In juxtaposition to the prim and proper atmosphere of traditional Kyoto are the Tachinomi, casual bars invented for the Japanese blue and white-collar crowds to let their hair down. Although historically popular in working-class areas of Osaka, tachinomi have more recently appeared around Kyoto, some with a twist of the local culture ingrained in their Osaka roots.

Your experience begins with your expert guide giving you a primer on the history and evolution of tachinomi standing bars in the Kansai area, as well as some tips on how to fit in with the locals. From there, he will take you to some of his favorite tachinomi, from rooftop cocktail bars to racous hole-in-the-wall establishments, introducing you to patrons, staff, and owners alike.

As Julieta will tell you, part of the fun is choosing together.

Once at Julieta's home, you will partake in Argentina’s most iconic gathering: the family asado. Previa comes first— where drinks, snacks, and conversation are shared as music plays. Together, you will prepare the meat, chop the veggies, and sip wine while the embers do their thing. And after that? Al Ramirez, a Porteño Sommelier, will accompany you for the entire day. The outing starts with a blind tasting of four wines at the first winery. Al will share his insights into Chilean wine heritage and culture, accrued through decades of experience working as a Sommelier. Testaccio is a historic district in central Rome, which naturally developed into the city’s first working-class neighborhood after Rome became Italy’s capital in 1871. This walk explores its layered history, from the former slaughterhouse—now a center for arts and innovation—to the Monte dei Cocci, an artificial hill from the 1st century CE made of broken oil amphorae unloaded at the nearby Emporio river port.

This itinerary reflects what Manila calls the “true essence of Catalonia” — a place of cultural pride, natural beauty, and distinct local identity. Manila first arrived in Barcelona more than two decades ago, while finishing her studies in Rome. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

Jamaica

1942: Errol Flynn popularised rafting down the river Rio Grande in Jamaica on bamboo rafts, made of long logs bound together. Fast forward: I'm on a raft for a 3-hour ride and sensory overload: ferns, birds, rapids, butterflies, serenading raft captain. But here’s my favorite part —

After an hour on the river, we dock at Belinda’s Riverside Restaurant, a rustic gem nestled by the Rio Grande. How does this place even exist in the middle of nowhere? Turns out Belinda and team hike a couple of hours across the hills, ingredients in tow, to set up shop each time, serving up Jamaican-style curry goat and fish (take your pick: fried, steamed, or escoveitched). Prepared with love and served alongside rice or bammy. One of my best meals in Jamaica. Call ahead to make sure Belinda’s is open on the day you visit.

Near the bustling spice and perfume markets of Fes, Al-Attarine Madrasa stands as a monument to spiritual learning and architectural beauty. Built in 1325 by Sultan Uthman II, this madrasa is renowned for its intricate Islamic art and serene atmosphere, offering a profound glimpse into Morocco's scholarly past. The zellij tilework and carved cedar ceilings frame a space that has inspired students and visitors alike for centuries. It’s a perfect spot to feel the echo of scholarly discussions that once animated this space.

3: At the center of the courtyard, a marble fountain operates not just as a source of water but as a symbol of spiritual cleansing and reflection. Surrounded by an expanse of intricate tiles, the fountain invites visitors to pause and reflect, just as students did between their studies.

4: Venture into the student chambers that line the madrasa, where small, austere rooms speak volumes about the disciplined life of a scholar. These chambers, though simple, are imbued with the legacy of learning, each offering a personal connection to the past educators and students.

5: Climb to the upper floors for a panoramic view of the madrasa and the bustling streets of the Medina. This vantage point not only provides a breathtaking perspective of the intricate architectural details but also situates the madrasa within the vibrant life of Fes.

The site is open daily, there’s a small fee, and the morning light is particularly beautiful as it illuminates the zellij and wood carvings. 

Al-Attarine Madrasa

Located in Catalonia’s Priorat wine region, Falset is a charming medieval town renowned for its wine culture, historic architecture, and scenic vineyards. Surrounded by rolling hills and terraced vineyards, this small town offers a perfect blend of history, gastronomy, and natural beauty. It’s an essential stop for wine enthusiasts eager to taste some of Spain’s finest DOQ Priorat and DO Montsant wines, as well as for travelers seeking a relaxing, authentic Catalan experience.


1. Wine Tourism: Visit renowned wineries like Celler de Capçanes and Clos Mogador for tours and tastings of Garnacha and Cariñena wines, famous for their rich, full-bodied character.

2. Falset Castle (Castell de Falset): Explore this 12th-century castle that now houses the Wine Museum of Falset, offering insights into the region’s winemaking traditions and stunning panoramic views of the surrounding vineyards.
