Japan

Step inside a working Buddhist temple in Osaka and spend several hours following the rhythms of a monk’s day. You’ll meet your hosts - a practicing monk who also works as an architect, and Zane, who has spent ten years in Japan studying religious and cultural traditions. Then you’ll change into the traditional robes of a monk and begin a series of mindful rituals.

First, a guided meditation and the practice of shakyo: hand-copying sutras in the form of kanji characters using brush and ink. This is a daily ritual for monks, intended to steady the mind before service. Outside, you’ll assist in sweeping the temple grounds - a brief, meaningful act of service and discipline.

Midday, you’ll share a shojin ryori meal: a simple, seasonal vegetarian lunch prepared in the Buddhist tradition. Zane provides translation, insights and context throughout.

At the end of the day, you’ll receive either a goshuin (temple stamp) or omamori (amulet)—a small marker of your day as a monk in Osaka.

Most introductions to monastic life in Japan take place in rural retreats. This temple is an active religious site in the grid of central Osaka. You’ll speak with the monks about their lives, explore the overlaps and tensions between secular and spiritual paths, and observe how Buddhist tradition is preserved and adapted in a modern context.

The monk who leads the experience also works as an architect. His approach integrates design with ritual. His wife prepares the mid-day meal using principles of shojin ryori passed down through temple tradition. Zane, who has spent a decade in Japan, helps translate both language and context, offering interpretation that clarifies without interrupting the cadence of the day.

At first glance, a peka seems like such a simple accessory – a domed lid shaped like a dome. Food cooked under peka, be it in a fireproof pot under the coals or directly on a stone slab, is a hearty meat and vegetable dish. Usually veal, lamb, or yearling beef covered with potatoes and other vegetables. Learn how the olives and oils are produced, enjoy tastings and peka lunch.

This dinner and drinking experience takes place in Shinjuku, the heart of Tokyo's dining and drinking districts. You'll start your experience at a tiny, 8-seat yakitori shop that is only open for a few hours each night. Established by a husband and wife team nearly 40 years ago, the wife took over running the shop on her own when her husband's health declined several years ago. A long established clientele and 6 consecutive appearances on the annual Top 100 yakitori shops in Tokyo keeps the shop full nearly every night, but also makes it difficult for newcomers to join in.

Your host Aya is a long-time customer of the shop who will introduce you to the owner and customers alike as you enjoy a full course yakitori meal, drinks, and friendly interaction with the regulars. The shop closes at 9:00pm, at which point you and the remaining regular customers help shut down the shop before heading to the nearby Golden Gai area to enjoy a few rounds of drinks and lively conversation.

This full-day bird watching excursion is led by a naturalist guide and conservationist who surveys the local population of avifauna and knows all the best spots to encounter resident and migratory species. After leaving San Pedro, you first drive south towards Jere Canyon (Quebrada de Jere) where tamarugo conebills, oasis hummingbirds, white-winged doves, and plain-mantled tit-spinetails dwell. There are brief stops along the way in oases frequented by birds. The morning concludes at the Atacama Salt Flat's Chaxa Lagoon, where you will encounter three of the world's six flamingo species.

Upon return to San Pedro, you'll enjoy a relaxed lunch with Valeria in a local restaurant before driving north to highland canyons and wetlands. When asked about his love for Lisbon, Tiago’s enthusiasm is immediate: “I love my city! I really love the historic center of Lisbon!” Though he didn’t always feel that way. Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

A visit to Fogo Island is all about the power of culture, art and community as catalysts for social and economic change. It’s a story of the indomitable spirit of people who refuse to give up their land.

First Impressions?  Minimalist winter scenery, it’s 🧊 season, one of Fogo Island’s seven  seasons. There are wooden Saltbox Houses, that must have leaped out of a child’s painting book. Reminders of fishing are everywhere. 

My favorite part of the trip is spending time with the islanders who do community orientations and cabin outings for visitors. These are people who are proud of their Irish or English heritage (seven or eight generations in Fogo Island notwithstanding) — who sing songs and tell stories of their ancestors, invite strangers into their homes to share salted cod and tea, take you on ski-doo for ice-fishing, teach you to forage for berries and show you how to preserve vegetables in mason jars to last through winter.

Far Away From Far Away

If you want to explore Spain on foot, you should definitely set out on one of the pilgrimage routes through the country. All routes lead to the Cathedral of Santiago de Compostela in Galicia, which is located in the northwest. As a UNESCO World Heritage Site, the Camino de Santiago has been named a central point of cultural exchange – and a historical highlight that shows what medieval Spain looked like. We chose to follow the famous Camino Frances. The original 800km route takes 5 weeks, but we decided to get in a little later, we only had 11 days, and opted for the route starting in the Galician town of Sarria. Along the way, you'll meet many other tourist pilgrims, but you'll also be able to immerse yourself in the local culture and taste Spain's best delicacies (tapas, seafood, and Spanish Serrano ham). Be prepared for a lot of walking – and take the best walking boots you have. We’ve enjoyed every minute, but some people we met had the wrong equipment, complaining about blisters.

The “French” pilgrimage route

Mexico

Mexico City, Mexico, is home to the Luis Barragán House & Studio (Casa Estudio Luis Barragán), a UNESCO World Heritage Site and a masterpiece of modernist architecture. Luis Barragán House & Studio

Nestled in the Atlas Mountains, Ouzoud Waterfalls is one of Morocco’s most breathtaking natural wonders. Plunging over 100 meters into a lush canyon, these multi-tiered falls create a stunning contrast between the red rock cliffs, green olive groves, and the misty waters below. The best time to visit is spring (March–May) or autumn (September–November) when the waterfalls are at their most impressive. Wearing sturdy shoes is recommended for the hike to the base. Arriving early in the morning helps avoid crowds, especially on weekends. Bringing small change is useful for tipping guides or purchasing local goods.

Gondola rides typically cost around 90 euros during the day and 110 euros at night, accommodating up to 5 people. Book in advance to avoid long queues and to secure a preferred time slot.

The Dalí Museum in Figueres is a surrealist masterpiece dedicated to the life and works of Salvador Dalí. Designed by the artist himself, it is as much a work of art as the exhibits it contains, making it a must-visit for art and culture enthusiasts.

Dalí Museum in Figueres

Shibuya Crossing, or Shibuya Scramble Crossing, is a popular scramble crossing in Shibuya, Tokyo, Japan.[1] It is located in front of the Shibuya Station Hachikō exit and stops vehicles in all directions to allow pedestrians to inundate the entire intersection. The statue of Hachikō, between the station and the intersection, is a common meeting place and almost always crowded.

Three large TV screens mounted on nearby buildings overlook the crossing, as well as many advertising signs. The Starbucks store overlooking the crossing is also one of the busiest in the world. Its heavy traffic and inundation of advertising have led to it being compared to the Times Square intersection in New York City and Piccadilly Circus intersection in London.

Jamaica

With 25+ years of crafting Jamaican traditional meals, Chef Chris gained fame when Anthony Bourdain showcased his skills on "Parts Unknown" in 2014. 

From the moment we stepped into the Cook Shop, all our senses were engaged. The local scenes, the staff busy with their preparation and the aromas from the kitchen. But it was Chris's warm welcome that made the experience truly unforgettable. We chopped, marinated, and grilled under his guidance, learning the art of his signature jerk chicken and curry goat. Then we gathered on his rooftop deck overlooking James Bond Beach in the distance – a lovely backdrop to our culinary adventure - to eat together. We savored the dishes we helped create, and Chef Chris even shared a packet of his secret curry powder for us to take home.

Dubrovnik, Croatia, is home to Mount Srđ, a scenic hill rising 412 meters (1,352 feet) above the city, offering panoramic views of Dubrovnik’s Old Town, the Adriatic Sea, and the Elaphiti Islands. A historically significant site, Mount Srđ played a crucial role during the Siege of Dubrovnik in the Croatian War of Independence and is now home to the Homeland War Museum.
