Take the 9:15am train from Madrid Atocha to Toledo station, where Adolfo will meet you. It takes 35 minutes and costs €14. You can pre-buy the train tickets from Renfe.com, or give yourself plenty of time to buy a ticket at Atocha.

Japan

Take your Japanese culinary experience to the next level in this workshop that allows you to participate in the preparation of a three-course, home-cooked meal. Far from the elaborate kaiseki meals that can be prepared only by chefs who have spent years honing their skills, Mami, a local chef and pâtissier, guides you in creating a simple yet heartfelt meal that you can learn to prepare in your own home using local, seasonal ingredients. The dishes include a vegetable dish, a fish dish, and a sushi; the actual ingredients will change with the seasons.

Set in a stylish century-old liquor shop, you’ll also enjoy several types of Japanese sake that will be paired with each course. As the entire experience is conducted only in Japanese, your host Eric, using his own background as a Kyoto-based chef, will explain the details throughout your time here. Along the way, you’ll gain insight into the traditional Japanese approach to food, built on harmony, seasonality and visual presentation. 

This experience offers rare insight into everyday Kyoto cuisine. Chef Mami walks you through each step of a seasonal three-course meal, explaining how the average Kyoto resident selects ingredients, balances flavors, and adapts to what’s available. You’ll gain an understanding of how Kyoto’s food culture reflects subtle shifts in season and regional sensibility.

In this hands-on experience, you will learn to prepare three Japanese dishes. 

After choosing your welcome drink. Chef Mami will give a short talk on Japanese home cooking. 

The first dish will be a vegetable appetizer, usually a boiled or tossed dish. The second dish will involve fish, while the last will be a sushi dish (tenmari or maki). These are all classic home cooked dishes in Japan.

Originally from Toronto, Canada, Eric has been living in Kyoto for over 22 years. Well connected with the art and culinary communities in Kyoto, he is eager to share this wonderful city with visitors.

Most travelers encounter tea or incense separately; this experience reveals the cultural dialogue between kōdō (the Way of Incense) and chadō (the Way of Tea). Food and aroma coordinator Ayumi Ikushima explains how incense prepares the space and the senses for tea — from room-scenting blends to the quiet focus required to “listen” to incense. You’ll not only make incense and taste tea, but compare, contrast, and map how fragrance and flavor work together in Kyoto’s hospitality.

Rakı is an iconic anise-flavored spirit in Turkey, and its consumption in a meyhane (a Turkish tavern) setting is always accompanied by a spread of delicious shareable plates, lively conversation, repeatable anecdotes, and a deep sense of camaraderie.

You’ll step into an unforgettable evening at a traditional, iconic meyhane in Istanbul where food, drink, and conversation lead to much more than a meal—it’s a celebration of life. Begin with a spread of hot and cold mezes, from creamy yogurt-based dips to tangy marinated seafood, paired perfectly with rakı. Chile

This is a full-day photography journey to the high Andean salt flats on the Chilean Altiplano. Located in the northeastern corner of the Atacama Desert near the border with Bolivia, Quepiaco, Quisquiro, and Tara are among the most visually striking and ecologically unique landscapes in the region. These salt flats—salars—sit at elevations between 4,000-4,500m (13,000-14,800 feet) above sea level and are part of the Los Flamencos National Reserve. Bounded by volcanoes and inhabited by flamingos and vicuñas, this is a remarkable setting for both landscape and wildlife photography.

At each salt flat, Mirko will explain the geological features of the wetlands and salt crusts, point out native wildlife, and provide practical instruction on how to photograph it. Because of the high elevation, this tour is best scheduled for your third day or later in San Pedro de Atacama, after you’ve had time to acclimatize.

This experience starts with a thrilling drive through the Martian landscapes of the Atacama Desert. This is a prime opportunity for quizzing Mirko about the region: it's natural history, its cultural legacy, and its wildlife. Salar de Quepiaco, Salar de Quisquiro, and Salar de Tara straddle the border between Chile, Bolivia, and Argentina. They provide a habitat for all three species of South American flamingos (Andean, Chilean, and James’s) as well as llamas, vicuñas, and Andean foxes. As part of the Andean Plateau (Altiplano), these salt flats hold cultural significance for Indigenous Atacameño communities. 

Mirko's experience contextualises the natural and cultural significance of the region. Rather than simply and shooting seeing the formations, you will feel the places visited—coming to understand how every element is intertwined. Primarily a photography expedition, the experience is focused on capturing landscape and wildlife photography under the guidance of a pro photographer.

Once a nameless patch between Via Prenestina and Via Casilina, Pigneto only began appearing on maps in the early 2000s, following a wave of street art, pedestrian renewal, and urban transformation. But its roots go back much further.

Born in the late 19th century as housing for railway workers and artisans employed in nearby factories, tram depots, and waste facilities, the neighborhood soon became a backdrop for Italian neorealist cinema.

Walking through its early workers’ blocks and the charming “villini” district—small villas built by a railway cooperative between 1921 and 1924—you’ll uncover traces of a layered past.

Gardens and Art Nouveau façades tell a different story from the one often associated with Pigneto today. Now a hub of nightlife and alternative culture, the neighborhood blends its working-class origins with a bohemian spirit. Along the way, a cappuccino and cornetto in a local café will offer a moment to take in the neighborhood’s everyday rhythm.

What sets this experience apart is the chance to explore Pigneto with Irene, a Phd Urban sociologist and researcher who has spent years studying the evolution of Rome’s urban fabric, with a special focus on the city’s first industrial settlements from the late 19th century.

Her deep knowledge offers a sharp lens through which to read the transformations of a neighborhood that, over the past decade, has become a symbol of regeneration and contradiction. In the heart of the historic centre, fearless riders gallop through the narrow stone-paved streets in a daring race known as Sa Carrela ‘e Nanti.

The highlight? A centuries-old ritual where horsemen aim to strike two cloth hens hanging along the route, blending athletic skill and ancient folklore. Massimiliano is a professional photographer, artist, and tour guide. After graduating at University Paris 8 in Photography, he began working as a photojournalist and lived in Tuscany and Paris before moving to Sardinia in 2011 with Eva.

This immersive, sensorial experience spans two half-days, honoring the ancestral craft of sourdough bread-making. Inspired by the ancient Greek myths of goddess Demeter and her daughter Persephone, it combines bread-making, storytelling and mindful rituals that honor the sacred grain of wheat.

On the first half-day, you’ll learn about the ancestral art of sourdough breadmaking, delving into the significance of wheat in ancient Greece and its connection to Demeter. Through a mindful practice, you’ll prepare the dough, engaging with the wheat, your senses and the land of Athens. The bread is left to ferment overnight.

On the second half-day, you’ll bake the bread and share it in a ritual of togetherness. Paired with curated seasonal local foods, this mindful eating ritual fosters community and gratitude. This transformative workshop combines hands-on learning with cultural, mythological and spiritual elements, offering practical baking skills and a deep connection to ancient tradition.

Demeter taught mortals the art of bread-making. In this ancestral sourdough bread-making workshop, we’ll revisit ancient bread-making traditions and the types of bread the Ancient Greeks created. We’ll connect with our bodies, the ancient land of Athens, and the wheat itself.

Through hands-on learning, you’ll physically engage with ancestral methods of bread-making, deepening your connection to the craft and the stories behind it. The workshop also nurtures mindfulness in eating habits and respect for ingredients, transforming the approach to food in everyday life.

Community is emphasized through collaborative learning. For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

Catania's fish market, known locally as "A Piscaria," is the heart of the city. It’s loud, it’s surprising, it’s humbling, it’s real. Colours, fragrances, and market place shouting.

A visit to Catania's fish market allows you to immerse yourself in the local culture, adding a unique and flavorful element to your Sicily travels.

The fish market comes to life in the early morning, around 5.30 a.m., when the fishmongers arrive. But from around 7.30 a.m., the market offers a more calm environment; it's easier to roam among the booths, and soak up the environment.
