This experience begins in Châteauneuf-du-Pape, one of the most celebrated appellations in the Rhône Valley. The day opens with a visit to a family estate, where you walk through the vineyards and cellars while learning how generations of winemakers have shaped the identity of the appellation. You will taste red and white AOP wines, and may also sample a rare vintage whenever available.

At midday, you stop in the village for a relaxed three-course lunch in a family-run restaurant known for its locally sourced ingredients and regional cuisine. Tasting local wines paired with a starter and main course, you gain a deeper sense of the local food culture while chatting with your host about the area’s culinary traditions.

The afternoon continues with a walk through the historic village and the ruins of the château built by the Popes in the 14th century, followed by visits to two additional estates to explore different approaches to viticulture and production, and to taste additional wines.

Christopher and Laurent know the vineyards of Châteauneuf-du-Pape through long-standing relationships with the families who cultivate them. This allows you to access estates that reflect different approaches to viticulture and winemaking, from cellar practices to vineyard management. As you move between producers, you gain a clearer understanding of the appellation’s complexity and the choices that shape each wine, including how soil composition, grape varieties, and microclimates influence structure and expression.

Throughout the day, as you move between producers, tastings build progressively, and include wines not always available to the general public. This is complemented by direct exchanges with those involved in production, offering insight into how each vintage evolves over time.

Chile

This full-day bird watching excursion is led by a naturalist guide and conservationist who surveys the local population of avifauna and knows all the best spots to encounter resident and migratory species. After leaving San Pedro, you first drive south towards Jere Canyon (Quebrada de Jere) where tamarugo conebills, oasis hummingbirds, white-winged doves, and plain-mantled tit-spinetails dwell. There are brief stops along the way in oases frequented by birds. The morning concludes at the Atacama Salt Flat's Chaxa Lagoon, where you will encounter three of the world's six flamingo species.

Upon return to San Pedro, you'll enjoy a relaxed lunch with Valeria in a local restaurant before driving north to highland canyons and wetlands. At the Machuca, Putana and Jauna wetlands, you will scout for the diademed sandpiper plover: any birder's crown jewel in the Altiplano. Vicuñas and vizcachas are usually spotted, and there is always the hope of spying Andean cats and culpeo foxes.

Samuél has lived in Paris since 2010 as a novelist, musician, and literary tour guide. He holds an MA in social theory and an MFA in creative writing. He is a member of an indie rock band and the co-founder of Kingdom Anywhere, an independent anglophone publisher in Paris.

He taught creative writing at the Sorbonne for five years before focusing on writing and leading historical walks on modernism, existentialism, and the Nazi Occupation of Paris. His first novel, Slim and the Beast, shares its name with his band, which has played extensively across Europe. His second novel, The Requisitions, is a work of historical metafiction set in Nazi-occupied Poland.

The Nada Gogo area of Kobe City holds special significance in the sake brewing world. Sake brewing began here nearly 700 years ago, predating the commercial production of sake by three centuries. With its refined knowledge of sake production, Nada Gogo eventually provided 80% of the commercial sake consumed in the old capital of Edo, now Tokyo.

You’ll begin your tour with an elegant lunch in a preserved traditional house before visiting three of Nada Gogo’s outstanding breweries to learn how to appreciate the taste of sake. Your host Eva will give you a deeper understanding of sake culture, visiting an exclusive location to learn how the traditional art of producing sake barrels is being preserved and a museum dedicated to the humble sake cup, whose shapes and materials affect the taste of its content more than you’d expect.


For sake connoisseurs, Nada Gogo represents the pinnacle of sake production, maintaining its world-class standards of delicately flavored sake for centuries.
