This 3-hour cooking class teaches you how to make Argentine empanadas in the home of a local couple in Buenos Aires. Stuffed with meats, cheeses, vegetables, and more, these savory pastries are a beloved national symbol. Empanadas vary across Argentina, and you’ll want to ask Diego and Camila how the Buenos Aires style differs from those in provinces like Salta, Tucumán, or Córdoba.

There’s no more satisfying way to experience a place than by cooking and dining with locals who live it every day. This hands-on class invites you to don an apron and unleash your culinary creativity. You’ll learn how to prepare a “proper” empanada that would earn a nod from any Porteño (Buenos Aires local). Gerasimos, Tina, and Stelios live in a traditional Greek farmhouse, and they are passionate about sharing their love for authentic Greek culture, regional cuisine, and the timeless art of handmade soap-making, following an old family recipe.

On their farm, they cultivate a vegetable garden and an olive grove, from which they produce a delicious extra virgin olive oil that is one of the key ingredients in their handmade soap.

No prior skills are needed—just a desire to create something by hand and take home local stories and memories. From selecting textiles to stitching pages by hand with a needle and thread, you'll be guided through each step of this ancient craft. Gaia Putzolu is an artist and artisan specializing in illustration, printing, bookbinding, and calligraphy. She comes from a long line of Sardinian artisans and has inherited the legacy of her family's historic bookbinding and printing workshop, which has been a cornerstone of craftsmanship in Sardinia for over 50 years.

A passionate traveler, Gaia has explored Eastern Europe and the Maghreb solo since 2018, drawing inspiration from places like Georgia, Moldova, Ukraine, Azerbaijan, Romania, Serbia, Morocco, and beyond. Her journeys fuel her small brand of home decor, stationery, and accessories, all crafted entirely in Sardinia in collaboration with her family's workshop, blending tradition with artistic exploration.

As a culinary historian who has taught the history of Turkish cuisine at İstanbul Medipol University, Banu's deep knowledge and insights will guide you through the Grand Bazaar's hidden culinary delights, as she shares insights into the origins and cultural significance of each dish. With Banu, you'll taste a variety of traditional Turkish breakfast items but importantly, you’ll gain a profound understanding of their place in Turkey's rich culinary tapestry, making your experience both educational and delightful.

Portugal

Immerse yourself in the fragrant world of an aromatic and medicinal herbs farm nestled in the picturesque region of Alentejo, Portugal. This experience invites you to explore the sustainable practices of organic farming and gain insights into the use of Portuguese aromatic herbs. You'll witness the farm's commitment to biodiversity and regenerative agriculture, making it a haven not just for plants but for pollinators like bees. The farm is home to a century-old olive grove and more than 45 plant species, each with unique gastronomical and medicinal properties. 

Rute and João will teach you all about traditional harvesting and drying techniques, plucking herbs straight from the garden to smell, taste and make art with. After the farm tour, you’ll join a Cyanotype printmaking workshop (or similar activity in winter) allowing you to take home your own herbarium. Then sit down for a multi-course lunch based on traditional Alentejo recipes under a shady ash tree or in the cozy greenhouse.

The farm is located on the outskirts of Évora. You can drive there or hop on a taxi or Bolt. The ride takes about 10 minutes.

This experience is an immersion in the sustainable world of organic aromatic herb cultivation in the Alentejo. Here, each step, from planting to packaging, is infused with respect for biodiversity and environmental sustainability. 

You'll meet Rute and João, dedicated farmers, who combine traditional practices with innovative techniques to nurture the land and promote ecological balance. Learn to identify local herbs as you walk through the farm, understand their uses in cooking and medicine, and participate in a herbarium workshop using the Cyanotype method or another technique.

Then experience a homemade lunch based on traditional Alentejo recipes Rute has collected and reimagined. From starters to desserts, you’ll experience how herbs can reduce salt and sugar while enhancing aroma and flavor. It’s a chance to slow down, reconnect with nature, and experience the vital role herbs play in Alentejo’s cuisine, culture, and ecosystem.

The visit will begin by explaining the organic production method and the agricultural practices used in the farm. As visitors stroll by, they are invited to collect plants to smell and taste, whilst Rute talks about its medicinal properties and culinary uses. After touring the garden, we will visit the natural drying greenhouse, the plant processing room and finally the packaging and storage area. Then, the visitor will learn how to make a herbarium using the Cyanotype technique (or similar activity in winter). Afterwards, there will be a tasting in the middle of the field in a shady spot, of all the products produced on the farm. Fresh aromatic infusions, goat cheese from Alentejo with our endemic thyme (accompanied by our typical Alentejo bread), our honey, our Extra Virgin Olive Oil and our Penny royal or Lemon grass liqueurs.

Forty-five minutes from Palm Springs – or a slightly longer, two hours from Los Angeles - in California’s southernmost Joshua Tree National Park, I’m waiting at the Visitor Center to buy my park pass, and it’s clear that the most commonly asked question of the rangers in this Park is - “Why is it called a Joshua Tree?"

Turns out the giant, branching yucca’s shape reminded early Mormon settlers of a story in which the Prophet Joshua reaches his hands up to the sky. “A good Joshua Tree will be really thick, with arms sticking out like they’re wearing furry sleeves.” – From The Bulletin, in a 1987 article, 7 years before the trees got themselves their own National Park. 

No two Joshua Trees are alike – for that would be too boring. Instead, they defiantly withstand the desert conditions and stretch out in weird and wonderful ways.

Staying at the Inn at Death Valley, we thought we would be able to get up just before sunrise and make a dash over to Zabriskie Point. In hind sight, we should have woken up a good 60 minutes earlier, since the viewpoint was packed with people as we got there. 


The stunning views of the badlands slowly fill up with yellow, orange, purple and brown colors - and every hue in between - as the sun comes up, totally makes up for the early rise. Once the sun has finished painting the badlands, it reaches out to color in the Panamint Range across the valley with gorgeous pinks and purples. If you want to avoid the crowds, do the 2.5 mile Badlands Loop hike. Right after the walk, you can drive the short 3 mile Twenty Mule Team Canyon loop drive before returning to Stovepipe Wells for breakfast. 

We had been told that the Death Valley National Park is all about extremes - and the Zabriskie Point is a visual representation of that.

Pick out the must-see’s in the mini-circuit (Bayon, Angkor Wat and Ta Prohm in that order), then pick two temples in the grand-circuit (Preah Khan and Pre-Rup are my favorites), and one that requires a car (Banteay Srei or Beng Melea). 

Add some climbing at dawn - at Phnom Krom and Phnom Bakheng - as the sunrises here will sustain you for a whole year of waking up late.

Temples and Temples

Each evening, we wait for sunset to happen ... in fact the whole town stops whatever they are doing and gathers near the edges of the cliffs In Oia. 

It’s a ritual that we quickly make our own. We time our dinner, walks and activities so that we can get a prime seat to watch the performance. On the odd day that we miss it ... being on the wrong side of the caldera ... we feel we’ve missed a significant event in our day.
