You will shave the dried bonito into flakes and boil it with kombu kelp into a broth rich with umami flavor.

Next, Chef Yamamoto will prepare a special meal with a little help from you, creating Western-Japanese fusion dishes to show how easily dashi can be used as an ingredient to your own style of cuisine. As he prepares the meal, feel free to ask questions or take photos and video of the process. After the meal, the chef will prepare a bowl of matcha in the style of Omotesenke tea cermony, the perfect way to wrap up this unique experience.

With nearly a decade's experience working for a dashi company and years as a chef specializing in Italian cuisine, Chef Yamamoto brings a new perspective to the use of Japanese dashi in cuisine from other parts of the world. For João, the true essence of the Algarve lies in its sensory landscape and the stories attached to it.
“In my youth,” he recalls, “many people came here, to the Algarve, and my family—like many others—had small farms. I spent a lot of time working on these farms growing carob, figs, almonds, and olives.” These daily rituals shaped his relationship to the land. “Everybody knows the Algarve for its oranges,” he adds, 
remembering his family’s orchard. “I have good memories of my mother and my sister making lots of cakes—almond cakes, and sometimes orange cakes too.”

So I pick up my camera instead and wander through Boston’s most historic neighborhood to celebrate its annual Halloween tradition.

Royal Palace of Madrid

A road trip through Spain is literally the best option for those looking for a local, less touristic experience. You can basically rent a car anywhere you want – we started in Barcelona, heading down the coast, and taking stops in Ebro Delta and Denia and other sleepy beach towns down the road. One of our highlights was the Spanish town of Cartagena – a historical hub with beautiful angled roads, traditional culture to explore (expect to be invited to some Cerveza by the locals), and history lessons about Phoenician traders, Roman soldiers, and Christian Reconquistas. If you have some days left, visiting Andalusia is a must. It's by far the most beautiful region in Spain and is known for its majestic horse breed, pristine beaches, hot weather, and super friendly culture. 
All in all, it took us two weeks to get down the coast – but you can make it in a week as well – though you might have less time to explore, sunbathe, and learn about the history of Spain

Off-the-beaten-path

Essaouira, Morocco, is home to its bustling Port of Essaouira, a vibrant hub of the city’s maritime culture and a must-visit destination for food lovers and photographers. Famous for its bright blue fishing boats, the port offers an authentic glimpse into the city’s seafaring traditions, with fishermen hauling in fresh catches daily.
