After a relaxing time at the first venue, Eric will lead you to another of his favorite restaurants  to sample more seasonal dishes in another chic location, again paired with Japanese sake.

Throughout the evening, Eric shares fascinating and useful information about Kyoto cuisine which will add to your dining experience through your stay in the city. The seasonal menu changes around May/June and Oct/Nov; enjoy a completely different experience at least twice a year.

Tasting the Seasons of Kyoto

Visit two restaurants that specialize in seasonal Kyoto dishes. The second location may change depending on the season, but the tour will always begin at and include the modern izakaya Meshiya Ebisu.

He first came to Kyoto to complete his Master’s degree in Japanese Art History and now works as a teacher and translator. Since 2022, he has been running a monthly pop-up restaurant, serving Cantonese-inspired dishes. Well connected with the art and culinary communities in Kyoto, he is eager to share this wonderful city with visitors. 

Chile

This six-hour asado experience in Valparaíso is the most authentic Chilean barbecue experience you'll find in the Fifth Region. Not only is your host an expert guide born and raised in the seaport, but he is also an avid grill master. The experience starts with the purchase of ingredients from Juan Víctor’s local feria (market). You’ll pick up fresh herbs and vegetables while chatting to vendors and immersing yourself in the scents, textures, and sounds of the market. As no Chilean meal is complete without wine, you will also purchase some regional Carménère and Sauvignon Cabernet.

Once at Juan Víctor’s family home, you will prepare the asado using his self-built brick parrilla. This includes chopping aji (chili) and tomatoes for pebre (Chilean salsa), tending to the charcoal, or priming marraqueta (bread rolls) for the starter of choripan (chorizo sausages). The experience is delivered at an unhurried pace with emphasis on sharing stories and truly understanding the culture of asado.

Dining in Chile goes beyond what appears on the menu. Food is a cultural exchange — anything placed on the table is for sharing, no meal is hurried, and stories are the main course. As the pinnacle of Chilean food culture, the asado chileno is rooted in the idea of convivencia (togetherness) and Juan Víctor's intimate barbecue is a rare invitation to experience this for yourself in Valparaíso. Forget table service and being waited on — you will peruse local markets before making yourself at home in a private porteño residence, usually in the company of Juan Víctor's family and friends.

As the asador (grill master), Juan Víctor oversees the running of things and sees that every item is cooked to perfection. This historical walk maps Thessaloniki’s transformation from antiquity to the present day. It begins at the Trigoniou Tower on the northern wall, where sweeping views set the stage for an itinerary shaped by centuries of change. From there, the path along the Byzantine fortifications leads to the monastery of Vlatadon, tied to the memory of St Paul’s presence, before descending toward landmarks that reveal the city’s complex past.

The route descends to the small church of Osios David, where you step inside. It then continues past the Ottoman Alatza Imaret and reaches Saint Dimitrios, where you take time to explore its interior. You then walk toward the Roman forum before arriving at the Rotonda and its early Christian mosaics. Just before entering the Rotonda, you’ll stop for a coffee break.

Then the walk passes past the Arch of Galerius, the Navarinou ruins and goes toward the White Tower and the Statue of Alexander the Great.

Explore Cefalu

Yves Saint Laurent gifted Jardin Majorelle to Marrakech, the city that adopted him and his partner in the 60s. They bought an electric-blue villa and its garden, preserved the vision of its original owner (landscape painter Jacques Majorelle), and opened it to the public. 

What makes this feel like a psychedelic mirage in the desert?

Hot pink bougainvillea bursting from terracotta planters. Architectural cacti in lemon-yellow planters. Bamboos growing against cobalt-blue walls. Colorful birds flitting through palm trees. Saint Laurent’s gorgeous collection of Moroccan art, that I totally covet. 

It also has a museum that features jewelry in a setting that our guide Khadija keeps referring to as “a dream”. A dark room with a star-spangled ceiling and low voltage spotlights shining on stunning jewelry sets.
