernism and Historiographic Metafiction) and an MA in Holocaust Studies (dissertation: The Humanness of Cruelty: Viktor Frankl, Alfred Adler, and the Psychology of Genocide).

He taught creative writing at the Sorbonne for five years before focusing on writing and leading historical walks on modernism, existentialism, and the Nazi Occupation of Paris. His first novel, Slim and the Beast, shares its name with his indie rock band, which has played extensively across Europe. His second novel, The Requisitions, is a work of historical metafiction set in Nazi-occupied Poland.

 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”

The Pinnacles are amazing natural limestone structures, formed approximately 25,000 to 30,000 years ago after the sea receded and left deposits of sea shells. Over time, coastal winds removed the surrounding sand, leaving the pillars exposed to the elements. The Pinnacles range in height and dimension - some stand as high as 3.5m!
