This is a 3-hour cooking experience at the Amal Women’s Cooperative Center, founded by the remarkable Nora Fitzgerald Belahcen. Rooted in empowerment and inclusion, the experience offers a hands-on introduction to Moroccan cuisine while celebrating the social impact of food.

You’ll begin with a short introduction to Amal’s mission—supporting women from vulnerable backgrounds by training them in the culinary arts. From there, you’ll dive into Moroccan cooking: exploring local spices, learning the stories of each dish, and preparing a traditional feast with fresh, seasonal ingredients. Some recipes are cooked over charcoal, using bellows to control the flame—an immersive detail that reflects Morocco’s culinary heritage.

As your dishes simmer, you'll enjoy a traditional tea paired with homemade cookies. The experience ends with a shared meal; you’ll gather to taste what you've created and connect with members of the Amal team, learning more about their lives, resilience and work.

Unlike many cooking classes in Marrakesh, this experience is private, intimate and timed for an early dinner, featuring a selection of thoughtfully curated dishes to prepare and enjoy. It’s also intentionally designed to support a social mission: a portion of your fee goes directly to Amal Center, a nonprofit that provides training and job opportunities for women from vulnerable backgrounds.

Amal is more than a cooking school—it’s a space of transformation, offering hope and vocational skills to women rebuilding their lives. Under the guidance of the team Nora has created and trained, you’ll learn to make Moroccan classics like tajine, couscous or pastilla—while gaining insight into the flavors, techniques, and cultural meaning behind each dish. Cooking Class in Marrakesh: Private access to Amal Center with local cuisine & social mission.

We start by learning the different spices that go into Moroccan cuisine.
Then we get to work! After we do the basic prep of our dishes, we put them on charcoal to cook and use the bellows to make sure the fire is hot.
Once our fires are going nicely, we sit and enjoy a tea ceremony, where the hosts will talk about Amal Center, it's special mission to empower women, as well as any and all questions guests may have about Morocco in general.

Tasting Morocco at Amal Center

This experience accommodates a minimum of 2 and a maximum of 6 people. You’ll be guided by a small, welcoming team trained in the spirit of Amal’s mission: to use food not only as craft and culture, but as a path to opportunity and connection. Their deep knowledge of Moroccan cuisine and generous hospitality ensure an experience that’s as meaningful as it is memorable.

Portugal

Step off the tourist trail and explore Xabregas, Beato, and Marvila-three districts in eastern Lisbon with a rich past and a young creative spirit. Once the summer retreats of nobility and centers of religious devotion, these areas evolved into industrial powerhouses in the late 19th and early 20th centuries, welcoming factories, workers' villages, and military facilities. After decades of decline, they’ve reemerged as some of the city’s most dynamic cultural hubs. This afternoon walking tour begins in Xabregas facing the National Tile Museum and continues past hidden palaces, street art murals, and repurposed warehouses. In Beato, you’ll visit churches, creative incubators, and an entire block full of craft breweries. Then wander through Marvila’s art galleries and alternative markets, ending at the riverfront where Renzo Piano’s sleek architectural project signals a new chapter. This is a journey through centuries of architecture, culture, and urban reinvention.

This experience takes you far from Lisbon’s crowded city center to explore three districts often overlooked even by locals—Xabregas, Beato, and Marvila. The tour concludes at the site of one of Lisbon’s most ambitious urban projects: a new residential and cultural complex designed by Pritzker Prize-winning architect Renzo Piano. While the group won’t enter the museum, it serves as a fitting place to begin the tour. Housed in the 16th-century Convent of Madre de Deus, the Museu Nacional do Azulejo offers a striking example of how religious architecture has been adapted into a public cultural space.

This stop introduces a key theme of the tour: transformation. Standing outside this former convent, you’ll get context on how sacred, noble, and industrial spaces across Lisbon have been reimagined into modern institutions.

In Xabregas, aristocratic estates stand beside old factories and bold urban art. Türkiye

This experience immerses you in the rich tradition of Karagöz, the ancient Turkish shadow puppetry that has entertained audiences since at least the 16th century. Guided by Cengiz Özek, a shadow theatre master, you’ll learn about the roots of this traditional art popularized in the Ottoman Empire and considered an Intangible Cultural Heritage by UNESCO in 2009. Karagöz performances were a staple of Ottoman life, used as a platform for satire and social commentary, often held in coffeehouses and public squares​. 

During this hands-on workshop, you’ll have the opportunity to visit Cengiz’s atelier and craft your own shadow figure using traditional materials like camel leather. Afterward, you’ll perform a mini-play, gaining a unique insight into this captivating art form while conversing with Cengiz over Turkish tea and cookies.

This experience offers a rare opportunity to meet an authentic and treasured hayalî, a master of Turkish shadow puppetry, who has been preserving and promoting this ancient art for decades. You will get a behind-the-scenes look into Cengiz's atelier, where you’ll explore the historic craft from the 16th century to the present day, learning directly from one of the few remaining masters of this UNESCO-recognized Intangible Cultural Heritage​.

After a guided tour of Cengiz’s puppet museum filled with global puppetry artifacts, you’ll enjoy traditional Turkish tea and cookies as Cengiz provides an insightful overview of Karagöz’s evolution and cultural significance. Then, you'll dive into the hands-on experience: from shaping leather with authentic tools like the Nevregan, to painting your figure and crafting a vision for your own shadow play, bringing your character to life​.

First of all, we will meet with the attendees at our puppet museum located in, Faikpaşa Caddesi which is full of old buildings, antique and creative stores. We will make a small tour for the collection we have in the puppet museum from all over the world. After the small tour, we will have local tea and cookies with the attendees. We will start to explain the written history that we have from the beginning 16th century: how Karagöz traveled, how he expanded and how he lives today.  
Then we will get our tools to experience the process of making: 
- Deciding which part of Karagöz will be made, 
- shaping the camel leather with special tools(cutting, carving, piercing) 
- Painting the figure
(Tips of shaping the leather will be shared.)
Finally, with a full figure, all attendees see and experience of acting the figure on a shadow theatre curtain.

Your host, Cengiz Özek, is a master puppeteer and one of Turkey’s leading figures in preserving the ancient art of Karagöz shadow puppetry. His extensive theater background, including a degree from Istanbul University’s Theater Department, combined with his work as a director, designer, and educator, makes him uniquely qualified to lead this experience. Cengiz will guide you through the intricate world of Karagöz, supported by a translator to ensure a seamless and engaging experience for all participants.

Italy

A 3-hour walking food tour through Rome's Trionfale neighborhood. One of Rome's first 15 quartieri, this neighborhood dates to the late 19th century Unification and early 20th century Fascist eras. Originally designed to house the large influx of Italians to the capital city of a newly founded Italy, the area grew to become a mecca for foodies thanks to its enormous food market amid traditional shops. 

We will begin the culinary adventure at a local café, and then explore the local market rich in history and authenticity and known for its over 200 stalls of local produce and delicacies; it’s a chance to engage with local vendors and artisans. A highlight of this tour is the chance to experience Rome's pizza expertise and how it transforms into an art form, with imaginative, fresh ingredients.

Trionfale, Rome's fourteenth district, is steeped in history and transformation. Known for its unique street, named after the route that victorious Roman generals took, its houses boasts a distinctive numbering system linked to their distance from the Campidoglio. Gianmario Pedroni is a photographer and a Sardinian choir member. After honing his skills in England, he specialized in advertising, fashion, and design, working with prominent photographers and brands. In 2009, he returned to Sardinia to establish his studio, where he captures the region’s breathtaking landscapes and vibrant culture while actively participating in local traditions as a member of a traditional choir.

This is an immersion in one of Rome’s most astonishing private palaces: the Galleria Doria Pamphilj. Still owned by the family that built it, this residence houses a remarkable collection of paintings, sculptures, and furnishings displayed in rooms that have remained unchanged for centuries. Your art tour begins in the quiet courtyard, where Chiara, an art historian, introduces the history of the building and the powerful family behind it.

Together, you explore the gilded galleries and grand salons, pausing in front of masterpieces by Caravaggio, Velázquez, Titian, Raphael, and many others. Chiara was born and raised in Trastevere, in the heart of Rome, where her passion for hidden stories and art began early. She studied Ancient Greek and Art History in Berlin, then returned to Rome to complete a Master’s degree focused on Renaissance art and restoration. For the past eight years, she has been guiding travelers through the city she knows intimately, blending history, art, and storytelling to reveal the layers of Rome most people miss.

Chile

This full-day photographic excursion whisks you away to salty lagoons and a traditional Atacameño town as yet untouched by tourism. Besides learning landscape photography tips and tricks under the eye of a professional photographer, you will float in a saline lake and learn the geological importance of the region's ecosystem.

The day starts at Cejar Lagoon where the high salinity carries you across the surface of the lake without needing to stroke or kick. Swimming is optional yet highly recommended. After drying off, you will visit the Tebenquinche Lagoon to study the salt deposits from the lakeside. There is a relaxed lunch interlude in the town of Toconao where you will tour its main square and side streets. The afternoon concludes at the Atacama Salt Flat in the Chaxa Lagoon where flamingos wade in the shallows for shrimp. Throughout the day, photography remains the priority. 

This is an immersive exploration of the flora and fauna of the Salar de Atacama focusing on photography. Mirko—schooled in the geology and geography of the region—will impart knowledge sharpened by years of living in San Pedro de Atacama. He will explain the fragility of the ecosystems and provide insight into why the Indigenous Licanantay people consider the lagoons and volcanoes sacred. As a professional photographer, he will train your eye to capture the smallest of details and mentor you through the stages of capturing landscapes and close-ups.

The experience also includes the option to swim in Cejar Lagoon; a thrilling experience which fosters a deeper connection with the environment and supports with acclimatizing to this parched landscape. Concluding in the Chaxa Lagoon, you are likely to encounter all three species of resident flamingo: Chilean, Andean, and James's. The pace is unhurried as you study their movements and capture their pink hues against the turquoise lagoon.

Eyes of the Desert

When asked about his love for Lisbon, Tiago’s enthusiasm is immediate: “I love my city! I really love the historic center of Lisbon!” Though he didn’t always feel that way. Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.
As tourism evolves, Tiago points toward Lisbon’s under-known strengths. “Gastronomy, street art, tiles, contemporary architecture… there’s so much more to discover!”

This itinerary reflects what Manila calls the “true essence of Catalonia” — a place of cultural pride, natural beauty, and distinct local identity. Manila first arrived in Barcelona more than two decades ago, while finishing her studies in Rome. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

Walking with the Zu/’hoasi Bushmen of the Makgadikgadi Plains in the Central Kalahari, quintessential hunter-gatherers, I learned several things that I hope never to have to use - how to pronounce first names that are laden with clicks, collect plants for medicinal recipes, dig for scorpions, and make a fire with twigs and leaves.

Makgadikgadi means 'dry, dry', but the bush men and women know how to live in harmony with the land. Family and cultural ties are strong.

Walking with Zu/’hoasi

Antalya, Turkey, is home to the Kurşunlu Waterfall Nature Park, a hidden gem nestled within a lush pine forest just 20 km (12 miles) from the city center. This enchanting natural retreat features a cascading waterfall, turquoise pools, and scenic walking trails, making it a perfect escape for nature lovers and photographers. With its tranquil atmosphere, rich wildlife, and shaded picnic areas, Kurşunlu Waterfall is an ideal spot for a relaxing break from Antalya’s bustling coastline.

1. The main waterfall, cascading from 18 meters (59 feet) into an emerald-green lagoon, creates a stunning photo opportunity and a peaceful ambiance.

2. Scenic walking trails wind through the park, leading visitors past smaller waterfalls, wooden bridges, and hidden caves.

Kurşunlu Waterfall Nature Park

Faroe Islands

I’m seduced by the untouched beauty and drama of the Faroe Islands. Driving into Tórshavn, I witness a rare Faroese sight.

The ocean is bright red. The beach is packed with onlookers. It’s a grindadráp, a pilot whale hunt. Heavily regulated, it’s being carried out with process perfected over millennia. A local couple points out their son to me, he is on one of the boats — “unless we send a boat, we won’t get our share of the whale meat.”

When a school of pilot whales is sighted, boats gather around and slowly drive them towards the chosen bay or beach, for it’s illegal to kill the whales in the open sea. This time, there are about two hundred of them. Every bit of them will be consumed or used — and none can be sold.

I’m shocked, outraged, fascinated, caught up in the excitement and terribly conflicted. As a traveler, I respect — and seek to understand — culture and tradition. And the Faroese are holding on to this one — as it symbolizes for them their relationship with the sea.

Culture Shock

In Lisbon's historic Belém district, the Mosteiro dos Jerónimos stands as a monumental testimony to Portugal's Age of Discovery. Commissioned by King Manuel I in the early 16th century, this UNESCO World Heritage site is a stunning example of Manueline architecture, symbolizing the nation's maritime prowess and exploratory achievements. The Lisbon Botanical Garden, located in the heart of the city near the National Museum of Natural History and Science, is a lush, tranquil oasis filled with exotic plants, towering palms, and unique flora from around the world. Established in 1878, this garden originally served as a research space for the study of botanical species and remains an impressive representation of Portuguese dedication to scientific knowledge and environmental beauty. Visitors can stroll through a maze of pathways shaded by old trees, enjoying an escape from Lisbon’s urban hustle while uncovering diverse plant species collected from former Portuguese colonies across Africa, Asia, and South America.

Highlights of the Lisbon Botanical Garden:

1. Discover plants from the world over, with an emphasis on Mediterranean, tropical, and subtropical species. The garden houses rare plants and trees, including dragon trees, towering palms, and other botanicals that thrive in Lisbon’s mild climate.

The Lisbon Botanical Garden

None of my map apps seem to work. After years of relying on a mechanical voice to navigate me in strange lands, I am back to poring over paper and asking for directions. I actually like driving here! 

Except when negotiating a one-lane tunnel. Then I am terrified! Unless I have right of way, I have to duck in - at just the right moment - into one of the spaces marked M, and stay there till the dark tunnel ahead is clear of oncoming headlights. This game needs nerves of steel! There are two such tunnels to get to Gásadalur, the waterfall that tumbles recklessly into the ocean.

The best photos require descending down the cliff to the beach below. There is a helpful set of concrete steps, and a big signboard in Faroese that can only be a warning, since it has a lot of exclamation marks. 

I hold on for dear life to the wobbly rusted handrail and descend half way before I realize that the rail isn’t connected to the cliff wall! The view, however, is just perfect.

Tumbling Recklessly

Tarragona, Spain, is a coastal city in Catalonia known for its impressive Roman ruins, golden beaches, and vibrant Mediterranean charm. Once the capital of the Roman province of Hispania Tarraconensis, the city’s rich history blends seamlessly with modern life. A UNESCO World Heritage Site, Tarragona offers ancient amphitheaters, medieval alleyways, and lively plazas, making it a must-visit destination for history lovers and photographers.


1. Tarragona Amphitheatre: Overlooking the Mediterranean Sea, this 2nd-century Roman amphitheater once hosted gladiatorial games and now serves as an iconic symbol of the city’s Roman heritage.

2. Roman Circus: Explore the remains of the Roman chariot-racing stadium, where underground tunnels and towers offer fascinating insights into ancient entertainment.

3. Tarragona Cathedral: A stunning blend of Romanesque and Gothic architecture, this cathedral offers beautiful cloisters, panoramic city views from its bell tower, and a peaceful courtyard.

Tarragona

San Spiridione Church is a testament to the city's multiculturalism. This magnificent Serbian Orthodox church, dedicated to Saint Spyridon, a Greek Cypriot saint, showcases a splendid Byzantine style that dates back to 1869, reflecting the city's unique position at the crossroads of Europe's major ethnic and religious communities. Top highlights:
1 - The church's striking appearance, with its multi-domed structure, captures the essence of Byzantine architecture. Constructed from pearly white Istrian stone, the large central dome is flanked by four hemispherical cupolas. The front façade is adorned with nine statues by Milanese artist Emilio Bisi, each contributing to the church's grandeur and artistic significance.
2 - The interior of San Spiridione is a realm of tranquility and beauty. The iconostasis, adorned with mid-nineteenth-century icons painted in Moscow and later covered in pure silver and gold plate, signifies the church's historical and spiritual depth. 
3 - Highlights include a votive vigil lamp gifted by Paul I of Russia, a stunning crucifixion at the altar, and a shroud made in 1772 in gold embroidery on silk velvet canvas. These pieces, alongside valuable candleholders and a mysterious sword believed to be a gift from Maximilian, Archduke of Austria, add layers of intrigue and splendor. Look for candleholders donated by Risto Škuljević, a ship owner and philanthropist, and numerous other items of significant religious, historical, and artistic importance.

Sultanahmet Park

Trieste, Italy, is home to the awe-inspiring Grotta Gigante, one of the largest accessible caves in the world. Hidden beneath the rugged Karst Plateau, this natural wonder boasts a colossal underground chamber measuring 98 meters high, 76 meters wide, and 167 meters long. The sheer size and grandeur of the cave make it a paradise for geology lovers, adventurers, and photographers alike. With its dramatic stalactites, towering stalagmites, and mesmerizing rock formations, Grotta Gigante offers a breathtaking journey into the depths of the Earth.

1. Inside the cave, an enormous underground hall creates a jaw-dropping spectacle, with cathedral-like dimensions that earned Grotta Gigante a spot in the Guinness World Records as the largest show cave in the world open to tourists.

2. Stunning stalactites and stalagmites, formed over millions of years, decorate the cave, some reaching several meters in height. The eerie, otherworldly formations make for incredible photography.

Its serene vibe, picturesque streets, and local culinary gems make Exo Gonia a delightful spot for a relaxed visit. 
1. The village is home to the beautiful Church of Panagia Episkopi, a Byzantine gem dating back to the 11th century, renowned for its historical and religious significance. 
2. Narrow streets lined with whitewashed houses and colorful gardens create a peaceful and photogenic setting for exploration. 
3. Exo Gonia is a hub for local cuisine, with renowned restaurants like Metaxi Mas offering some of the best dining experiences on the island.

Exo Gonia Village

Chile’s Salar de Atacama is the largest salt flat in Chile, stretching over 3,000 square kilometers (1,160 square miles) in the heart of the Atacama Desert. Framed by the Andes Mountains and home to spectacular salt-crusted landscapes and vibrant flamingo-filled lagoons, this surreal environment offers an unforgettable experience for nature lovers and photographers alike. The salt flat’s cracked surface, mineral-rich pools, and reflections of distant volcanoes create a breathtaking scene, especially at sunrise or sunset.


1. Laguna Chaxa, part of the Los Flamencos National Reserve, is one of the best places to spot Andean, Chilean, and James’s flamingos, which feed in the shallow waters.
